Savory Goat Cheese and Tomato Bread Pudding image

2 tablespoons unsalted butter, at room temperature
12 slices good-quality white sandwich bread, crusts trimmed off (about 8 ounces total)
5 ounces goat cheese, crumbled, or 6 ounces crumbled feta cheese
8 ounces (1 pint basket) red or yellow cherry tomatoes, stemmed, and cut in half if large
6 eggs
2 cups milk
3 tablespoons prepared pesto
1/4 cup freshly grated Parmesan or aged Asiago cheese

Steps:

  • Grease the bottom of a 13 by 9 by 2-inch baking dish or other shallow 3-quart baking pan.
  • Butter each bread slice on one side. Stack the bread, 6 at a time, and cut on the diagonal into triangles. Place half of the bread pieces, buttered sides down, in the bottom of the prepared dish. Scatter the goat or feta cheese over the bread in one layer. Scatter the cherry tomatoes over the cheese. Top with the remaining buttered bread pieces, buttered sides up.
  • In a bowl with a whisk, beat eggs, milk and pesto until well-blended. Pour over the bread and cheese mixture in the dish. Tamp down the top pieces of bread lightly with the back of a fork so that they soak up some liquid. Sprinkle the top with the grated cheese. Cover the dish tightly with foil and refrigerate overnight.
  • To serve, remove the dish from the refrigerator and place it in a cold oven; turn the oven on to 350 degrees. Bake for 35 minutes with the foil on; remove foil and continue to bake until pudding is puffed and golden brown on top, 25 to 30 more minutes.

  • Remove the top of the roll. Using a small knife cut around the inside of the bread (being careful not to cut through the sides) and scoop out the center of the roll - save this for later.
  • Butter the inside of the roll and place 3-4 cheese slices around the inner edge of the bread bowl. Bake in a preheated oven at 375˚F (190˚C) for 10 minutes, or until the cheese has melted.
  • Cut the saved center of the roll in half. Butter both sides and create a cheese sandwich.
  • Melt butter in a small skillet over medium heat and fry the sandwich until both sides are browned and the inner cheese has melted.

4 slices French bread, cut at least 1 inch thick
2 medium tomatoes (very ripe)
1/2 cup parmesan cheese (grated)
1/2 cup feta cheese (finely crumbled)
1/3 cup extra virgin olive oil (xtra virgin dipping oil)
1/4 cup basil pesto (Bonnie's #8650)
salt and pepper (to taste)

Steps:

  • Cut french bread across the loaf or at a small angle, making your pieces and inch thick or even thicker.
  • With a brush, lightly paint one side and the slice edges with olive oil.
  • Spread a thin layer of Bonnie's Pesto on the slices. (or thick if you like).
  • Arrange slices of tomato in the top of the slice to cover.
  • Lightly salt and pepper.
  • Either broil or use a toaster oven to quickly toast the tomato slices. The tomato will not be "cooked" but simply heated up a little.
  • When they are almost done, remove and sprinkle to cover with the two cheeses mixed together. Return to toaster until cheese is melted.
  • This is an excellent appetizer or side dish with anything italian.

  • In a skillet saute the onions and garlic in butter until softened.

1 scant tablespoon or 1 (1/4-ounce) package active dry yeast
1/4 cup soft butter
1 cup crushed tomatoes in juice
1 egg, beaten
3/4 cup Parmesan cheese, shredded
2 tablespoons fresh parsley, chopped

Steps:

  • Cut 2 tablespoons butter unto 1/4-inch dice. Place on a piece of waxed paper and place in the freezer.
  • In a large bowl, combine flour, sugar, salt, and yeast. Heat soft butter and tomatoes to 125 degrees. Add to the dry ingredients with the egg, Parmesan cheese, and parsley. Beat vigorously for 2 minutes.
  • Turn dough into a well-greased, 8-inch round pan. Cover with a tightly woven towel and let rise for 1 hour. About 10 minutes before baking, preheat oven to 375 degrees. Just before baking, remove the diced butter from the freezer and sprinkle on the top of the dough. Bake for 20 minutes, or until the internal temperature of the bread reaches 190 degrees. CHEESE AND SUN-DRIED TOMATO ON COCKTAIL RYE BREAD

I had a few slices of cocktail rye bread left over so I threw this together. Make it as hot or as mild as you like. I forgot to take a picture of the one I made it looked so good I ate it! I made these again this time taking a picture however I used "Rug Roggebrood" snack squares (see photo) this is a very heavy almost black dense bread - the squares however want to fall apart and the flavor of the bread is too heavy it takes over the cheese and sun dried tomatoes flavor. I recommend that you stick to the light pumpernickel or even flattened 9 grain bread. I made these single layer and that works as well.

  • The bottoms should be golden I like to cut them into 3 pieces but you can leave them large or cut into 2 pieces.

4 slices American cheese
2 slices of white bread
2-3 strips of cooked bacon
2-3 slices ripe tomato
1 teaspoon lightly salted butter

Steps:

  • 1. Place two slices of cheese onto each side of bread.
  • 2. Place bacon and tomato slices onto one side of bread.
  • 3. Close sandwich.
  • 4. Spread evenly 1/2 teaspoon of lightly salted butter onto each side of the bread.
  • 5. Grill over moderate heat for approximately 3-4 minutes.

1-1/2 cups KRAFT 2% Milk Shredded Sharp Cheddar Cheese
4 slices OSCAR MAYER Turkey Bacon, cooked, crumbled
1/2 tsp. ground red pepper
1 loaf (16 oz.) French bread, cut into 20 slices
2 tomatoes, chopped

Steps:

  • Heat oven to 350°F.
  • Mix cheese, turkey bacon and pepper.
  • Place bread slices on baking sheet. Top with tomatoes; sprinkle with cheese mixture.
  • Bake 10 min. or until cheese is melted.

Tomato Cheese Bread image

This bread is wonderful made with garden fresh tomatoes, it's perfect for a barbecue! I used the Philadelphia brand soft cream cheese in the small tub for this. Use only firm plum tomatoes for this.

1 (8 ounce) container soft cream cheese
1/3 cup grated parmesan cheese
1 tablespoon minced fresh garlic (can use more)
2 -3 tablespoons chopped fresh basil
salt and pepper
1 large unsliced French bread
4 large plum tomatoes, thinly sliced (can use less)

Steps:

  • Microwave the the cream cheese in a medium microwave-safe bowl on HIGH for 20 seconds; Add in the Parmesan cheese, garlic and basil; mix well to combine, then season with salt and pepper to taste.
  • Slice the bread in half lengthwise.
  • Evenly divide and spread the mixture over the cut sides of the bread.
  • Top with the sliced tomatoes, then sprinkle a small amount of salt over the tomato slices.
  • Broil about 5-inches away from heat with the oven door partially open for about 5 minutes.
  • Cut into desired size slices.
