2 tablespoons olive oil, plus more for grates
1 pound chicken cutlets
Coarse salt and ground pepper
4 ears corn, husks and silks removed
2 tablespoons fresh lemon juice
1 pound arugula (about 3 bunches), thick stems removed
2 large tomatoes, sliced into wedges
1/2 cup crumbled Gorgonzola (2 ounces)

Steps:

  • Heat grill to high; clean and lightly oil hot grates. Season chicken with salt and pepper. Grill until opaque throughout, 1 to 2 minutes per side. Let rest 5 minutes; cut into strips.
  • Cut off tip of each cob. Stand corn in a wide shallow bowl; using a sharp knife, slice downward to release kernels. Discard cobs.
  • In a large bowl, whisk together lemon juice and oil; season with salt and pepper. Add arugula, tomatoes, Gorgonzola, chicken, and corn and toss to combine. Serve immediately.

3 garlic cloves, finely chopped
2 tablespoons grill seasoning, such as McCormick's Montreal Steak Seasoning
1 tablespoon Worcestershire sauce (eyeball it)
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil (EVOO) (eyeball it)
2 pounds flank steak
1 8-ounce package buttermilk biscuit mix, such as Jiffy brand
1/2 cup blue cheese crumbles
1 vine-ripe tomato
1 small bunch of watercress, trimmed and cleaned
4 tablespoons sour cream

Steps:

  • Preheat the oven to 450°F.
  • Preheat a grill pan or outdoor grill to high heat.
  • Mix together the garlic, grill seasoning, Worcestershire sauce, salt, and pepper. Whisk in the EVOO. Pour into a 9 x 13-inch glass dish or a sealable plastic bag. Add the flank steak and coat it evenly in marinade. Let stand for 10 minutes.
  • While the steak is marinating, prepare the biscuits. Place the biscuit mix in a bowl, add the blue cheese crumbles, and mix with a fork to distribute. Add water, according to the package directions. Once combined, dump the biscuit mix out on a cutting board. Using your fingertips, press out the mix into a 1-inch-thick square. Divide the square with a knife into 4 squares. Arrange the biscuits on a foil-lined cookie sheet and bake for 12 to 15 minutes, or until the biscuits are cooked through and the bottoms are golden brown. Remove from the oven and let cool.
  • Grill the flank steak for 6 to 7 minutes on each side or to your preferred doneness. Remove the flank steak from the grill and let the juices redistribute before slicing.
  • Thinly slice the tomato and coarsely chop the watercress; reserve.
  • To serve, thinly slice the rested meat on an angle, cutting against the grain. (To make easy work of the slicing, use a sharp knife.) Split each of the four biscuits in half. Arrange a slice or two of tomato on the bottom of each biscuit. Season the tomatoes with salt and pepper. Top the tomatoes with some of the sliced steak. Top that with a dollop of sour cream and a little of the chopped watercress. Set the biscuit top in place or slightly to the side. Wow! What a looker!

2 poblano pepper, roasted, quartered, peeled, seeded and coarsely chopped
1/2 cup parsley, coarsely chopped
4 whole New Mexico red chiles, coarsely chopped
4 whole ancho chiles, coarsely chopped
8 New York strip steaks, 10 ounces each
Garlic and Hot Pepper Marinade
Salt and pepper
16 plum tomates, halved
Olive oil
Salt and pepper
1/2 cup crumbled Cabrales blue cheese

Steps:

  • For the Marinade:
  • Combine all ingredients in a mixing bowl.
  • For the steaks:
  • Place the steaks in a large shallow baking dish. Pour 1/2 of the marinade over the steaks and turn to coat. Cover and let marinate in the refrigerator at least 4 hours or overnight. Cover the remaining marinade and place in the refrigerator. One hour before cooking the steaks, remove marinade from the refrigerator and allow it to come to room temperature. Heat a grill pan over high heat until smoking or heat up an outdoor grill Remove steaks from the marinade, discard marinade, and season with salt and pepper, to taste. Grill for 4 minutes on each side for medium rare doneness. Use the other 1/2 of the marinade to serve with the steaks.
  • For the Roasted Tomatoes:
  • Preheat oven to 400 degrees F. Place tomatoes in a baking dish, drizzle with olive oil and season with salt and pepper to taste. Roast until soft, about 15 to 20 minutes. During last 5 minutes of cooking sprinkle the blue cheese over the tomatoes.

