Quick way to make a really tasty carbonara-style pasta sauce. Serve over cooked pasta.

6 ounces bacon, diced
1 large onion, diced
1 tablespoon minced garlic
1 (12 ounce) jar Alfredo sauce
½ cup water
3 roma (plum) tomatoes - halved, seeded, and chopped

Steps:

  • Cook bacon in a large skillet over medium-high heat until evenly browned, about 10 minutes. Drain all but about 2 tablespoons bacon drippings from skillet. Cook and stir onion with bacon in reserved drippings until onion is translucent, 5 to 10 minutes. Add garlic; cook and stir until fragrant, 2 minutes.
  • Pour Alfredo sauce into onion-bacon mixture; rinse jar with the water and pour into skillet. Stir sauce with a wooden spoon, thoroughly scraping any brown bits of food from bottom of the skillet. Bring sauce to a simmer; add tomatoes. Simmer sauce until flavors blend, about 5 minutes.

3/4 pound pancetta or slab bacon, 1/4-inch dice
2 large eggs
2 large egg yolks
1 cup good quality freshly grated Parmigiano-Reggiano, plus additional for serving
1/4 cup roughly chopped parsley leaves
Kosher salt and freshly ground black pepper

Steps:

  • 1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and reserve about 1 cup of pasta water.
  • 2. Meanwhile, in a large skillet cook pancetta over medium heat until slightly crispy; set aside with all the drippings.
  • 3. While the pancetta is cooking, in a medium bowl, whisk the eggs and yolks with Parmigiano-Reggiano, parsley and generous amount of salt and pepper to taste. After draining the pasta, return it to the pot and add the pancetta and drippings. Working quickly, add the egg and cheese mixture stirring everything together until the noodles are coated and creamy. Add pasta water, as needed, to loosen the noodles slightly if the sauce becomes too thick. Season with additional salt and pepper, if desired. Transfer to serving bowls and serve hot with additional cheese.

good first cold press extra virgin olive oil, 1/2 inch in large saute pan (Don't skimp on oil quality!)
2 garlic cloves, minced, to taste
1 chopped onion, to taste
8 -12 slices pancetta, thick slices (Italian bacon)
4 eggs
2 (16 ounce) packages spaghetti (use your good judgement on quanity, we eat alot!..you may not!)
2 cups fresh grated parmesan cheese (Again, don't skimp on quality!) or 2 cups parmigiano-reggiano cheese (Again, don't skimp on quality!)
crushed red pepper flakes
salt & fresh ground pepper

Steps:

  • Put 1/2 inch of olive oil in sauté pan.
  • Add 2 cloves (or more) chopped garlic, onion and bacon cut into small squares.
  • Let simmer 30 minutes, don't let mixture boil!
  • During last 10 minutes of simmering add crushed red pepper flakes if using (I used 1 teaspoon).
  • In bowl, beat 4 eggs with lots of salt and fresh ground pepper.
  • Cook spaghetti until al dente.
  • Drain and immediately add egg mixture to pasta. (The pasta needs to be real hot in order for the eggs to cook).
  • Stir until eggs are cooked.
  • Mix into sauté pan and finish with the grated cheese.
  • ENJOY!

1 garlic, crushed
4 slices prosciutto
2 eggs
300 ml cream
salt and pepper
1/2 cup parmesan cheese
500 g pasta

Steps:

  • Sauté onion, garlic and prosciutto.
  • Mix cream, eggs and S&P together.
  • Mix all together and bring to boil. Add parmesan and stir until melted.
  • Mix in cooked pasta and serve with parmesan.

5 slices bacon

1 cup milk

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes, adding peas in the last minute of cooking. Drain and keep warm in a bowl.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to paper towels, reserving 1 tablespoon of drippings in the skillet.
  • Add garlic to the skillet; saute for 1 minute. Reduce heat to low and stir in milk and cream cheese until blended.
  • Crumble bacon and add to the linguine along with sauce and Parmesan cheese; stir to coat.

1 chicken bouillon
1/2 cup butter
1/2 cup water
1/4 cup flour
2 cups cream
1/2 cup sour cream
1/4 cup white wine
3 minced garlic cloves
1 large tbsps pesto sauce
1/2 cup grated parmesan cheese or 1/2 cup asiago cheese
1 teaspoon pepper
1/2 teaspoon salt

Steps:

  • in a saucepan over low-medium heat mix first 3 ingredients together until butter is melted. Next start adding ingredients in the order they appear.
