8 ounces firm tofu (organic sprouted tofu is preferable)
2 1/2 cups cauliflower, cut into small florets
1 egg, beaten (or Egg Replacer for one egg)
1/2 teaspoon mixed Italian herbs
1 pinch salt
6 ounces pizza sauce
2 cups pizza toppings, of your choice
1 1/2-2 cups mozzarella cheese, pizza cheese or 1 1/2-2 cups vegan cheese

Steps:

  • Place a block of tofu in a bowl and top with a heavy weight to drain water as much as possible.
  • Place cauliflower florets in a food processor and process until a rice-like texture is achieved.
  • Fill a medium pan with an inch of water and bring to a boil. Add the processed cauliflower and cook about 4 - 5 minutes. Drain water and cool.
  • Preheat oven to 400ºF degrees.
  • Place the cooled cauliflower in a nut milk bag or wrap with cheesecloth and squeeze excess water out as much as possible.
  • In a bowl, place drained tofu and use your hands to mash it well.
  • Add cauliflower, beaten egg, herb, and salt and mix well.
  • Press the dough out onto a baking sheet lined with parchment paper. The thickness of the dough should be around 1/2 inch.
  • Bake for about 30 - 40 minutes. The crust should be firm and slightly brown.
  • Remove the crust from oven. Top with pizza sauce, toppings and cheese.
  • Bake for another 10 - 20 minutes until the cheese is bubbly and slightly browned.
  • Infuse love and serve!

8 oz firm tofu (from 14-oz package), cut into 1/2-inch cubes (1 1/2 cups)
1 cup sliced fresh mushrooms
2 tablespoons red wine vinegar
1 tablespoon olive oil
2 teaspoons dried Italian seasoning
1 can (11 oz) refrigerated thin pizza crust
1/2 cup pizza sauce
1/2 cup sun-dried tomatoes in oil, drained, cut into small pieces
1 red bell pepper, thinly sliced
1 small onion, thinly sliced
1 tablespoon chopped fresh basil leaves
1 cup shredded reduced-fat mozzarella cheese (4 oz)

Steps:

  • In medium bowl, stir tofu, mushrooms, vinegar, oil and Italian seasoning. Cover and refrigerate at least 30 minutes.
  • Meanwhile, move oven rack to lowest position. Heat oven to 375°F. Spray 15x10x1-inch pan with cooking spray. Unroll dough in pan. Bake about 10 minutes or just until edges are light golden brown.
  • Spread pizza sauce over crust. Drain marinade from tofu and mushrooms, discarding marinade. Top sauce with tofu, mushrooms, tomatoes, bell pepper, onion and basil.
  • Bake 10 minutes; sprinkle cheese over pizza. Bake about 10 minutes longer or until cheese is melted and crust is deep golden brown.

1 unbaked 15 inch whole wheat pizza crust
350 g italian herb super firm tofu
1 cup tomato sauce
1/4 cup parmesan cheese
2 green onions, sliced
1 cup sliced mushrooms
3/4 cup green pepper, diced
1 1/2 cups mozzarella cheese, shredded

Steps:

  • Bake pizza crust at 350 degrees for 10 to 15 minutes.
  • Crumble tofu.
  • Mix together tofu crumbles, tomato sauce, and Parmesan cheese.
  • When crust is ready, evenly spread the tofu mixture on top.
  • Sprinkle with green onion, mushrooms, and green pepper. Top with mozzarella cheese.

Tofu pizza dough with kimchi and bacon topping - as bizarr as it sounds, the ingredients are surprisingly complementary to each other. (I usually don't put in bacon.) If you are not too fond of kimchi try some other toppings, but at the least, try the dough. It is very healthy.

