TOMATO BACON PIE
Gladys Gibson's simple but savory pie makes a tasty addition to brunch buffets and leisurely luncheons. The Hodgenville, Kentucky cook relies on a cheesy mixture for the pie's golden topping and a refrigerated pastry shell for easy preparation.

- Bake pastry shell according to package directions; cool. Place tomatoes in the crust; sprinkle with bacon. In a small bowl, combine the cheese and mayonnaise. Spoon over bacon in the center of pie, leaving 1 in. around edge. , Bake at 350° for 30-40 minutes or until golden brown (cover edges with foil if necessary to prevent over browning).

Oh my gosh this recipe is to die for, my father past this last November and our niece Karen made this for the family. It will be one of our favorite's. Family and our friends like it very much.

Steps:
- 1. Drain tomato slices on paper towel about 10 minutes, sprinkle with garlic salt.
- 2. Meanwhile heat oven to 375*F. Combine cheese, mayonnaise, 1/4 cup of green onions and pepper in medium bowl.
- 3. Layer half the tomatoes, bacon, basil and remaining 1/4 cup green onions in pie crust. Top with remaining tomatoes. Spread mayonnaise mixture over top. Bake 30 minutes or until golden brown, (cover edge of crust with foil if browning too quickly).
- 4. TIP* To peel tomatoes, cut small "X" in the bottom of each tomato. Place in a large pot of boiling water 30 to 60 seconds or until skins become loose, place in a large bowl of ice water. Skins should slip off with help o paring knife.

Family recipe handed down. Every time I make this for a gathering, I am asked for the recipe by everyone!! Use only the freshest tomatoes for this, if you can get true "Hanover" tomatoes you'll love this even more! What a way to use all those summer tomatoes, yummm!!! Even better the second day....if there is any left!

- Spread sliced tomatoes on paper towels and let sit for about 20 minutes to remove excess liquids. You can sprinkle with salt at this point if using salt.
- Bake pie shell for 10 min at 375 (prick w/ fork first). Remove from oven.
- Layer tomatoes and onion rings in shell, sprinkling each layer with pepper, basil and garlic (and bacon if you choose touse!).
- Combine mayonnaise and cheese.
- Spread over tomatoes.
- Bake at 350 for 35 minutes or until pie is browned and bubbly.
- Let stand for 5 minutes before serving.
- **Note it is important to SPREAD the mayo mixture over entire pie, don't just "dollop" it on --
- **Note you may also need to tent with aluminum foil about half-way through cooking to keep crust from getting too brown.
