This is a cooking light recipe. I made this salad this weekend and it was so yummy and fresh! I added the green onions and figured the points as 4 points per 1 cup serving (serves 7).

1 (9 ounce) package refrigerated cheese tortellini
2 cups grape tomatoes, halved
2 cups fresh spinach leaves, coarsely chopped
1/2 cup pepperoncini pepper, chopped
6 tablespoons fresh parmesan cheese, shredded
1/4 cup fresh basil, chopped
1 (16 ounce) can navy beans, rinsed and drained well
2 tablespoons green onions, thinly sliced
2 tablespoons fresh lemon juice
1 1/2 tablespoons extra virgin olive oil

Steps:

  • Cook pasta according to package directions, omitting salt and fat.
  • While pasta cooks, combine tomatoes, spinach, peppers, cheese, capers, basil and beans in a large bowl. Drain pasta; rinse with cold water. Add pasta, juice and oil to tomato mixture; toss gently. Serve immediately or refrigerate overnight.

1 (20-ounce) package cheese-filled tortellini (preferably Buitoni)
3/4 cup prepared Italian dressing
1 teaspoon Kosher salt
1 teaspoon black pepper
1 1/4 cup grape tomatoes, sliced in half lengthwise
1/2 of a red onion, thinly sliced and then roughly chopped
3/4 cup chopped marinated artichoke hearts (drained)
1/2 cup roughly chopped pepperoni slices
1/2 cup sliced black or Kalamata olives (drained)
1/2 cup sliced pepperoncini peppers (drained), roughly chopped
1/4 cup shaved Parmesan cheese
2 tablespoons roughly chopped Italian parsley ((optional))

Steps:

  • Cook the tortellini to al dente according to package instructions. Strain and place until cool, running water until no longer steaming. Drain well and transfer to a large mixing bowl.
  • Pour 1/4 cup of dressing over the pasta, season with salt and pepper, toss to coat, and set aside.
  • Add the remaining ingredients, drizzle with an additional 1/2 cup of Italian dressing, and toss to combine.
  • Serve right away or cover and refrigerate until ready to serve.

16 to 18 ounces refrigerated or frozen cheese tortellini
1 medium sweet red pepper, julienned
1 medium green pepper, julienned
3/4 cup sliced red onion
1/4 cup sliced ripe olives
1/2 cup olive oil
1/2 cup white wine vinegar
3 tablespoons minced fresh mint or 1 tablespoon dried mint flakes
3 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1 teaspoon garlic powder
1/2 teaspoon pepper
1/8 to 1/4 teaspoon crushed red pepper flakes
1/2 cup crumbled feta cheese

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, peppers, onion and olives. , In a jar with a tight-fitting lid, combine the oil, vinegar, mint, lemon juice, seasoned salt, garlic powder, pepper and pepper flakes; shake well. Pour over salad and toss to coat. Cover and refrigerate for at least 4 hours. Just before serving, sprinkle with feta cheese.
