ROASTED POTATO-WRAPPED TILAPIA

This is a recipe that I found in a newspaper that I tweaked to my liking. I served it with a side of green beans. It was just yummy!

Number Of Ingredients 6

1 Tbsp canla oil
2 medium potatoes (peeled and thinly sliced)
1 Tbsp dijon mustard
1 Tbsp mayonnaise
salt, pepper, dried thyme to taste
2 haddoc fillts (or any white fish of your choice)

Steps:

  • 1. Heat oven to 400 degrees. Add oil to a skillet and place in the oven to heat up.
  • 2. Peel and slice the potatoes very thin. Set aside.
  • 3. In a small bowl mix the mustard and mayonnaise. Set aside.
  • 4. Remove the skillet from the oven and carefully cover the bottom with a single layer of potatoes, overlapping the edges slightly. Season with salt, pepper and thyme.
  • 5. Pat dry the Tilapia and then brush the top and bottom with the mustard & mayonnaise mixture.
  • 6. Place the Tilapia over the potatoes in the skillet, then arrange a second layer of potatoes over the fish, covering it entirely. Season with salt, pepper and thyme, then mist with cooking spray.
  • 7. Place the skillet back into the oven and bake for 14 minutes. Increase the oven to broil and cook for another 2 or 3 minutes or until the potatoes are nicely browned. Let sit for a few minutes before serving.

Baked Tilapia With Tomatoes and Potatoes image

1 1/4 pounds new potatoes, cut into 1/2-inch pieces
2 tablespoons extra-virgin olive oil
3 teaspoons chopped fresh thyme
Kosher salt and freshly ground pepper
Cooking spray
2 cups cherry tomatoes
1/4 cup pitted kalamata olives
2 tablespoons capers, drained
3 cloves garlic, smashed
1/4 cup white balsamic vinegar or white wine vinegar
4 6-ounce tilapia fillets

Steps:

  • Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
  • Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
  • Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish. Place the fish on top of the roasted tomato mixture and return to the oven until just cooked through, about 10 minutes. Divide among plates and serve with the potatoes.

1/2 lb fresh asparagus spears, cut in half
2 small zucchini, halved lengthwise, cut into 1/2-inch pieces
1 red bell pepper, cut into 1/2-inch strips
1 large onion, cut into 1/2-inch wedges, separated
2 tablespoons olive oil
2 teaspoons Montreal steak seasoning
4 tilapia fillets (about 1 1/2 lb)
1 tablespoon butter or margarine, melted
1/2 teaspoon paprika

Steps:

  • Heat oven to 450°F. In large bowl, mix asparagus, zucchini, bell pepper, onion and oil. Sprinkle with 1 teaspoon of the steak seasoning; toss to coat. Spread vegetables in ungreased 15x10x1-inch pan. Place on lower oven rack in oven; bake 5 minutes.
  • Meanwhile, spray 13x9-inch (3-quart) glass baking dish with cooking spray. Pat tilapia fillets dry with paper towels. Brush with butter; sprinkle with remaining 1 teaspoon steak seasoning and paprika. Place in baking dish.
  • Place baking dish on middle oven rack in oven. Bake fish and vegetables 17 to 18 minutes longer or until fish flakes easily with fork and vegetables are tender.

1 lb baby potatoes, about 12, cut in half
1 lemon, thinly sliced
8 sprigs fresh thyme
2 tablespoons olive oil
1 teaspoon olive oil
kosher salt and black pepper
1/2 cup kalamata olive, halved
24 ounces skinless tilapia fillets
1/2 teaspoon paprika

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • On a large rimmed baking sheet, toss the potatoes, lemon, thyme, 2 tablespoons olive oil and 1/4 teaspoon salt and pepper.
  • Arrange in a single layer.
  • Roast, tossing once until the potatoes begin to soften about 20 minutes.

A wonderful recipe for tilapia with roasted sweet potatoes, red bell pepper and onion. This recipe is quick and easy to prepare - just chop, toss, and bake. Very healthy and fresh, too! From Mom's kitchen via the Moosewood Restaurant Simple Suppers cookbook.

2 lbs sweet potatoes, about 2 large
1 large onion
1 large red bell pepper
3 tablespoons olive oil
1 teaspoon dried thyme
1 tablespoon Old Bay Seasoning
24 ounces tilapia fillets
1 tablespoon olive oil
2 tablespoons lemon juice
2 garlic cloves, minced
1 tablespoon Old Bay Seasoning

Steps:

  • Preheat oven to 450°F.
  • Peel sweet potatoes and cut in half lengthwise, then slice 1/3" thick.
  • Cut large onion into 1/2" slices.
  • Stem and seed large red pepper, cut into 1 1/2" chunks.
  • Toss vegetables with 3 T. olive oil, thyme, and 1 T. Old Bay seasoning. Place on oiled baking sheet. Bake 25-30 minutes or until vegetables are tender and brown, stirring halfway through.
  • Place fish in single layer on another oiled baking sheet. Whisk 1 T. olive oil, lemon juice, garlic cloves and 1 T. Old Bay seasoning. Drizzle over fish.
  • When vegetables have roasted about 15 minutes, stir vegetables and put the pan of fish in the oven. Bake until fish flakes easily - about 10 minutes per inch of thickness.