1 cup whole wheat flour
1 1/2 cups all-purpose flour
2 tablespoons flax seed meal
1 teaspoon salt
1/2 cup silken tofu
3 tablespoons olive oil
2 teaspoons active dry yeast
1/2 cup water, lukewarm
1 strip bacon, diced
1/2 cup cabbage kimchi, diced
1 green pepper, sliced
1 cup mozzarella cheese, shredded
1 green onion, sliced
1 tablespoon olive oil, for brushing

Steps:

  • Sift dry ingredients (flour through salt) and set aside.
  • Mix water and yeast and set aside for 5 min to proof.
  • When yeast starts to get bubbly, mix in oil and the dry ingredient.
  • Knead for about 10 minutes. The dough will be sticky.
  • Cover and let it rise 2 hours or until doubled.
  • Meanwhile, cook bacon and drain.
  • Saute kimchi 3-5 mintutes and mix with bacon.
  • When the dough is ready, roll it out on lightly floured surface.
  • Put the dough on a baking pan.
  • Brush with olive oil and layer kimchi, cheese, green onion, and pepper.
  • Preheat oven at 350 and let it rest for 30 minutes.
  • Bake for 15-18 minutes.

TANDOORI TOFU VEGAN PIZZA

1 Rawspicebar's Tandoori Spices
1 300g tofu
4 tablespoons lemon juice
1 tablespoon apple cider vinegar
3 garlic cloves, crushed
2 cups yogurt (vegan, if preferred)
1 pizza crust
1 Coriander leaves, to garnish
1 red onion, thinly sliced
3/4 cup cherry tomatoes, halved
2 handfuls baby spinach
1 tablespoon oil
1 pinch salt and pepper

Steps:

  • 1. Make the natural yoghurt - process silken tofu, lemon juice, soymilk and apple cider vinegar until completely smooth. (This yoghurt will be used for three different components: the tandoori marinade, the pizza base sauce and the garnishing mint yoghurt) 2. Make the tandoori marinated tofu - add the diced extra-firm tofu to a bowl. Top with the tandoori paste, garlic cloves and 1 tablespoon of the vegan yoghurt (made in step 1). Stir until tofu is evenly coated. If possible, allow to marinate in the fridge for about 3 hours. If you in a hurry, allow at least half an hour. 3. Make pizza base sauce - Take half of the remaining vegan yoghurt mixture (from step 1) and put it in a bowl. Add the tandoori paste, sugar and the garlic clove. Stir to combine. Taste and adjust the sweetness and saltiness if needed. Set aside 4. Preheat oven to 180 degrees celsius (fan-forced) 5. Make the mint yoghurt sauce - Add the remaining yoghurt mixture (from step 1) to a bowl with the mint leaves. Stir to combine and set aside. 6. Add the marinated tofu and the oil in a pan. Fry on high heat until browned on all sides. Set aside. 7. Line two pizza trays with baking paper or spray oil. Add the pizza bases to the trays and divide the pizza base sauce on both. Spread with a spoon until both pizza bases are evenly covered. Top with the onions, cherry tomatoes and the marinated tofu. 8. Bake for approx. 30 minutes until slightly browned on top. 9. Serve hot with a drizzle of mint yoghurt, salt and freshly cracked black pepper and a handful of baby spinach on each pizza. Enjoy!

1 pound 16 ounces of your favorite store-bought or homemade pizza crust
1 cup of your favorite barbecue sauce
1 cup crispy salt & pepper tofu pieces -or- 1 cup large-diced cooked chicken
1/2 small red onion (thinly sliced)
8 ounces mozzarella cheese
Kosher salt
Handful of fresh cilantro (coarsely chopped)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Roll/pull/flatten the pizza crust dough to about 14 inches in diameter (if making one tofu and one chicken pizza, divide dough in half and shape into two pizzas about 8 inches in diameter.)
  • Brush a cookie sheet with a little olive oil and carefully lay the pizza crust(s) on the cookie sheet.
  • Spread 1/2 cup of the barbecue sauce onto the dough, leaving about a 1/2 inch border around the edges. (If making two pizzas, spread 1/4 cup on each pizza).
  • Add tofu or chicken to a small bowl and add remaining barbecue sauce. Carefully toss and evenly place pieces over pizza crust. (If making two pizzas, place tofu in one bowl and chicken in the other, and pour 1/4 cup sauce over each. Toss and spread on respective crusts.)
  • Lay sliced red onions over the top.
  • Sprinkle with shredded mozzarella cheese.
  • Bake for about 10 minutes, until the crust is golden brown and the cheese is completely melted.
  • Remove from the oven and sprinkle a pinch of kosher salt and the fresh cilantro over the top.
  • Slice and serve!
