LIGHTER TOMATO "ALFREDO" PASTA BAKE



Lighter Tomato

A saucy pasta bake loaded with Italian sausage, tomato and Alfredo sauce, fusilli and melty mozzarella sounds delicious, but not particularly light-at least until now! This recipe was expressly designed to deliver on flavors of the dish that inspired it-crowd-favorite Tomato-Alfredo Baked Ziti-while also trimming down the calories. To pull this off, the Betty Crocker Kitchens made a number of smart changes: using turkey sausage in lieu of pork, reducing the amount of cheese and including a homemade Alfredo sauce that starts with a head of cauliflower. That's right: You can transform this nutrient-packed vegetable into a luscious and garlicky sauce. What's more, the creamy richness of the cauli-fredo sauce is enhanced by the mild acidity of the Muir Glen™ fire roasted crushed tomatoes. The pairing of these two sauces is what makes the dish so irresistible-and that's exactly what we were going for!

1 tablespoon olive oil
1 cup chopped onions
1 tablespoon finely chopped garlic
1 1/2 cups water
1 package (12 oz) frozen cauliflower flowerets
3/4 cup heavy whipping cream
1 cup grated Parmesan cheese
3/4 teaspoon salt
8 oz uncooked fusilli or rotini pasta (about 2 cups)
1 package (8 oz) white mushrooms, cut into quarters
2 links (about 1/2 lb) Italian turkey sausage
1 cup chopped red or yellow bell pepper
1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
3/4 cup shredded mozzarella cheese (3 oz)
2 tablespoons chopped fresh basil

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 3-quart saucepan, heat 1 teaspoon of the oil over medium heat. Add onions and 1 teaspoon of the garlic; cook 5 to 6 minutes or until just tender. Transfer to blender. Return saucepan to medium heat; add water and frozen cauliflower. Increase heat to medium-high; heat to boiling. Reduce heat to medium-low; cover and cook 3 to 4 minutes or until tender. Drain and transfer cauliflower to blender; cool 10 minutes. Add whipping cream; cover and blend 60 to 90 seconds or until nearly smooth. Add Parmesan cheese and 1/2 teaspoon of the salt; blend 60 to 90 seconds or until smooth.
  • Cook and drain pasta as directed on package. Add to baking dish.
  • Meanwhile, in 12-inch nonstick skillet, heat remaining 2 teaspoons oil over medium-high heat. Add mushrooms and remaining 1/4 teaspoon salt. Cut sausage casing, and discard. Crumble sausage into skillet with mushrooms. Cook 8 to 10 minutes, stirring occasionally to break up sausage, until sausage is no longer pink. Stir in bell pepper and remaining 2 teaspoons garlic; cook 1 to 2 minutes or until garlic is fragrant. Stir in tomatoes; heat 3 to 4 minutes or until heated through.
  • Add sausage mixture to baking dish; stir to completely combine. Top with mozzarella cheese; carefully pour cauliflower sauce over top. Bake uncovered 30 to 35 minutes or until bubbly on edges.
  • Let stand 10 minutes. Top with basil.

Steps:

  • In 12-inch nonstick skillet, melt I Can't Believe It's Not Butter Spread over medium-high heat and cook tomatoes and garlic, stirring occasionally, 3 minutes or until tomatoes are tender.
  • Add cream and bring just to a boil.

8 ounces uncooked ziti or small tube pasta
1 can (14-1/2 ounces) Italian stewed tomatoes, undrained
1/2 cup heavy whipping cream
1/4 cup chopped fresh basil or 1-1/2 teaspoons dried basil
1/2 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, bring the tomatoes to a boil. Cook until most of the liquid is evaporated, about 5 minutes. Reduce heat., Stir in the cream and basil; heat through (do not boil). Drain pasta. Add pasta and Parmesan cheese to sauce; toss to coat.

Not everything I cook is always from scratch, So I decided to share this dish because the alfredo sauce is absolutely yummy. Classico makes the Sundried Tomato Alfredo sauce and I like to pair it with cooked, cubed chicken and pasta, usually Linguini or Fettuccine.

2 jar(s) (15 oz.) classico sundried tomato alfredo
1 pkg (16 oz.) barrilla linguini or fettuccine
2 lb chicken breasts, boneless and skinless
salt and / or pepper to taste

Steps:

  • 1. Boil your chicken breasts til cooked through. While chicken is boiling, boil your pasta in water with a tsp of olive oil or salt whichever you usually use.
  • 2. When boiling of pasta is done, strain and put to the side. When boiling of chicken is done, strain and let cool. Once chicken is room temp or cool enough to handle, cut up into cubes about bite size.
  • 3. Heat up alfredo sauce with chicken added back in. Once heated, turn off stove , add pasta back to pot and stir. Salt and or pepper to taste. serve.

