1 tablespoon butter, melted
1/3 cup chocolate graham cracker crumbs (about 2 whole crackers)
2 tablespoons plus 2 teaspoons instant coffee granules
1 tablespoon hot water
1/3 cup strong brewed coffee
1 teaspoon rum extract
1 package (3 ounces) ladyfingers, split
4 packages (8 ounces each) cream cheese, softened
1-1/3 cups sugar
1/3 cup heavy whipping cream
1/3 cup sour cream
2 teaspoons vanilla extract
4 eggs, room temperature, lightly beaten
Baking cocoa

Steps:

  • Preheat oven to 325°. Brush bottom of a 9-in. springform pan with butter; sprinkle evenly with cracker crumbs. Securely wrap a double thickness of heavy-duty foil (about 18 in. square) under and around pan. , Dissolve coffee granules in hot water; cool and set aside. Combine brewed coffee and rum extract; brush over flat sides of split ladyfingers. Arrange ladyfingers, rounded sides out, along sides of prepared pan., Beat cream cheese and sugar until smooth. Beat in cream, sour cream, vanilla and reserved dissolved coffee. Add eggs; beat on low speed just until combined. Pour into prepared pan. Place springform pan in a larger baking pan; add 1 in. hot water to larger pan., Bake until center is just set and top appears dull, 70-80 minutes. Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack 10 minutes; loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., Remove rim from pan. Just before serving, dust cheesecake with cocoa.

1 package (12 ounces) vanilla wafers
5 teaspoons instant coffee granules, divided
3 tablespoons hot water, divided
4 packages (8 ounces each) cream cheese, softened

4 large eggs, room temperature, lightly beaten
1 cup whipped topping
1 tablespoon baking cocoa

Steps:

  • Preheat oven to 325°. Layer half of the wafers in a greased 13x9-in. baking dish. In a small bowl, dissolve 2 teaspoons coffee granules in 2 tablespoons hot water; brush 1 tablespoon mixture over wafers. Set remaining mixture aside., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream. Add eggs; beat on low speed just until blended. Remove half of the filling to another bowl. Dissolve the remaining 3 teaspoons coffee granules in the remaining 1 tablespoon hot water; stir into 1 portion of filling. Spread over wafers., Layer remaining wafers over top; brush with reserved coffee mixture. Spread with remaining filling., Bake 40-45 minutes or until center is almost set. Cool on a wire rack 10 minutes. Loosen sides from dish with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., To serve, spread with whipped topping. 1 pouch Betty Crocker™ oatmeal cookie mix
1/2 cup butter or margarine, softened
8 oz mascarpone cheese
1 package (8 oz) cream cheese, softened
1/2 cup sugar
2 tablespoons Gold Medal™ all-purpose flour
1 egg
1/2 cup canned pumpkin (not pumpkin pie mix)
1/2 teaspoon pumpkin pie spice
1/4 cup melted semisweet chocolate chips
2 tablespoons cognac
1 tablespoon instant espresso powder
1/3 cup heavy whipping cream
2/3 cup semisweet chocolate chips
Whipped cream, if desired

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with foil; spray with cooking spray. In medium bowl, place cookie mix; cut in butter using pastry blender or fork until mixture is crumbly. Press mixture in bottom of pan. Bake 8 to 10 minutes or until set.
  • Meanwhile, in large bowl, beat mascarpone, cream cheese, sugar, flour and egg with electric mixer on medium speed until smooth. Remove 3/4 cup of the cheesecake mixture, and place in small bowl; set aside. Stir pumpkin and pumpkin pie spice into original bowl of remaining cheesecake mixture. Stir melted chocolate, cognac and espresso powder into reserved 3/4 cup cheesecake mixture.
  • Pour pumpkin cheesecake mixture on top of crust. Spoon chocolate cheesecake mixture over pumpkin mixture; use knife to carefully swirl mixtures.
  • Bake 30 to 35 minutes or until edges are set (center will be just slightly jiggly). Cool 30 minutes.
  • In microwavable bowl, microwave heavy whipping cream 1 minute to 1 minute 30 seconds or until hot. Add 2/3 cup chocolate chips; stir until smooth. Spread mixture on top of cheesecake.
  • Refrigerate about 4 hours or until completely cool. Cut into bars to serve. Top each bar with a dollop of whipped cream just before serving.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a 9x13-inch pan with aluminum foil, making sure to cover the sides and leaving several inches of aluminum foil on each end.
  • Mix graham crackers and butter in a bowl until crackers are moist; pat down into the prepared pan.
  • Bake in preheated oven until firm, about 12 minutes. Set aside to cool.

