¼ cup orange juice
¼ cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
½ teaspoon chopped fresh oregano
½ teaspoon ground black pepper
4 (4 ounce) tuna steaks

Steps:

  • In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

4 (6 ounce) yellowfin tuna steaks
½ cup vegetable oil
⅓ cup soy sauce
¼ cup fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon grated lemon peel
1 clove garlic, crushed
4 wedges lemon, for garnish

Steps:

  • Prick tuna steaks all over with a fork and place in shallow glass dish.
  • Whisk oil, soy sauce, lemon juice, Dijon mustard, lemon peel, and garlic together in a bowl; pour over the tuna steaks. Cover dish with plastic wrap and refrigerate 1 to 3 hours.
  • Preheat grill for medium heat and lightly oil the grate.
  • Remove tuna from the marinade. Shake excess moisture from the steaks.
  • Pour the marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and cook marinade at a simmer for 10 minutes.
  • Cook tuna on preheated grill, basting with boiled marinade, until cooked through, 5 to 6 minutes per side. Serve with lemon wedges.

2-4 tuna steaks
⅓ cup olive oil
1 tablespoon honey
1 tablespoon minced garlic
1 tablespoon finely chopped cilantro
1 tablespoon finely chopped parsley
1 teaspoon salt
½ teaspoon cumin
½ teaspoon coarsely cracked black pepper (or ¼ teaspoon ground pepper)
½ teaspoon smoked paprika
juice of half a lemon (about 2 tablespoons)

Steps:

  • Combine all of the marinade ingredients and whisk vigorously.
  • Place tuna steaks in a gallon ziploc bag. Add the marinade, toss to coat the tuna steaks, press out excess air and seal (if using ziploc bag).
  • Transfer to the fridge and chill for 30 minutes.
  • Grill 6-8 minutes on each side until easily flaked with a fork and center of tuna steak is just barely pink. Internal temperature should read 90-95 degrees when done. Alternately, steaks can be seared in a skillet over medium-high heat, or broiled in the oven at 400 degrees.

2 tablespoons lemon juice
2 tablespoons vegetable oil; more for brushing pan
1 garlic clove, minced
1/2 teaspoon sugar

4 6-ounce tuna steaks, 3/4 to 1 inch thick (see note)

Steps:

  • In a large plastic bag combine soy sauce, lemon juice, 2 tablespoons vegetable oil, garlic, sugar, pepper and salt. Add tuna steaks, coating well with marinade. Seal bag, and refrigerate at least 30 minutes, and up to 2 hours.

1 1/2 lb tuna steaks, 3/4 to 1 inch thick
1/4 cup lime juice
2 tablespoons olive or vegetable oil
2 teaspoons finely chopped gingerroot

2 cloves garlic, crushed
Lime wedges, if desired

Steps:

  • If fish steaks are large, cut into 6 serving pieces. In shallow glass or plastic dish or resealable food-storage plastic bag, mix remaining ingredients except lime wedges. Add fish; turn to coat. 2 garlic cloves
1 1/2 cups loosely packed fresh mint leaves
1 cup loosely packed fresh flat-leaf parsley
3 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1/4 to 1/3 cup extra-virgin olive oil
Coarse salt
6 tuna steaks (1/2 inch thick), cut from the narrow end of the loin

Steps:

  • Coarsely chop garlic. Scatter mint and parsley over garlic, and continue to chop until mixture is minced together. Transfer mixture to a small bowl; stir in lemon juice and vinegar. Stir in oil to form a slightly thick paste; set aside.
  • Heat a large skillet over high heat; generously scatter salt in bottom. Add fish to skillet. Cook, turning once, until fish is opaque and just cooked through, 2 to 3 minutes per side.
  • Transfer the fish to a serving platter; spoon mint sauce on top. Serve with more sauce on the side.

TIM'S MARINATED TUNA STEAKS

1 pound Tuna steak(s) - at LEAST 1" thick. 1-1/4 to 1-1/2 is better.
1/2 teaspoon Salt
1/4 cup Soy sauce
3 tablespoons Red wine vinegar
1 clove Garlic - pressed
1 tablespoon Hoisin sauce
1 tablespoon Paprika
2 teaspoons Garlic powder
1 teaspoon Cumin
1 teaspoon Cinnamon
1 tablespoon Honey
2 teaspoons Sesame oil

Steps:

  • Trim any dark areas from the tuna steaks and sprinkle both sides with salt.
  • Prepare the marinade. In a small bowl, add soy sauce, vinegar, honey, garlic, hoisin sauce and sesame oil. Stir or whisk thoroughly to combine.
  • Put tuna steaks in a ziplok bag and add marinade. Squeeze out all the air in the bag and massage the marinade all over and between the steaks. Store in refrigerator for at least 30 and no more than 60 minutes prior to cooking.
  • Remove tuna steaks from refrigerator about 15 minutes prior to cooking. Put the steaks on a plate and discard the marinade.
  • Combine paprika, garlic powder, cumin and cinnamon in a small bowl and mix thoroughly.
  • Sprinkle the dry spices evenly over both sides of the tuna steaks. Use your fingers to rub the spices into the steaks.
  • Prepare a charcoal grill with a good bed of hot coals. Lump charcoal is NOT suggested. Briquets are better for this.
  • Put steaks on a clean, preheated grill and cover. 2 minutes for the first side. 1-1/2 minutes for the second side.