3 boneless skinless chicken breasts
1 (10 ounce) can Rotel tomatoes & chilies
1 medium onion
2 -3 medium sized squash
4 tablespoons butter
1 tablespoon minced garlic
1 (16 ounce) jar Classico Alfredo with sun dried tomatoes
1 (8 ounce) box penne pasta
salt and pepper
2 ounces monterey jack pepper cheese, to add even more spice Parmesan or 2 ounces cheddar cheese

Steps:

  • First, broil the chicken (4-6 minutes each side) depending on your oven. When it is white all the way through, take it out of the oven and let it cool.
  • Boil water, and once water is boiling, add box of penne pasta and cook until al dente.
  • While the water is heating up/pasta is cooking -- Dice the squash and the onion. Melt 2 tablespoons of butter in a large pan and add the squash and onion. Right before they are finished, add garlic. Sautee until both are softened.
  • When the chicken is cooled down, tear into strips and add to the squash and onion mixture. Add the can of Rotel tomatoes & the jar of sun dried tomato alfredo sauce. Stir and add salt and pepper to taste.
  • Drain the penne pasta and toss it with the other 2 tablespoons of butter, add to the sauce, mix the sauce into the pasta well, and then grate fresh cheese on top.
  • I like to serve with Pillsbury crescent rolls -- Enjoy!

2 medium chicken breasts, boned and skinned, cut into bite size pieces
2 Tbsp olive oil, extra virgin
salt and pepper
1 small onion, diced
1/2 lb crimini mushrooms, sliced
2 Tbsp chopped, yellow or red bell peppers
2 clove garlic, minced
1 can(s) diced, fire roasted tomatoes
1/4 c dry, white wine
1 jar(s) 16 oz alfredo sauce
1/2 lb bow tie pasta

Steps:

  • 1. Heat 1 TBLS olive oil in large fry skillet, add chicken, salt and pepper to taste. Cook until chicken is lightly browned, set aside.
  • 2. In same pan, add remaining olive oil into pan, add mushroom and onions and cook onions until translucent, add yellow bell peppers and garlic and cook 5 - 7 mins on low
  • 3. Add wine and let reduce by half. Drain tomatoes add to vegetables and cook 10 mins on low.
  • 4. Boil pasta water and add bow tie pasta, cook as directed until al dente.
  • 5. Add jar of Alfredo Sauce to veggies and tomatoes. Once pasta has cooked add to sauce. Use pasta water to thin if needed. Top with parmesan cheese and serve.

1 tablespoon garlic, minced
1/4 cup milk
1/4 cup cherry tomatoes, halved

parmesan cheese, to your personal taste

Steps:

  • Boil the noodles in a pot of water.
  • In a medium-sized saucepan, saute the garlic, onions, and cherry tomatoes in the butter on medium heat.
  • When the ingredients are sauteed, add the milk, basil, cayenne pepper, and Parmesan cheese.
  • Stir the sauce and turn down to low heat. Smash the tomatoes as you stir the sauce to get the juice in the sauce.
  • Keep the sauce on low heat, until the noodles are done boiling. If the noodles are done before the sauce, strain them, add them to the sauce, and stir.
  • Top with more cheese and cayenne pepper if desired.

1 lb italian sausage, hot
1 jar alfredo sauce
1 md sweet onion
2 clove garlic
2 Tbsp sun dried tomato paste (or diced sun dried tomatoes just use more)
1/2 box pasta of choice i use penne or bow tie
2 Tbsp olive oil, extra virgin

Steps:

  • 1. Prep pasta per directions on box. While pasta is cooking. Heat olive oil in large skillet on med heat. Dice onion add to pan. cut sausage in to 1/4-1/2 inch rounds and add to the cooking onions. cook until sausage is no longer pink. Crush or press garlic cloves in to the pan with the onions and sausage stir and cook until sausage starts to brown and the onions become translucent and browned. Remove from heat. Take a paper towel and ball it up and push it with a wooden spoon thought the sausage onion mixture to remove the extra oil at the bottom of the pan. Throw out the paper towel. Add jar of Alfredo sauce and sun dried tomatoe paste. (add more or less adjust to your taste) put back on the heat and stir until bubbly about 2 minutes. Remove from heat. Drain pasta when cooked add to pan and stir to combine. Plate and sprinkle fresh grated parmasian cheese to taste on top. Serve with either steamed veggies or a green salad and garlic bread. 15 min from fridge to table.
