This dish has a mild flavor, but if you'd like something with a stronger flavor it would be easy to spice up. Serve it by itself, with noodles or rice, or wrapped in a tortilla

1/4 head cauliflower, chopped
1/8 head cabbage, chopped into squares
1 onion, chopped
450 g extra firm tofu
2 cups coconut milk
3/8 cup soy sauce
4 tablespoons peanut butter
4 teaspoons sesame oil
4 teaspoons minced garlic
1/2 teaspoon chili powder

Steps:

  • Chop up the cauliflower, cabbage, and onion (approx 1" squares).
  • Cube tofu into bite-sized pieces.
  • Toss tofu in flour, fry in a little hot oil until brown. Remove from pan and drain on absorbent paper. Add onion to frypan and cook until transparent.
  • Wipe out frypan with paper towel.
  • Whisk together the coconut milk, soy sauce, peanut butter, toasted sesame oil, minced garlic and chilli in a bowl. You will need to break up the peanut butter with a fork first because it will stick to the whisk.
  • Pour the coconut peanut sauce into the frypan and heat until bubbling.
  • Add the vegetables to pan and reduce heat to simmer.
  • Allow the dish to simmer covered on the stove for 10 minutes.
  • Remove the lid and let simmer for 5 more minutes, stirring occasionally.
  • Add cooked onion and crispy tofu to pan and simmer for a further 5 minutes.
  • Serve on a bed of steamed rice or noodles (or you can wrap in a tortilla).

225 g (8 oz) firm tofu, cut into 10-12 cubes
100 g thin udon noodles (or any flat wheat noodles)
1 large stalk broccoli, cut in florets
15 green beans, each cut in half crosswise
1/2 - 1 red bell pepper, cut into short strips
1 small-medium carrot, cut into thin short strips
4 shiitake mushrooms, each cut into 2 pieces
8 thai chilis, sliced
4 Tbsp sesame oil
2 Tbsp fresh ground peanut butter
2 Tbsp soy sauce
2 tsp tamarind paste
1 tsp vegetarian fish sauce (nuoc mam chay)
1 tsp ginger paste
1 tsp garlic paste

Steps:

  • Drain tofu by lightly pressing with paper towels or cloth. Dry fry tofu by placing tofu cubes on non-stick pan on medium heat and applying pressure with a spatula to squeeze out any liquid, flipping once golden brown and repeating until 4 sides are golden brown. Put 3 Tbsp sesame oil in wok and bring to medium heat. Heat thai chilis in wok for a few minutes. Add broccoli florets and green beans to wok and stir-fry for 5 minutes. Add carrots and shiitake mushrooms to wok and continue to stir-fry 3 minutes. While stir-frying, boil wheat noodles in a pot until al dente and rinse under cold water. Add red bell peppers and tofu to wok and continue to stir-fry for 5 minutes. Make the peanut sauce: add 1 Tbsp sesame oil, 2 Tbsp peanut butter, 2 Tbsp soy sauce, 2 tsp tamarind paste, 1 tsp vegetarian fish sauce, 1 tsp ginger paste, and 1 tsp garlic paste. Mix well by rapidly stirring with fork (or blending if possible). Add peanut sauce to wok and mix well. Add noodles to wok and stir-fry for about 5 minutes or until most liquid is absorbed.

1 (14 ounce) package extra firm tofu, drained and cut into 1-inch cubes
2 teaspoons canola oil
3/4 lb snow peas, trimmed
1 cup red bell pepper, sliced into strips
3/4 cup water, divided
1/2 cup green onion, sliced
2 teaspoons fresh ginger, peeled and minced
2 garlic cloves, minced
3 cups shiitake mushrooms, sliced (about 8 ounces)
2 tablespoons reduced sodium soy sauce or 2 tablespoons soy sauce
2 tablespoons creamy peanut butter
1 teaspoon cornstarch
2 teaspoons sriracha sauce
1/4 teaspoon salt

Steps:

  • Place tofu cubes on several layers of paper towels. Cover with additional paper towels; let stand 5 minutes.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add tofu to pan; cook 7 minutes or until lightly browned, gently turning occasionally.
  • Remove from pan; keep warm.
  • Add snow peas, bell pepper, 1/4 cup of water, onions, ginger, and garlic to pan; stir-fry 3 minutes.
  • Add mushrooms; stir-fry 2 minutes.
  • Combine remaining 1/2 cup water, tamari, peanut butter, cornstarch, sriracha, and salt in a small bowl; stir well.
  • Add tamari mixture and tofu to pan; cook 1 minute or until thickened, stirring constantly.
  • Serve warm over rice or noodles; or chilled.

6 tablespoons cornstarch
3 tablespoons Chinese rice wine or dry sherry
1/3 cup oyster sauce
1 14 -ounce block firm tofu, drained
1 cup unsalted peanuts (preferably raw)
1/4 cup peanut oil or vegetable oil
2 teaspoons minced ginger
3 cloves garlic, minced
8 whole dried arbol chiles (or 2 jalapeno peppers, halved lengthwise)
Kosher salt
12 ounces shiitake mushrooms, stems removed, caps quartered
1 pound sugar snap peas, strings removed, halved crosswise

Steps:

  • Make the marinade: Whisk 2 tablespoons cornstarch, the rice wine, oyster sauce and 2 tablespoons water in a large bowl. Cut the tofu in half horizontally to make 2 large rectangles, then cut each rectangle into 4 squares. Add to the marinade and turn to coat.
  • Cook the peanuts in the peanut oil in a large skillet over medium heat, stirring, until lightly golden, 4 to 5 minutes. Remove the skillet from the heat and transfer the nuts to a bowl with a slotted spoon.
  • Drain the tofu, reserving the marinade; sprinkle both sides with the remaining 4 tablespoons cornstarch. Return the skillet to medium-high heat; add the tofu and cook until golden, 4 minutes per side. Remove to a plate. Add the ginger, garlic, chiles and 1 teaspoon salt to the skillet; stir-fry 30 seconds. Add the mushrooms and snap peas; stir-fry until crisp-tender. Whisk the marinade with 1 1/2 cups water, add to the skillet and stir until thick, 2 to 3 minutes. Add the tofu and nuts and heat through. If using dried chiles, remove before serving.
