1 14-ounce can crushed tomatoes
1 clove garlic, smashed
8 fresh basil leaves, torn
Kosher salt and freshly ground pepper
1/2 cup breadcrumbs
1/3 cup grated parmesan cheese
1/2 teaspoon dried Italian seasoning
1 large egg
1 12-ounce package firm tofu, drained and sliced into 8 pieces
2 1/2 tablespoons extra-virgin olive oil, plus more for drizzling
1 loaf whole-wheat Italian bread, cut into 4 pieces and split in half
1/4 cup shredded part-skim mozzarella cheese
1/2 pound baby spinach (about 8 cups)

Steps:

  • Preheat the broiler. Combine the tomatoes, garlic, basil and 1 cup water in a saucepan over medium-high heat. Season with salt and pepper and simmer until slightly thickened, about 15 minutes.
  • Toss the breadcrumbs, 2 tablespoons parmesan and the Italian seasoning on a plate; season with salt and pepper. Beat the egg in a shallow bowl. Dip the tofu in the egg, then in the crumbs, turning to coat.
  • Heat 2 tablespoons olive oil in a nonstick skillet over medium heat. Add the tofu and cook until crisp, 3 to 4 minutes per side. Place the bread cut-side up on a broiler pan; spread the bottom halves with sauce, then top with tofu, more sauce, the mozzarella and remaining parmesan. Broil until the cheese melts and the bread is toasted, about 2 minutes.
  • Meanwhile, heat the remaining 1/2 tablespoon olive oil in the empty skillet over medium-high heat. Add the spinach, season with salt and pepper and let wilt, about 1 minute. Place on top of the cheese and cover with the bread tops.

I have been a vegetarian for only 2 months now and wanted to find a recipe that would make tofu taste good! After looking at many recipes I came up with this which combines what I think are the best parts of many recipes. I didn't measure the ingredients so I will give estimates here which will work but feel free to adjust to your personal taste. This really is a special recipe in my opinion that even meat lovers will enjoy.

350 g extra firm tofu (I buy organic)
4 tablespoons soy sauce
4 tablespoons olive oil
1 teaspoon minced garlic
1 egg, lightly beaten
1/2 cup flour
1/2 cup nutritional yeast flakes
24 ounces of your favourite spaghetti sauce (or homemade)
1/2 cup canola oil (for frying tofu)
1 cup mozzarella cheese (or whatever kind you like)
parmesan cheese

Steps:

  • Cut tofu into 1/4 inch slices. Lay out slices between several layers of paper towels or clean tea towels. Place a cutting board or other flat surface on top with some weight on it to draw the moisture out. Press for about 30 minutes.
  • Mix the soy sauce, olive oil and garlic together and place the drained tofu slices to marinate for a couple of minutes,.
  • In a shallow dish combine the flour and nutritional yeast. Dip each tofu slice in the egg and then coat in the flour/yeast.
  • Heat oil in a skillet over medium heat. Cook tofu slices on both sides until crispy golden.
  • Place a thin layer of sauce in an 8 inch square baking pan. Arrange tofu slices in the pan. Spoon remaining sauce over tofu, top with shredded mozzarella cheese and parmesan cheese.
  • Bake at 400 degrees for 20 minutes.
  • Serve with a crisp salad or pasta.

2 tablespoons olive oil
1 lb firm tofu, cut into 1/2 slices
1 small onion, chopped
2 cloves garlic, chopped
2 cups tomatoes, crushed or diced
1 teaspoon oregano
1 teaspoon rosemary
1/4 cup mozzarella cheese or 1/4 cup cheddar cheese
1 tablespoon parmesan cheese
salt and pepper

Steps:

  • In fry pan, add 1 tbls oil, fry tofu slices till golden brown, drain on paper towels.
  • Add the remaining oil and fry onion and garlic till tender.
  • Add tomatoes and spices, simmer for 15 mins.
  • Lay tofu in a baking dish, pour over tomatoe sauce, sprinkle with cheeses.
  • Bake at 350 for 20-25 mins, uncovered.
  • Enjoy!

1 12 oz package of tofu, drained on paper towels
1 medium zucchini (shredded)
1/2 medium onion (diced)
2 cloves garlic (minced or crushed)
2 tablespoons dried Italian seasoning (or 1 teaspoon each: oregano, basil, rosemary, sage)
1/2 cup ricotta cheese
1/4 cup italian bread crumbs
1/2 cup shredded parmesan cheese
2 egg whites (slightly beaten)
Topping
1-2 tablespoons olive oil
1/2 each red and green bell peppers diced
1/2 lb sliced button mushrooms
1/2 medium diced onion
1 clove minced garlic
1/2 jar prepared (or leftover homemade) marinara sauce
4-8 oz shredded mozzarella cheese
1/4 cup shredded parmesan cheese

Steps:

  • Preheat the oven to 400 degrees. In a large mixing bowl, mash the tofu and then add other filling ingredients. Mix well and set aside. Saute the peppers, mushrooms, onion and garlic over medium heat, add the pasta sauce, mix well and remove from heat Grease a 9x9 or round glass baking dish. Pour a small amount of the sauce mixture in the bottom, follow with 1/2 of the tofu mixture (press into the bottom of the pan), pour 1/2 of the remaining sauce and vegetable mixure over the tofu and spread evenly, top with 1/2 of the shredded cheeses. Repeat the layers with the remaining tofu, sauce and cheeses, ending with a layer of cheese. Cover loosely with aluminum foil, bake at 400 degrees for 30-40 minutes, or until cheese is melted. Uncover and bake an additional 5-10 minutes until cheese is brown and bubbly.
