Cheesy Baked Tortellini With Salmon image

A dish with a helpful shortcut, and easy too! Serve this yummy dish with a fresh green salad and some crunchy bread to scoop up the "homemade" sauce. The fish, pasta and sauce all finished at the same time and I literally spent 30 minutes from start to finish to make this meal as the prep time overlaps with the cooking time.

12 ounces cheese tortellini
1 1/4 cups alfredo sauce (low fat is OK)
1 tablespoon fresh dill, chopped
2 tablespoons green onions, thinly sliced
1 teaspoon olive oil
4 ounces salmon fillets, skinless
salt and pepper
1 cup mozzarella cheese, grated (low fat is OK)

Steps:

  • Preheat oven to 400°F.
  • Boil salted water in a large pot. Add pasta when water is boiling and cook until just done, about 5 minutes.
  • Meanwhile, pour alfredo sauce in a medium saucepan and heat to medium. Add dill and green onions and salt and pepper to taste; let heat through but do NOT boil.
  • In small frying pan, heat olive oil and add fish. Cook through, approximately 3 minutes on each side. Cut up and salt and pepper to taste.
  • When tortellini is done, add to sauce in saucepan. Gently stir in salmon. Add half the mozzarella. Pour into casserole dish sprayed with nonstick spray and sprinkle remaining cheese on top.
  • Bake in oven for 15 minutes or until lightly browned.

Creamy Salmon Tortellini image

A delicious creamy salmon tortellini recipe! This salmon pasta is a super easy dinner that you can make in less than 30 minutes! The sauce can also be used over zucchini noodles for a low carb / keto version.

6 oz / 180g salmon
1 Tbsp olive oil
8oz / 220 g tortellini, refrigerated
1/3 cup cream cheese
1 small tomato, chopped
1/2 zucchini, chopped
1/2 tsp dill, dried
2 Tbsp fresh chopped basil
2 garlic cloves, minced
3 Tbsp mozzarella

Steps:

  • Prepare your vegetables and cut the salmon in bite-sized pieces.
  • In a large pan, heat 1 Tbsp olive oil and add the salmon, dill and tomato. Add a tbsp of water and a pinch of salt, cover with a lid and cook for 3-4 minutes.
  • Stir in the cream cheese, black pepper and add a Tbsp of water (if needed - sometimes tomatoes aren't juicy enough!) to create a creamy sauce.
  • Stir in the tortellini pasta and cook in the sauce for 3-4 minutes or however long the package says.
  • Lastly, add the garlic, basil, zucchini and stir in the mozzarella cheese.
  • Serve immediately with Parmesan cheese on top (if desired!).

1/4 cup sour cream
1/4 cup olive oil
3 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
1 tablespoon dry white wine
1/4 teaspoon pepper

1/2 cup thinly sliced red onion
1/4 cup chopped green onion top
1/4 cup chopped fresh dill

1 package (9 ounces) refrigerated cheese tortellini
2 green onions, sliced
1 teaspoon butter
2 garlic cloves, minced
1 teaspoon cornstarch
1 cup fat-free milk
1/2 cup shredded part-skim mozzarella cheese
1 cup fat-free ricotta cheese
1 pouch (7.1 ounces) boneless skinless pink salmon
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
1-1/2 teaspoons grated lemon zest
1-1/2 teaspoons lemon juice

1 pkg cream cheese, cubed (8 oz)
1/3 c milk
1/2 c chopped cucumber, seeded and drained
3 oz smoked salmon, cut into thin strips
2 Tbsp chopped fresh dill, or 1/2 tsp. dill weed (dried)
1 pkg frozen cheese tortellini, cooked and drained
chopped parsley or green onions, if desired.

Steps:

  • 1. Cook tortellini per package instructions; drain. Meanwhile, stir cream cheese and milk in medium saucepan on low heat until smooth. Add cucumbers, salmon and dill; heat thoroughly.
  • 2. Toss with hot tortellini. Garnish with parsley or chopped green onion, if desired.
