Raw Kale & Toasted Almond Salad image

1 medium bunch kale, finely chopped
1/2 cup sliced almonds, toasted
1/2 cup raisins
1/4 cup fresh lemon juice
2 Tbsp e.v. olive oil
1/4 tsp salt
1/4 tsp black pepper
red pepper flakes to taste (optional for spiciness)

Steps:

  • Preheat oven to 350F. Line a baking sheet with parchment or aluminum foil. Toast nuts in a single layer ~5-6 minutes or until fragrant. Cool & set aside.
  • Finely chop a bunch of Kale (you can also lightly pulse in a food processor). Place chopped Kale in a large bowl. Mix olive oil, lemon, juice, salt, and pepper together and add to Kale. Add almonds & raisins to the mix. Toss it, taste it, and add more lemon or sea salt to taste. Add crushed red peppers if you want to spice it up a bit.

1/4 cup red wine vinegar
1 tablespoon reduced-sodium soy sauce
2 garlic cloves, minced
2 teaspoons sesame oil
2 teaspoons honey
1 teaspoon minced fresh gingerroot or 1/2 teaspoon ground ginger
1/8 teaspoon Louisiana-style hot sauce
1/2 cup grapeseed or canola oil
SALAD:
2 heads Boston or Bibb lettuce, torn
1 head red leaf lettuce
1 medium sweet red pepper, julienned
2 celery ribs, sliced
1 cup sliced English cucumber
1 cup frozen peas, thawed
1 cup grape tomatoes, halved
1 cup sliced almonds, toasted

Steps:

  • In a small bowl, whisk the first 7 ingredients. Gradually whisk in grapeseed oil until blended., In a large bowl, combine lettuces, red pepper, celery, cucumber, peas and tomatoes. Just before serving, pour dressing over salad and toss to coat. Sprinkle with almonds.

I like to make up a big batch of these and keep them on-hand in an airtight container to use as a salad topper. I like to toast my almonds to a nice medium-brown, they take on a bolder flavor and really mix well in any salad.

1/3 cup sliced almonds
Kosher salt
1 3/4 cups ditalini pasta (about 10 ounces)
1/4 cup extra-virgin olive oil
1/4 cup grated parmesan cheese
2 tablespoons fresh lemon juice
1 small shallot, finely chopped
1 tablespoon fresh thyme (preferably lemon thyme), roughly chopped
Freshly ground pepper
Pinch of red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Spread the almonds on a rimmed baking sheet and bake, tossing occasionally, until golden brown, 8 to 10 minutes.
  • Meanwhile, bring a pot of salted water to a boil. Add the pasta and cook as the label directs, then drain and rinse under cold water. 4 cups torn iceberg lettuce
4 cups torn romaine

1/4 cup canola oil
