2 (10.5 oz) containers red cherry tomatoes
1 (10.5 oz) container yellow cherry tomatoes
1 (14.5 oz) can chick peas, drained and rinsed
1 1/2 cucumbers, peeled and sliced into quarters
2 Hass avocados, peeled, cored and diced (ripe but semi-firm)
1/4 cup chopped fresh parsley
3 oz feta cheese, crumbled
Dressing
1/2 cup olive oil
1/4 cup fresh lemon juice
1 tsp dijon mustard
2 cloves garlic, minced
1/4 tsp salt
1 Tbsp chopped fresh basil
3/4 tsp dried oregano

Steps:

  • In a salad bowl toss together tomatoes, chick peas and cucumbers. Add avocado and parsley and gently toss. Add desire amount of dressing and the feta and gently toss to evenly coat. Serve within an hour for best results. For the dressing: In a blender (or mixing bowl with a whisk), blend olive oil, lemon juice, mustard, garlic and salt until mixture is well emulsified. Stir in basil and oregano.

This recipe comes from "Cooking Thin with Chef Kathleen". It is very delicious and goes well with grilled lamb chops. Please only make this in the summer when the tomatoes are at their peak!

1/4 cup lemon juice
1 small sweet onion, thinly sliced
1 medium cucumber
3 -4 large garden fresh tomatoes, cored and sliced
salt and pepper
1/2 cup low-fat plain yogurt
2 garlic cloves, minced
1/2 cup roughly chopped assorted fresh herb (I used mint, parsley and oregano)
2 tablespoons extra virgin olive oil
salt and pepper

Steps:

  • Place onion slices in a shallow dish. Pour lemon juice over them and toss so they are all coated with the juice. Let stand at least 30 minutes or up to 2 hours. Turn them occasionally.
  • While the onions sit, peel and slice the cucumber into 1/4 inch slices.
  • Place in a large bowl.
  • Add the tomatoes. Season with salt and pepper and toss.
  • Make the dressing:.
  • In a small dish, mix together the yogurt, garlic, herbs, salt and pepper and olive oil.
  • Drain the juice off the onions into the bowl with the dressing ingredients. Mix well.
  • Add the onions to the bowl with the cucumbers and tomatoes.
  • Pour the dressing over the top and toss to coat.
  • Serve.
  • You can also fancy this up by layering the tomatoes on a platter and then topping with the cucumbers and then onions. Then just drizzle with the dressing.

Best if made ahead so flavors meld. I serve ours with bread. Sometimes have added cooked barley. I used canned crab instead of the expensive stuff.

1 tablespoon lemon zest
3 tablespoons lemon juice
1 tablespoon olive oil
1 teaspoon honey
3/4 teaspoon Dijon mustard
1/4 teaspoon salt (to taste)
1/4 teaspoon lemon pepper
3 tablespoons lemon juice
1 cup fresh corn kernels, about 2 ears
1/3 cup fresh basil, thinly sliced
1/4 cup red bell pepper, chopped
2 tablespoons green onions, sliced
1 lb lump crabmeat, shell pieces removed
8 slices beefsteak tomatoes, cut in 1/4 inch slices
1 avocado, chunked

Steps:

  • Combine dressing: zest, lemon juice, oil, honey, mustard, salt, and pepper in a cup, stir well, remove about 1/4 cup of dressing mixture and put into medium size bowl for salad for step 2. RESERVE rest of dressing for topping tomato/avocado mixture later for Step 4.
  • Into medium sized bowl ( that you have the 1/4 cup of dressing), add the additional 3 tablespoons of lemon juice, corn, basil, bell pepper, onion, and crab; toss gently.
  • Arrange 2 tomato slices and 1/4 avocado onto each of 4 plates.
  • Drizzle about 1 teaspoon of reserved dressing in cup over each tomato/avocado mixture.
  • Divide corn and crab salad between plates.

2 -3 heirloom tomatoes
1 cup of grilled corn cut off cob
½ green pepper chopped
¼ red onion chopped
2 Tbls chopped fresh cilantro
¼ to ½ tsp red pepper flakes
Salt and pepper to taste
1/4 cup goat cheese

Steps:

  • Slice the tomatoes into ¼ inch thick slices and arrange on two plates. Mix together the next 6 ingredients in a bowl. In a small skillet melt 1 tsp of butter over high heat. Add the corn mixture and sauté over high heat for a minute or two until it is heated through and browned in places. Pour the corn mixture over the tomatoes and drizzle with the lemon verbena dressing. Crumble goat cheese on top and serve immediately.

Probably the simplest tomato dressing for a salad there is. From Chef Michael Smith. He suggests using an immersion blender since it's easier to clean up :) Also that it might take a few minutes to get to the smooth puree.

1 large ripe fresh tomato, diced
1 lemon, juice and zest of
1/2 cup extra virgin olive oil
salt and pepper

Steps:

  • Put everything in a blender until a smooth puree forms.
  • Strain through the finest strainer you have. This will smooth out the dressing by removing seeds and tiny bits of the tomato's skin.