1 cup coffee
16 oz cream cheese
16 oz mascarpone cheese
1 tablespoon vanilla extract
1 cup milk, hot
½ cup sugar
4 teaspoons gelatin

Steps:

  • Dip the ladyfingers in coffee.
  • In two spring form pans lined with parchment paper, layer the coffee-dipped lady fingers in a single layer.
  • Freeze until the ladyfingers are frozen.
  • In a bowl, add the cream cheese, mascarpone cheese, and vanilla extract. Stir to combine.
  • Add the milk, sugar, and gelatin to a bowl and whisk until the gelatin has dissolved.
  • Pour the milk mixture through a sieve into the bowl of cream cheese.
  • Pour 1 cup (290 g) of cheesecake batter into a springform pan. Refrigerate until firm, about 2 hours

Easy to transport and serve, this is a great dessert to take to a party. Everyone loves tiramisu and everyone loves cheesecake so it's a winner all round

300g pack dark chocolate digestives
80g butter , melted
500g milk chocolate , the best quality you can find, finely chopped
300ml double cream
100ml Tia Maria
300g cream cheese
200ml double cream
1 tsp vanilla extract
1 orange , zested
50g icing sugar
cocoa powder and crushed coffee beans, to serve

Steps:

  • Line the base of a 23cm springform cake tin with baking parchment. Crush the biscuits as finely as possible in a food bag using a rolling pin, or in a food processor, and mix with the melted butter. Tip into the tin, pressing down to flatten and set aside in the fridge.
  • For the chocolate layer, tip the chocolate, cream and Tia Maria into a bowl and melt over a pan of simmering water. Once melted, quickly stir together and pour over the biscuit base, then chill in the fridge for at least 3 hrs, or until set.
  • When the chocolate layer is set, beat the cream cheese, double cream, vanilla, orange and sugar together, then spread and swirl the mix evenly over the chocolate layer. Put the cake back in the fridge for a couple of hours or overnight. Can be made up to two days in advance and kept covered in the fridge.
  • To serve, remove from the fridge, sieve over the cocoa powder and sprinkle over the crushed coffee beans. Run a knife around the edge of the cheesecake and release from the tin and serve. For a neater finish, blowtorch the outside of the tin to release the sides.

Nonstick cooking spray, for the springform pan
2 tablespoons instant espresso powder
2 tablespoons dark rum
2/3 cup boiling water
36 ladyfinger cookies
1/4 cup unsweetened cocoa powder, plus more for dusting
24 ounces whole-milk ricotta
Two 8-ounce containers mascarpone, plus more for decorating
1 1/4 cups granulated sugar
5 large eggs

Steps:

  • Preheat the oven to 325 degrees F. Lightly spray a 9-inch springform pan with nonstick cooking spray and wrap the bottom in aluminum foil.
  • Combine the espresso powder and rum in a medium heat-safe bowl; stir in the boiling water until the espresso is dissolved.
  • One at a time, dip 20 of the ladyfingers quickly into the espresso mixture. Line the bottom of the prepared pan with them, pressing them down firmly to fit as they soften. Sprinkle with the cocoa powder; set aside.
  • Add the ricotta, mascarpone and sugar to the bowl of a food processor and pulse until just combined. Add the eggs one at a time, pulsing after each addition to combine; do not overmix.
  • Pour the mixture into the pan over the ladyfingers and place the pan on a baking sheet. Bake until the cheesecake is golden and puffed around the edges, 1 hour and 15 minutes to 1 hour 30 minutes (the edges should be set and the center slightly jiggly). Let cool to room temperature.
  • Unmold the cheesecake from the pan and dust with cocoa. Spread some mascarpone around the sides with an offset spatula. Cut the remaining ladyfingers in half and press them into the sides of the cake, curved-end up.

This is no regular tiramisu-it boasts the best aspects from both strawberry cheesecake and the classic ladyfinger dessert. Swapping zingy limoncello in for traditional rum and opting for a no-bake cheesecake filling makes this a perfect summer mashup dessert.

1 cup limoncello
1 1/3 cups granulated sugar
16 ounces strawberries, hulled
3/4 cup heavy cream
Three 8-ounce packages cream cheese, at room temperature
Zest and juice of 1 large lemon (about 2 teaspoons zest and 1/4 cup juice)
2 tablespoons sour cream
1 teaspoon pure vanilla extract
36 to 40 ladyfingers (about 13 1/2 ounces)
1/4 cup strawberry jam

Steps:

  • Combine the limoncello and 1/3 cup of the sugar in a large bowl. Chop 12 ounces of strawberries (about 10 strawberries) into 1/2-inch chunks (you should have about 2 cups chopped) and add to the limoncello. Stir to combine and set aside to macerate while you make the cheesecake filling.
  • Whip the heavy cream in a medium bowl with a handheld electric mixer on medium-high speed until fluffy peaks form, 1 to 2 minutes; set aside.
  • Beat the cream cheese, lemon zest, lemon juice, sour cream, vanilla and the remaining 1 cup sugar in a large bowl with the electric mixer on medium-high speed until smooth and creamy, 2 to 3 minutes. Gently fold in the whipped cream with a large rubber spatula.
  • Strain the limoncello into a medium bowl (you will need this to soak the ladyfingers) and fold the strawberries into the cream cheese mixture.
  • Working quickly, gently dip the ladyfingers into the limoncello for 1 second on each side, then stand them around the ring of an 8-inch springform pan. Layer the ladyfingers on the bottom of the pan, cutting the cookies as needed to make one even layer. Spoon 1/3 of the cheesecake mixture on top and spread with an offset spatula. Repeat two more times with another layer of limoncello-dipped ladyfingers and 1/3 of the cheesecake mixture to make 3 layers total.
  • Thinly slice the remaining 4 ounces of strawberries and decorate the top of the cake. Microwave the jam in a glass measuring cup until it is warmed and melted, 15 to 30 seconds. Brush the berries with the jam to glaze them. Refrigerate until the cheesecake is firm to the touch and the ladyfingers are softened, 6 hours and up to overnight.
  • Loosen the clasps of the pan to release the pan ring before slicing and serving.

1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
2 tablespoons Gold Medal® all-purpose flour
1/3 cup butter or margarine, softened
1 egg, slightly beaten
Filling
2 packages (8 oz each) cream cheese, softened
1 can (14 oz) sweetened condensed milk (not evaporated)
1 tablespoon instant coffee granules or crystals
2 teaspoons vanilla
2 eggs
1 cup miniature semisweet chocolate chips
Topping
6 oz cream cheese, softened
1/2 cup whipping cream
Chocolate curls, if desired

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13×9-inch pan with cooking spray. In large bowl, stir cookie base ingredients until soft dough forms. Press dough in bottom of pan. Bake 15 to 18 minutes or until light golden brown. Cool 15 minutes. Meanwhile, in another large bowl, beat 2 packages (8 oz each) cream cheese with electric mixer on medium speed until smooth. Add milk; beat until well blended. Add coffee, vanilla and eggs; beat until well blended. Stir in chocolate chips. Pour over cookie base. Bake 35 to 40 minutes or until set. Cool at room temperature 30 minutes. Refrigerate 30 minutes to cool completely. In small bowl, beat 6 oz cream cheese on medium speed until smooth. Gradually beat in whipping cream; beat about 2 minutes longer or until fluffy. Spread mixture over cooled bars. Sprinkle chocolate curls over topping. Refrigerate about 2 hours or until chilled. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

2 tbsp .flour
1/3 cup butter or margarine softened
1 egg, slightly beaten
2 pkg. cream cheese, 8 oz. each
1 can sweetened condensed milk, 14 oz
1 tbsp. instant coffee
2 tsp. vanilla extract
2 eggs
1 cup miniature semisweet chocolate chips
6 oz. cream cheese, softened
1/2 cup whipping cream
chocolate curls, optional

Steps:

  • 1. Preheat oven to 350. Coat a 13 x 9 inch pan with cooking spray. to make the base, mix ingredients and stir til soft dough forms. Press into bottom of pan and bake for 15 to 18 minutes or til light golden brown. Let cool
  • 2. To make filling, in another bowl, beat cream cheese til smooth. Add condensed milk; beat til blended. Beat in coffee, vanilla, and eggs. Stir in chocolate chips. Pour over cookie base. Bake for 35 to 40 minutes or til set. Let cool for 30 minutes. Refrigerate for 30 minutes to cool completely.
  • 3. To make topping, beat cream cheese on medium speed til smooth. Gradually beat in whipping cream; beat 2 minutes longer, or til fluffy. Spread over cooled bars. Refrigerate for 2 hours. Garnish with chocolate curls. Makes 36 bars.

4 tablespoons dark rum, divided
4 tablespoons coffee liqueur, divided
1 package (7 ounces) crisp ladyfinger cookies, divided
1 carton (8 ounces) whipped cream cheese
1 carton (8 ounces) mascarpone cheese
1/2 cup sugar
1 cup heavy whipping cream, whipped
2 teaspoons baking cocoa, divided
3/4 cup toffee bits

Steps:

  • Cool espresso to room temperature. In a shallow bowl, combine the espresso, 2 tablespoons rum and 2 tablespoons liqueur. Quickly dip 12 cookies in half of the espresso mixture. Arrange in an ungreased 11x7-in. dish., In a large bowl, combine the cream cheese, mascarpone cheese, sugar, remaining rum and liqueur. Fold a fourth of whipped cream into the cream cheese mixture, then fold in remaining whipped cream., Spoon half of cream cheese mixture over ladyfingers; spread evenly. Dust with 1 teaspoon cocoa. Dip remaining cookies; repeat layers. Sprinkle with toffee bits. Cover and refrigerate for at least 4 hours or overnight.

