This is a recipe that my Mom made when I was a child, and I LOVE tomatoes! If you are looking for a quick and easy dish, this is the one!

Number Of Ingredients 5

1 (14 1/2 ounce) can of red gold diced tomatoes, juice and all
1 (14 1/2 ounce) can of red gold tomato sauce
2 cups egg noodles (I use the no-yolk type)
1 package smoked sausage, cut into bite size pieces
1/4 cup margarine or 1/4 cup butter

Steps:

  • In a mixing bowl, combine the first three ingredients.
  • Place in buttered baking dish.
  • Place cut sausage on top of noodles and tomato mixture.
  • Cut butter or margarine into small pats and dot casserole.
  • Bake at 350 for 25-30 minutes or until sausage is browned and casserole is bubbly.

Sure to be a family favourite, this warming winter one-pot has gently simmered sausages, hearty cannellini beans and a crunchy breadcrumb topping

1 tbsp olive oil
1 onion, finely chopped
1 garlic clove, crushed
1 large celery stick, finely chopped
2 peppers (any colour), cut into chunks
pack 6 pork sausage (about 400g/14oz)
1 tsp sweet smoked paprika
½ tsp ground cumin
½ tsp chilli flakes
2 x 400g cans chopped tomatoes
400g can cannellini beans, drained
250g bag spinach (or use the same quantity as frozen)
2 tbsp fresh breadcrumbs (or frozen with herbs)

Steps:

  • Put the oil in a large, heatproof casserole dish over a medium heat and add the onion, cooking for 5 mins until starting to soften. Tip in the garlic, celery and peppers, and give everything a good stir. Cook for 5 mins more.
  • Turn the heat to high and add the sausages. Cook for a few mins until browned all over, then reduce the heat to medium, sprinkle in the spices and season well. Pour over the tomatoes and bring to a simmer. Cover and continue simmering gently for 40 mins, stirring every now and then.
  • Heat the grill to high and uncover the casserole. Add the beans and spinach, and stir to warm through. Scatter over the breadcrumbs and grill for 2-3 mins until golden and crisp.

2 cups uncooked penne pasta
1 pound smoked sausage, cut into 1/4-inch slices
1-1/2 cups whole milk
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/2 cups cheddar french-fried onions, divided
1 cup shredded part-skim mozzarella cheese, divided
1 cup shredded cheddar cheese, divided

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, brown sausage over medium heat for 5 minutes; drain. In a large bowl, combine milk and soup. Stir in 1/2 cup onions, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and sausage. Drain pasta; stir into sausage mixture., Transfer to a greased 3-qt. baking dish. Cover and bake at 375° until bubbly, 25-30 minutes. Sprinkle with remaining onions and cheeses. Bake, uncovered, until cheese is melted, 3-5 minutes longer.

1 lb smoked sausage, sliced
1 tomatoes, chopped
16 ounces shredded sharp cheddar cheese
12 slices bread, torn into pieces
18 large eggs
6 cups milk
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder

Steps:

  • Place torn bread pieces into a large, greased pan.
  • Sprinkle tomatoes over bread and then layer sausage on top.
  • Mix eggs, milk, salt, pepper, and onion powder.
  • Pour egg mixture on top of bread and meat and then sprinkle cheese on top.
  • Cover and refrigerate overnight.
  • Bake covered in a preheated 350 degree oven for 30 minutes. Remove cover and bake an additional 30 minutes.

A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.
