CREAMY TOMATO SOUP

3 tablespoons olive oil
2 small carrots, peeled and chopped
1 stalk celery, chopped
1 red onion, chopped
1 1/2 teaspoons kosher salt
Three 14-ounce cans cherry tomatoes
2 1/2 cups low-sodium chicken stock
One 3-inch Parmesan rind
1 sprig fresh basil
1/3 cup mascarpone, at room temperature
6 pieces cooked bacon, crumbled

Steps:

  • Heat a 3-quart Dutch oven over medium heat. Add 2 tablespoons olive oil and the carrots, celery, onion and 1 teaspoon salt. Stir with a wooden spoon and cook until the vegetables begin to soften, about 4 minutes. Add the cherry tomatoes and chicken stock and stir to combine. Nestle the Parmesan rind and basil in the soup and bring to a simmer. Reduce the heat to maintain a gentle simmer and cook, stirring often to prevent the rind from sticking to the bottom of the pan, for about 25 minutes.
  • Remove the basil and Parmesan rind and discard. Stir in the mascarpone, the remaining tablespoon of olive oil and 1/2 teaspoon salt. Puree the soup until smooth with a stick blender. Serve topped with crumbled bacon.

I haven't made this yet but it looked wonderful! A good hearty soup from Everyday Italian. Giada makes this when cleaning out her frig before items can go bad. If you don't have herbes de Provence, recipes available. I normally don't have rind left around, so I'll just add the cheese. If someone has a better idea, please note for us.

1/4 cup extra virgin olive oil, plus some for drizzling on bread
1 onion, chopped
1 carrot, chopped
4 ounces pancetta, chopped
2 garlic cloves, 1 minced and 1 whole
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 tablespoon tomato paste
1 (15 ounce) can diced tomatoes
1 lb frozen spinach, thawed and squeezed dry
1 (15 ounce) can cannellini beans, drained
1 tablespoon herbes de provence
3 cups chicken stock (or vegetable bouillon)
1 bay leaf
1 piece parmesan cheese, rind 3 inches
4 -6 ciabatta rolls, halved lengthwise (or any old bread)
grated parmesan cheese, for serving

Steps:

  • Heat the oil in a heavy large pot over medium heat. Add the onion, carrot, pancetta, minced garlic, salt, and pepper.
  • Cook until the onion is golden brown and the pancetta is crisp, about 7 minutes.
  • Add tomato paste and stir until dissolved.
  • Add tomatoes and stir, scraping the bottom of the pan with a wooden spoon to release all the brown bits.
  • Add the spinach, beans, herbs, stock, bay leaf, and Parmesan rind.
  • Bring the soup to a boil, reduce heat and simmer for 30 minutes.
  • Meanwhile, preheat the oven to 350 degrees.
  • Drizzle the ciabatta halves with olive oil. Toast until golden brown, about 5 minutes.
  • Remove from the oven and rub the top of the toasts with the whole garlic clove.
  • Place the toasts in the serving bowls and ladle the soup over the toasts.
  • Sprinkle with Parmesan and serve immediately.

1 tablespoon olive oil
3 ounces pancetta, chopped
1 medium onion, chopped
3 slices rustic rye bread (sliced 3/4-inch thick and cubed 5 3/4-inch x 3 3/4-inch)
6 cups reduced-sodium chicken broth
1 (28 ounce) can diced tomatoes with juice
3/4 cup fresh basil, chopped
1/2 teaspoon dried oregano
1/4 teaspoon crushed dried red pepper flakes
salt
fresh ground black pepper
1/4 cup mascarpone cheese
1/4 cup sour cream

Steps:

  • Heat the oil in a large, heavy pot over medium flame.
  • Add the pancetta and saute until crisp and golden, about 5 minutes.
  • Add the onion and saute until tender, about 3 minutes.
  • Add the bread cubes and toss to coat with the pan drippings.
  • Saute until the bread cubes are golden, about 5 minutes.
  • Add the broth, tomatoes, basil, oregano, and red pepper flakes.
  • Bring the soup to a boil, then reduce the heat to medium-low.
  • Simmer uncovered until the flavors blend, about 10 minutes.
  • Season the soup to taste with salt and pepper.
  • In a small bowl, stir together the mascarpone and sour cream until blended.
  • Ladle the soup into bowls.
  • Spoon a dollop of the mascarpone mixture onto each serving and serve.

I saw Food Network's Giada make this simple and quick to put together dish and had to make it. I loved it! Sometimes, I substitute lean ham or canadian bacon for the panchetta.

6 ounces pancetta, diced
2 tablespoons olive oil
1 onion, chopped
sea salt
2 garlic cloves, coarsely chopped
1 pinch dried crushed red pepper flakes
1 (28 ounce) can tomato puree or 1 (28 ounce) can crushed tomatoes
1 lb linguine
1/2 cup grated pecorino romano cheese

Steps:

  • Add the pancetta to a large skillet over medium heat.
  • Add olive oil and saute until golden, say 8 minutes. (Suggestion: If using lean ham, add 1/2 tsp black pepper and 1/2 tsp sweet paprika).
  • Add the onion and saute till tender for 5 minutes. Season with salt.
  • Add the garlic and red pepper flakes and saute until fragrant for about 30 seconds.
  • Stir in the tomato puree.
  • Simmer uncovered over medium-low heat until the sauce thickens slightly and the flavors blend, about 15 minutes.
  • Meanwhile, boil the pasta according to directions.
  • Drain, reserving 1 cup of the cooking liquid.
  • Toss the linguine with the sauce in the skillet, adding some of the reserved cooking liquid until the pasta is moist but being careful not to dilute the sauce.

1 clove garlic, minced
1 (26-ounce) jar marinara sauce (recommended: San Marzano brand)
2 (14-ounce) cans chicken broth
1 (15-ounce) can cannellini beans, drained and rinsed
1/2 teaspoon red pepper flakes
1/2 cup pastina pasta (or any small pasta)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.
