Another Vegemite find. I love these for breakfast or just as a snack. Use a good quality tasty cheese to enjoy this snack!

4 muffins, toasted
2 tablespoons butter
1 tablespoon vegemite
2 eggs, lightly beaten
1 1/2 cups grated tasty cheese
1/2 cup chopped parsley

Steps:

  • Spread toasted muffins with butter and Vegemite.
  • Combine the eggs, cheese and parsley together and spoon onto toasted muffins.
  • Place toasted muffins under a medium griller and cook until cheese melts and bubbles. Serve immediately and enjoy.

1 breadstick
butter (to suit taste)
250 g tasty cheese, sliced thinly
1 tablespoon vegemite

Steps:

  • Cut breadstick into 3cm thick slices on the diagonal, but not all the way through.
  • Spread each cut side of bread alternately with butter then Vegemite and place in a piece of cheese. Continue until each split has Vegemite and cheese in each. Wrap in foil and bake at 180°C fan-forced for 10 minutes.
  • Unwrap the top of the foil, to expose the top of the breadstick, and return to the oven for a further 5 minutes.
  • Serve immediately.
