CRISPY DILL TILAPIA
Every week I try to serve a new healthy fish. With its fresh dill and delicious panko bread crumb herb crust, this dish with mild tilapia is a winner. -Tamara Huron, New Market, Alabama

Steps:
- Preheat oven to 400°. Toss together first 5 ingredients., Place tilapia in a 15x10x1-in. baking pan coated with cooking spray; brush with lemon juice. Top with crumb mixture, patting to help adhere., Bake, uncovered, on an upper oven rack until fish just begins to flake easily with a fork, 12-15 minutes. Serve with lemon wedges.

HUDSON'S BAKED TILAPIA WITH DILL SAUCE
Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Season the tilapia fillets with salt, pepper and Cajun seasoning on both sides. Arrange the seasoned fillets in a single layer in the baking dish. Place a layer of lemon slices over the fish fillets. I usually use about 2 slices on each piece so that it covers most of the surface of the fish.
- Bake uncovered for 15 to 20 minutes in the preheated oven, or until fish flakes easily with a fork.
- While the fish is baking, mix together the mayonnaise, sour cream, garlic powder, lemon juice and dill in a small bowl. Serve with tilapia.

Steps:
- Combine olive oil, paprika, garlic powder, salt, and black pepper in a small bowl; stir well. Brush oil mixture evenly over tilapia fillets.
- Heat a large nonstick grill pan over medium-high heat; grease with cooking spray. Grill fish until it flakes easily with a fork, about 4 minutes per side.

Steps:
- Preheat oven to 350 degrees.
- Line a shallow baking pan with aluminum foil and lightly mist with olive oil.
- Rinse fish and pat dry with paper towels.
- Place the fish on baking sheet; mix spices together in a small bowl and sprinkle over fish rubbing in lightly.
- Mist lightly with olive oil and place in preheated oven.
- Bake for 10 to 12 minutes or until fish flakes easily when tested with a fork.
- Serve with lemon quarters to squeeze over the fish.

LEMON DILL TILAPIA
Easy and elegant last minute dinner. If you do not like tilapia, use whichever fish is your favorite.

Steps:
- Heat oven to 325°F.
- Juice 1/2 of the lemon, and cut the other half into thin slices.
- Place fillets in a glass baking dish. Season with salt and pepper.
- Top each fillet with 1 tablespoon butter.
- Sprinkle lemon juice and dill on top of each fillet.
- Spread lemon slices over top.
- Bake for 10-15 minutes.
