TORTELLINI PEPPERONCINI SALAD
This is a cooking light recipe. I made this salad this weekend and it was so yummy and fresh! I added the green onions and figured the points as 4 points per 1 cup serving (serves 7).

Steps:
- Cook pasta according to package directions, omitting salt and fat.
- While pasta cooks, combine tomatoes, spinach, peppers, cheese, capers, basil and beans in a large bowl. Drain pasta; rinse with cold water. Add pasta, juice and oil to tomato mixture; toss gently. Serve immediately or refrigerate overnight.

- Cook the tortellini to al dente according to package instructions. Strain and place until cool, running water until no longer steaming. Drain well and transfer to a large mixing bowl.
- Pour 1/4 cup of dressing over the pasta, season with salt and pepper, toss to coat, and set aside.
- Add the remaining ingredients, drizzle with an additional 1/2 cup of Italian dressing, and toss to combine.
- Serve right away or cover and refrigerate until ready to serve.

- Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, peppers, onion and olives. , In a jar with a tight-fitting lid, combine the oil, vinegar, mint, lemon juice, seasoned salt, garlic powder, pepper and pepper flakes; shake well. Pour over salad and toss to coat. Cover and refrigerate for at least 4 hours. Just before serving, sprinkle with feta cheese.
