1 box instant vanilla pudding
1 cup of whipping cream or milk
1/2 cup Amaretto
1/4 cup Kahlua
4 ounces Cool Whip
Ground cinnamon

Steps:

  • Place the pudding, the whipping cream and alcohol in a large bowl. Mix, blend and whip using a hand held blender until the pudding is thickened. Carefully fold the cool whip into pudding. Fill the shot cups, sprinkle each with ground cinnamon, cover and place in the fridge until ready to use (at least 4 hours will help them set up). If your pudding is slightly runny, you can hold these in the freezer for an hour or so before serving if needed.

1 3.5 oz box instant chocolate pudding
3/4 cup milk
1/4 cup coffee
1/4 cup coffee liqueur
1 cup whipped topping (Cool Whip)
1 3.5 oz box instant white chocolate pudding
1 cup milk
1/4 cup vodka
1 cup whipped topping (Cool Whip)

Steps:

  • In a bowl, beat together pudding mix, milk, coffee and Kahlua Liqueur until combined with an electric mixer until combined. Slowly fold in whipped topping. Set pudding aside.
  • In a second bowl, beat together white chocolate pudding, milk, and vodka. Fold in whipped topping.
  • Place pudding in separate zip-top baggies and snip one corner.
  • Carefully pipe chocolate pudding into 12 shot glasses.
  • Top with white chocolate pudding.
  • Garnish with shaved chocolate and Pirouette Cookie halves.
  • Refrigerate until ready to serve or at least one hour.

1 box Jello vanilla pudding
4 oz Whipped Cream
Cocoa powder

Steps:

This is not authentic, but it is a fast, easy to make and very tasty version of Venice's favorite cheesecake. It comes from the Magic of Jell-O. The name means "pick me up". Also try substituting vanilla wafers for the lady fingers. If you do, reduce the coffee to 1/2 cup because the wafers won't absorb the liquid as well.

1 (6 ounce) package instant vanilla pudding or 1 (6 ounce) package vegetarian instant vanilla pudding mix
8 ounces cream cheese, softened or 8 ounces mascarpone cheese
1/4 cup dark rum or 1/4 cup coffee liqueur
1 cup brewed espresso, cooled or 1 cup strong coffee
1 tablespoon sugar
1 (7 ounce) package ladyfingers
1 1/2 cups whipped topping, thawed
4 ounces baker semisweet baking chocolate, coarsely grated

Steps:

  • Prepare pudding according to box direction.
  • Add cheese and coffee liqueur and beat until smooth.
  • Cover with plastic wrap and chill 1 hour.
  • Fold in whipped topping.
  • In a small shallow dish, stir sugar into coffee and dip each ladyfinger in for only 4-5 seconds (letting them soak too long will make them fall apart).
  • Line bottom of 8 cup trifle bowl with 1/2 of the lady fingers, spread 1/2 of pudding mixture over cookies and sprinkle with 1/2 of the chocolate; repeat layers.
  • Cover tightly and chill for 4 hours or overnight.