1 cup yellow cornmeal
1 cup grated Parmesan cheese

12 grape tomatoes, quartered lengthwise
2 tablespoons thinly sliced fresh basil

Steps:

  • Lightly butter 24 mini muffin cups (each about 1 3/4 inches in diameter with 1/2-inch-high sides).
  • Bring broth to boil in medium saucepan over medium-high heat. Reduce heat to medium; gradually whisk in cornmeal. Cook until mixture is very thick, stirring constantly, about 2 minutes. Remove from heat. Stir in Parmesan. Season with salt.
  • Spoon 1 1/2 tablespoons hot polenta into each muffin cup. Using back of spoon, pack polenta firmly into cups. Using finger, make indentation in center of each polenta tart for filling. Chill until cold and set, about 3 hours. (Can be made 1 day ahead. Cover; keep chilled.)

2 pounds small red or baby Yukon gold potatoes, halved
4 pieces beef tenderloin, 1 1/2 inches thick
Salt and freshly ground black pepper
Extra-virgin olive oil, for drizzling, plus 1 tablespoon
Sprinkle all-purpose flour
1 large sheet frozen puff pastry dough, defrosted (recommended: Du Four)
1 bundle watercress, chopped
8 ounces blue cheese get a drier blue that will crumble easily
1 egg beaten with a splash of water
2 vine-ripe tomatoes, halved
1/2 cup Caesar style or garlic flavor large croutons, crushed or processed into crumbs
1/4 cup finely chopped parsley leaves
1 large bundle broccolini, trimmed
2 tablespoons butter
2 to 3 tablespoons finely chopped fresh dill

Steps:

  • Preheat the oven to 425 degrees F. Preheat a cast iron skillet over medium-high heat.
  • Put the potatoes in a sauce pot and cover with water. Bring to a boil over medium heat, salt the water and cook the potatoes until tender.
  • Meanwhile, pat the meat dry and season with salt and pepper, to taste. Drizzle a little oil into medium skillet and wipe it around with a folded paper towel. Add the beef and brown over medium heat, until it becomes a deep reddish brown, about 3 minutes. Turn the beef and brown for about 2 minutes more. Turn off the heat, then remove the meat to a plate and reserve.
  • Sprinkle flour on work surface and roll out dough a little, then cut into 4 pieces. Pile a little watercress on each piece of dough, top with crumbles of cheese and some meat. Wrap the dough around the filling and cut a small vent in the top of each parcel. Cover a baking sheet with parchment, arrange the parcels on the baking sheet and brush them with the egg wash, using a pastry brush. Bake until deep golden, about 12 minutes. Remove the baking sheet from the oven and let the parcels rest.
  • While the parcels bake, bring a couple of inches of water, in a deep-sided skillet, to a boil over medium heat for the broccolini.
  • Put the broiler on high.
  • Arrange the tomatoes on small baking sheet and season them with salt and pepper, to taste. Toss the crouton crumbs with half of the parsley in a small bowl. Sprinkle the crumbs on the tomatoes and drizzle with a tablespoon of extra-virgin olive oil. When the broiler is hot, put the tomatoes in the center of oven and broil until bubbly and the crumbs are brown, about 3 to 4 minutes.
  • Salt the boiling water and add the broccolini spears. Cook for 3 to 4 minutes, then drain.
  • Drain potatoes and put them back into the hot pot with the butter, the dill and the remaining parsley. Season with salt and pepper, to taste, and toss to combine.
  • Serve each beef parcel on plates with a broiled tomato half, a few potatoes and a couple of spears of broccolini.

Absolutely fantastic pasta dish. This dish is always a hit. I've been making it for about 10 years and I still get lots of requests for it. It is based on a recipe I found in "The California Wine Country Cookbook II" that I purchased on a visit to the Kenwood Vineyards. I usually serve with a Cesear Salad and Bruschetta.

2 tablespoons extra virgin olive oil
1 large onion, diced
6 cloves garlic, minced
28 ounces canned diced tomatoes
1 teaspoon dried oregano
1/2 cup dry red wine
1 lb penne pasta, cooked al dente (I use whole wheat pasta)
8 ounces blue cheese, half crumbled finely,the other half crumbled into larger pieces (I use reduced fat blue cheese)
1/2 cup chopped fresh basil
salt
pepper

Steps:

  • Saute the diced onion in olive oil over medium heat until the onions are translucent.
  • Add the minced garlic and saute one minute longer.
  • Add the tomatoes with juices, red wine and dried oregano to the onion-garlic mixture and simmer until most of the juices are gone, about 8-10 minutes.
  • Add the salt and pepper to taste and reduce heat to low.
  • Simmer covered, on very low heat, while the Penne Pasta is cooking, about 8 minutes.
  • Add the crumbled blue cheese and half of the fresh basil to the sauce mixture.
  • Stir until the sauce has become creamy.
  • Pour the tomato sauce over the hot cooked pasta and toss with the remaining fresh basil.
  • Spoon pasta into serving bowl and garnish with whole fresh basil leaves.

