1 (9 ounce) package 3-cheese tortellini
1 tablespoon butter
1 tablespoon all-purpose flour
1/2 cup milk
8 ounces shredded cheddar cheese
1/2 lb baked ham, chopped in bite-size pieces
1 cup panko breadcrumbs

Steps:

  • Spray an 8x8 inch glass casserole with nonstick cooking spray, set aside; Preheat oven to 350 degrees.
  • Cook tortellini according to package directions, drain and set aside.
  • Mix butter and flour to make a rue in a medium saucepan stirring slowly. Blend in milk and cheese. Do not boil.
  • Combine ham and pasta in an 8" by 8 " glass casserole dish. Pour liquid cheese combination over pasta.
  • Place bread crumbs in a skillet. Heat slightly to brown the topping.
  • Sprinkle panko over the top of casserole; bake in pre-heated oven for 20 minutes.

1 (32 fluid ounce) container chicken broth, divided
1 (16 ounce) package prepared cheese tortellini, thawed
2 cloves crushed garlic
2 teaspoons dried basil
¼ cup butter
2 tablespoons cornstarch
⅓ cup grated Parmesan cheese

Steps:

  • Reserve 1-1/4 cups broth. Bring remaining broth to a boil in a large pot, add tortellini and cook until tender, drain well.
  • In a small bowl, blend cornstarch into 1 1/4 cups of reserved broth.
  • In a large saucepan, saute garlic and basil in the butter or margarine for 2 minutes over a medium heat. Add the cornstarch-broth mixture to the saucepan. Cook and stir until the mixture thickens and comes to a boil.
  • Place tortellini in a serving dish, pour the broth-mixture, and Parmesan cheese into the serving dish and toss. Serve with toothpicks.

10 refrigerated fresh tortellini
10 mini fresh mozzarella balls
10 grape tomatoes
4 large basil leaves, chiffonade
2 tablespoons prepared balsamic reduction

Steps:

  • Line a microwave-safe plate with a damp paper towel. Place the tortellini on the paper towel and top with a second damp paper towel. Microwave until the pasta is steamed and semi-soft, about 30 seconds. Thread one tortellini on a 6-inch skewer, followed by a mozzarella ball and grape tomato. Place on a serving platter and sprinkle with the basil chiffonade. Repeat with the remaining ingredients to make 9 more skewers. Drizzle with the balsamic reduction.

3 cups grape tomatoes, halved
mozzarella cheese, balls fresh and small
60 (6 inch) wooden skewers
basil vinaigrette
1/2 cup white balsamic vinegar
1 teaspoon salt
2/3 cup extra virgin olive oil
6 tablespoons fresh basil, chopped

Steps:

  • Prepare tortellini according to package directions. Rinse under cold water.
  • Thread 1 tomato half, I cheese all, another tomato half, and 1 tortellini onto each skewer. Place skewers in a 13 X 9 inch baking dish.
  • Whisk together vinegar and salt. Gradually add oil in a slow, steady stream, whisking constantly until smooth. Stir in basil and ground pepper to taste.
  • Pour vinaigrette over skewers, turning to coat.
  • Cover and chill 2 hours.
  • Transfer skewers to a serving platter, sprinkle with salt and pepper to taste.
  • Discard any remaining vinaigrette.
