This almond crusted baked tilapia is super easy and super flavorful. A delicious, easy and healthy meal that's perfect for weeknights!

4 tilapia fillets (about 5-6 ounces each)
¼ cup butter (melted)
1 ½ teaspoons garlic powder
¼ cup finely chopped almonds*
¼ cup grated Parmesan cheese
Salt and pepper (to taste)
Optional garnish: lemon wedges and fresh herbs (such as parsley, basil, or thyme)

Steps:

  • Preheat oven to BROIL.
  • Spray a large, rimmed baking sheet with cooking spray. Set aside.
  • Combine almonds and Parmesan cheese in a small bowl and set aside.
  • Combine melted butter and garlic powder in a small bowl. Brush the butter mixture on both sides of the fish.
  • Place the fish on the prepared baking sheet, bottom side UP, and broil for 4 minutes.
  • Flip the fish over, sprinkle with Parmesan cheese and almonds, and return to the broiler for about 3-5 more minutes, or until topping is golden brown and the fish flakes easily with a fork.
  • Garnish with lemon wedges and herbs.
  • *I use my Cuisinart Mini Prep Food Processor to chop the raw almonds in about 30 seconds!

1 large egg
1/4 cup Louisiana-style hot sauce
3/4 cup slivered almonds, chopped and toasted
1/3 cup panko bread crumbs
1 teaspoon grated lemon zest
1 teaspoon seafood seasoning
1/4 teaspoon garlic powder
4 tilapia fillets (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°. Whisk together egg and hot sauce in a shallow bowl. In a separate shallow bowl, toss almonds, bread crumbs, lemon zest and seasonings., Halve fillets lengthwise; sprinkle with salt and pepper. Dip in egg mixture, then in almond mixture, patting to adhere; place on a greased or parchment-lined baking sheet. Bake until lightly browned and fish just begins to flake easily with a fork, 12-15 minutes.

I made this with concerns of getting more Calcium into my diet. Almonds have 80 mg per 1 ounce. The almonds toasted up so nice giving this dish great flavor.

2 tilapia fillets
1/4 cup flour
1 egg, lightly beaten
1 cup sliced almonds
salt
pepper
Old Bay Seasoning
1 lemon
2 tablespoons butter
1 tablespoon olive oil
2 scallions, sliced

Steps:

  • Season tilapia with salt, pepper and old bay.
  • Dust with flour then dip into egg.
  • Press almond slices into the fish.
  • Heat butter and oil in an oven proof pan.
  • Carefully (so not to lose any almonds) place fillets into hot pan brown for 1 minute and flip gentle (again so not to lose any almonds) squeeze half of the lemon on the fish and place in a preheated 350 degree oven for 10-15 minutes.
  • Remove gently to a platter squeeze remaining lemon.
  • Garnish with scallions and serve.

3 cloves garlic, minced
½ cup grated Parmesan cheese
¼ cup buttery spread (such as Smart Balance®), softened
¼ cup slivered almonds, crushed
3 tablespoons reduced-fat olive oil mayonnaise
2 tablespoons bread crumbs
2 tablespoons fresh lemon juice
1 teaspoon seafood seasoning (such as Old Bay®)
¼ teaspoon dried basil
¼ teaspoon ground black pepper
⅛ teaspoon onion powder

1 pound tilapia fillets

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a broiling pan with aluminum foil or spray with olive oil cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant, 3 to 5 minutes.
  • Mix Parmesan cheese, garlic, buttery spread, almonds, mayonnaise, bread crumbs, lemon juice, seafood seasoning, basil, black pepper, onion powder, and celery salt together in a bowl.

3/4 cup dry breadcrumbs, unseasoned
3/4 cup almonds, finely chopped
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 cup buttermilk
1/2 cup flour
4 (6 ounce) tilapia fillets or 4 (6 ounce) red snapper
2 tablespoons oil
4 lemon wedges

Steps:

  • Combine bread crumbs, almonds, salt, garlic powder and black pepper in a shallow dish.
  • Pour buttermilk in another shallow dish.
  • Pour flour on a sheet of wax paper.
  • Rinse the fillets with water and pat them dry with paper towels. Dredge the fillets in the flour, then dip them in buttermilk. Dredge them in the almond mixture. Place the fillets on a small cookie pan that has been dusted with a bit of the almond mix and chill for about 20 minutes for the almond crust to set.
  • Heat one tablespoon of oil in a skillet over medium-high heat. Add two fillets, cook them about three minutes on each side until they are browned and the fish flakes when tested with a fork.
  • Remove them to a platter to keep warm. Add the remaining tablespoon of oil to the skillet and cook the remaining fillets. If you have a large skillet, you can do all four at once.
  • Serve with lemon wedges.