2 tablespoons red wine vinegar

1/2 pint grape tomatoes
2 strips bacon, cooked until crispy and crumbled

  • Heat a grill or grill pan and place the lettuce wedges on a platter.
  • Prepare the vinaigrette by briskly whisking together the Dijon, vinegar, and garlic. Drizzle in the olive oil while whisking to create an emulsion. 30 small fresh basil leaves
1 1/2 oz blue cheese (preferably Maytag Blue), crumbled, at room temperature
Garnish: very small heirloom cherry or currant tomatoes

Steps:

  • Cut 1 round from each bread slice with cookie cutter.
  • Cook bacon in a 10-inch heavy skillet over moderate heat until crisp, then transfer to paper towels to drain. Pour off bacon fat from skillet and reserve fat (do not clean skillet).
  • Heat 1 1/2 tablespoons oil in skillet over moderate heat until hot but not smoking, then toast 3 bread rounds, turning over once, until golden brown, about 3 minutes total. 1 pound cipollini onions
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
1 pint cherry tomatoes
1 tablespoon unsalted butter
1 1/2 teaspoon chopped fresh thyme leaves
1 teaspoon minced garlic
2 cups heavy cream
1/2 pound blue cheese, crumbled (recommended: Pt. Reyes)
Freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Using a small paring knife peel and halve the cipollini. Heat the olive oil in a large saute pan over high heat until hot but not smoking. Add the onions and season with salt and pepper. Caramelize the onions over high heat for about 5 minutes, transfer pan to the oven and continue to cook for about 8 to 10 minutes until the onions are nicely caramelized and fully cooked throughout, remove from pan to a plate and let cool slightly. Arrange the cherry tomatoes and onions on a platter with skewers for dipping.
  • In a small saucepan, over medium-low heat, melt the butter and cook until it is just beginning to brown. Immediately add the thyme and garlic. Cook for 2 minutes, stirring to prevent the garlic from browning. Add the cream, raise the heat to medium, bring to a slow simmer and reduce the cream by 1/3, about 2 minutes. Add the cheese and stir until the cheese melts and the mixture is smooth, season, to taste, with pepper. Pour the sauce into a fondue pot and set over a candle to keep hot.
  • Place the platter of veggies and skewers alongside and serve immediately.

  • mix parsley, basil, tarragon, minced garlic cloves, lemon peel, anchovy paste and capers in small bowl, gradually whisk oilve oil into mixture. season salsa verde to taste with salt and pepper. mix blue cheese and room temperature butter in another small bowl to blend. season to taste with salt and pepper. do ahead. salsa verde and blue cheese butter can be made 1 day ahead. cover separately and refrigerate. prepate bbq. toss grape tomatoes with 2 tablespoons salsa verde in small bowl to coat. arrange heirloom tomato slices in sinvle layter on rimmed baking sheet. sprinkle with salt and pepper. drizzle remaining salsa verde over heirloom tomatoes. grill steaks until charred and cooked to desired doneness, about 4 minutes per side for medium-rare. let rest 10 minutes. stack seasoned heirloom tomatoes on each of 4 plates and place steaks alongside tomatoes. scatter grape tomatoes over each plate. place generous dollop of blue cheese butter atop each steak and serve.

  • 1. Using fork, mash blue cheese and buttermilk together in small bowl until mixture resembles cottage cheese, about 1 minute. Stir in sour cream, mayo, and vinegar and season with salt and pepper 2. Cook bacon in large skillet over medium heat until crisp and well-rendered, 6-8 minutes. Transfer bacon to paper towel-lined plate and pour off fat from skillet. Pour maple syrup into empty skillet and add cooked bacon, stirring to coat. Cook over medium heat until syrup is reduced to glaze and bacon is thoroughly coated, about 4 minutes. Transfer to plate, separating bacon pieces to prevent sticking. 3.