1/3 cup butter or margarine, melted
2 tablespoons whipping cream
2 tablespoon instant espresso coffee granules
3 packages (8 oz each) cream cheese, softened
3/4 cup sugar
3 eggs
1 oz bittersweet baking chocolate, grated
Chocolate-covered espresso beans, if desired

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with foil; spray with cooking spray. In small bowl, mix crushed cookies and melted butter with fork. Press mixture in bottom of pan. Refrigerate while continuing with recipe.
  • In small bowl, mix whipping cream and coffee granules with fork until coffee is dissolved; set aside.
  • In large bowl, beat cream cheese with electric mixer on medium speed 2 to 3 minutes, scraping bowl occasionally, until smooth and creamy. On low speed, beat in sugar, eggs and coffee mixture, about 30 seconds. Beat on medium speed about 2 minutes longer or until ingredients are well blended. Using rubber spatula, spread cream cheese filling over crust. Bake 25 to 35 minutes or until center is set.
  • Cool 30 minutes. Sprinkle with grated chocolate or top with espresso beans. Refrigerate about 1 hour or until completely chilled. For servings, cut into 6 rows by 4 rows, using sharp knife dipped in water.

This is an adapatation of my Tiramisu Cheesecake, recipe #161274. My friend and I have been waiting to try this recipe and thought they would be great as cupcakes... and they are! Use gold or silver double-lined paper baking cups, as the regular ones get kind of soggy. Don't be intimidated by the steps! It may look long, but it's a lot easier than it looks! Prep time does not include cooling and refrigeration.

60 vanilla wafers
5 teaspoons instant coffee, divided
3 tablespoons hot water, divided
4 (8 ounce) packages cream cheese, softened
1 cup granulated sugar
1 (8 ounce) container sour cream
1 teaspoon pure vanilla extract
4 eggs
1 (8 ounce) container Cool Whip, thawed
2 tablespoons unsweetened cocoa powder

Steps:

  • Preheat oven to 325°. Line 30 cupcake tins with paper baking cups. Place one vanilla wafer in the bottom of each cup.
  • In a large bowl, beat cream cheese and sugar on medium speed until well blended, scraping frequently. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each addition, just until blended.
  • In a small bowl, dissolve 3 t. coffee granules in 1 Tbspp hot water. Remove 3 1/2 cups of cheesecake batter; place in medium bowl. Stir in dissolved coffee.
  • In a small bowl, dissolve remaining 2 tsp coffee granules in remaining 2 Tbsp hot water.
  • Lightly brush each vanilla wafer, just enough to moisten the entire cookie.
  • Evenly divide coffee-flavored batter over wafers. Repeat wafer layering and brushing of coffee mixture (step 5).
  • Evenly divide remaining plain batter over wafers. Bake 25-30 minutes, until edges are slightly puffed.
  • Cool to room temperature. Spoon or pipe Cool Whip over each cheesecake. Dust each cheesecake with cocoa powder. Refrigerate for at least 3 hours.
  • Store cheesecake in refrigerator.

  • Preheat oven to 325 degrees. Line a 13x9x2" pan with foil, with ends of foil extending over sides of pan.
  • Layer half of the wafers (44) on bottom of prepared pan.
  • In a small bowl, dissolve 2 t. coffee granules in 2 T. hot water. Brush wafers with half of the dissolved coffee mixture; set remaining aside.
  • In a large bowl, beat cream cheese and sugar on medium speed until well blended.
  • Add sour cream; mix well.
  • Add eggs, 1 at a time, mixing on low speed after each addition just until blended.
  • Dissolve remaining 3 t. coffee granules in remaining 1 T. hot water.
  • Remove 3 1/2 cups of batter; place in medium bowl. Stir in dissolved coffee.
  • Pour coffee-flavored batter over wafers in baking pan. Layer remaining wafers over batter. Brush wafers with reserved dissolved coffee. Pour remaining plain batter over wafers.
  • Bake 45 minutes or until center is almost set. Cool to room temperature. Refrigerate 3 hours or overnight. Lift cheesecake from pan, using foil handles. Spread with whipped topping; dust with cocoa.
  • Store leftover cheesecake in refrigerator.
