FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

Steps:
- Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
- Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
- Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

Steps:
- Prepare Tomatoes: Boil a large pot of water and prepare a bowl of ice water.
- Cut an X in the bottom of each vine ripe totmatoe.
- Place in boiling water for 30 seconds or until skin begins to peel back.
- Immediately remove and place in ice water.
- When all tomatoes are prepare, remove skins, core, cut each in half, and squeeze to remove seeds and pulp.
- Coarse chop tomatoes and set aside.
- In a large saute pan or skillet brown sausage and prosciutto.
- Add onions and galic and saute until onions begin to appear translucent.
- Deglaze pan with 1/4 cup of white wine and allow to reduce until liquid is almost gone.
- Add tomatoes and herbs and allow to simmer for 45 minutes.
- About 15 minutes before done add a generous amount of parmesan cheese to help thicken and flavor sauce.
- Prepare Angel Hair Pasta per directions cook until al dente.
- Drain and add to sauce, mix and transfer to large pasta bowl.
- Serve with fresh grated parmesan cheese.

- Heat the oil in a large, deep frying pan. Fry the meatballs until cooked all the way through. Set aside, leaving the juices and remaining oil in the pan.
- Add the chopped onion to the pan and cook for 3-4 minutes or until soft. Add the garlic and cook for another minute. Pour in the red wine and cook until reduced by half.
- Stir in the chopped tomatoes, chili and fresh basil and season generously with salt and pepper. Stir the meatballs into the sauce and cook on a moderate heat for 10 minutes.
- Cook the tagliatelle according to the packet's instructions. Spoon the meatballs and sauce over the pasta and sprinkle with Parmesan cheese to serve.

TOMATO AND BASIL PASTA SAUCE
A delicious and fresh tasting pasta sauce. The fresh basil added at the end is essential. This sauce can be left chunky (which I prefer) or blended in a food processor to a smooth sauce. Serve spooned over cooked pasta with plenty of parmesan cheese.

- use half the oil and gently fry garlic do not let it brown.
- add the tomatoes, dried basil, bay leaf, mixed herbs, salt and pepper and sugar (this recipe needs between 1/2 - 1 tsp salt to bring out the flavours of the tomatoes.
- bring to the boil and gently simmer for 20 mins, add the tomato puree and the rest of the oil and simmer for a further 15 mins until the mixture has reduced.
- If using fresh basil roughly chop and add now.
- Serve with pasta with grated parmasan cheese and freshly ground black pepper.
- Variations - button mushrooms, black olives can be added.
SUMMER TOMATO AND BASIL PASTA WITH PINE NUT SAUCE
Steps:
- Warm a medium skillet over medium heat. Toss in the pine nuts and toast, stirring often, until fragrant and golden, about 5 minutes.
- Transfer nuts to a mini food processor and add 3 tablespoons oil, the lemon juice, and 1/2 teaspoon salt. Blend until smooth, scrape the sides and blend again.
- In a large bowl, combine the tomatoes and their juices, basil, the remaining 2 tablespoons oil, the vinegar, garlic, the remaining 1/4 teaspoon salt, and the pepper and toss thoroughly. Set aside to marinate while pasta cooks.
- Cook pasta according to package directions. Drain well and return to the pot. Add the pine nut sauce and toss to evenly coat the pasta.
- Add the pasta to the bowl of tomatoes and gently toss to combine. Taste and season with more salt and pepper if needed.
