2 pounds small red-skinned potatoes, scrubbed, halved
Olive oil-flavored nonstick vegetable oil spray
4 tablespoons chopped fresh thyme
2 teaspoons garlic salt
1 1/2 cups white or regular balsamic vinegar
3 tablespoons sugar

Steps:

  • Preheat oven to 400°F. Place potatoes in large bowl. Generously spray potatoes with nonstick spray. Toss to coat. Sprinkle with 3 tablespoons thyme and garlic salt. Toss to coat. Spray large rimmed baking sheet with nonstick spray. Arrange potatoes, cut side down, on sheet. Roast potatoes until tender and golden brown, turning every 15 minutes and roasting about 45 minutes total.
  • Meanwhile, stir vinegar and sugar in heavy small saucepan over high heat until sugar dissolves. Boil until liquid is reduced to 2/3 cup, about 10 minutes. Mix in remaining 1 tablespoon thyme.
  • Transfer potatoes to plates. Drizzle some balsamic syrup over potatoes.

1 parsnip
1 carrot
1 leek
1 white onion
6 garlic cloves, whole
2 tablespoons olive oil
2 tablespoons thyme
2 tablespoons balsamic vinegar (or to taste)

Steps:

  • Cut parsnip, leek, and carrot into short strips. Cut onion coarsely. Leave garlic cloves whole or cut in half. Do not peel the garlic.
  • Evenly coat the vegetables in the oil and thyme. Spread evenly in a pan and roast for 60 - 90 minutes at 400 degrees. Stir occasionally to avoid sticking to the bottom. Vegetables are done when parsnips and carrots are tender and the edges of the leeks are burnt.
  • Finally, drizzle balsamic vinegar to taste over vegetables, stir, and serve.

1 lb. mushrooms (I used brown Crimini mushrooms)
2 T + 1 tsp. olive oil
salt and fresh ground black pepper to taste
1 T finely minced garlic
1 T balsamic vinegar
2 T finely chopped fresh thyme leaves
1 T chopped fresh parsley (optional, for garnish)

Steps:

  • Preheat oven to 400F/200C or heat gas or charcoal grill to medium high. Wash mushrooms, pull out stems, and cut into halves (or quarters if the mushrooms are large.) Put mushrooms into bowl and toss with 2 T olive oil, salt, and fresh ground black pepper. Cover a roasting pan with foil, then arrange mushrooms on the pan in a single layer. (Spread them out as much as you can. For cooking on a grill, I'd probably use heavy foil to make a "pan" so the flame doesn't turn the bottom of the roasting pan black.) Roast mushrooms 15 minutes. While mushrooms cook, finely chop fresh thyme, then mix with minced garlic, balsamic vinegar, and the tsp. of olive oil. (You could mix this right in the bowl you originally tossed the mushrooms with.) After 15 minutes, drain off any liquid that has accumulated. (If you spread the mushrooms out well, the liquid will evaporate, but if yours are too crowded like mine, you'll have a little liquid to pour off.) Then toss the hot mushrooms with they garlic-thyme mixture. Arrange back on roasting pan and cook about 10 minutes more. Serve hot, sprinkled with chopped fresh parsley if desired.

CHICKEN
1 whole chicken
1/2 medium onion
4 clove garlic
2 Tbsp butter cut into 2 pieces
duck fat or olive oil
salt, pepper and paprika
THYME SHERRY VINEGAR PAN SAUCE
1 large shallot diced
2 clove garlic minced
2 tsp fresh thyme chopped
1 c chicken broth
1 Tbsp dijon mustard
3 Tbsp cold butter cut into 3 pieces
1 Tbsp sherry vinegar

Steps:

  • 1. For the chicken. Preheat oven to 450 degrees and place a cast iron skillet in the oven big enough to fit the bird. Clean and dry the chicken. Place the half onion and 4 cloves garlic into the cavity. Truss the legs with butchers twine. Rub the duck fat or olive oil all over the outside of the chicken. Place the two pats of butter under the skin of the chicken breasts. Season with salt, pepper and paprika.
  • 2. Place the chicken breast side up in the cast iron pan in oven. Tent with foil. Roast for 45 minutes. Turn the oven off and leave the chicken in the oven for another 45 minutes. Until thighs register 175 degrees.
  • 3. Remove the chicken from the pan to carving board and let rest while making pan sauce
  • 4. For the pan sauce. Pour the drippings into a fat separator and add back to pan about 2 tbsp. drippings. Add the shallots and garlic and cook over medium high heat until softened. Add the thyme and cook 30 seconds. Add the chicken broth and mustard. Bring to a boil and reduce to a simmer and simmer until reduced to about 1 cup. Add the butter one pat at a time and whisk until melted. Stir in the vinegar. Remove from heat and taste to adjust for salt and pepper.
  • 5. Carve the chicken and serve with pan sauce

2 teaspoons vegetable oil
1 medium shallot, minced (about 3 tablespoons)
2 teaspoons tomato paste
1 cup low sodium chicken broth
3 tablespoons white wine vinegar

6 sprigs fresh thyme

Steps:

  • Adjust oven rack to middle position; heat oven to 200 degrees.
  • Slice each chicken breast in half to form thin cutlets (easier if frozen for 10-15 minutes).
  • Season both sides of each cutlet with salt and pepper.
  • Heat 2 teaspoons oil in 12-inch skillet over medium-high heat until smoking; place 4 cutlets in skillet and cook without moving them until browned, about 2 minutes.
  • Flip cutlets and continue to cook until second sides are opaque, 15 to 20 seconds.
  • Transfer to large heatproof plate.
  • Add 2 teaspoons oil to now-empty skillet and repeat to cook remaining cutlets. Cover plate loosely with foil and transfer to oven to keep warm while making sauce.
  • Remove skillet from burner. Add 2 teaspoons oil, shallot, and tomato paste to hot skillet; using residual heat, cook, stirring constantly until softened, about 30 seconds.

4 striped bass fillets, cut into 4 strips across
Olive oil, for searing
4 each large sprigs thyme
Garlic Potato Pancake, recipe follows
Pea Puree, recipe follows
25 year balsamic vinegar, as a garnish
1/2 pound peas in pod
3 tablespoons extra-virgin olive oil
4 Yukon Gold potatoes
1 bunch chives, sliced in fine rings
4 shallots, peeled and chopped fine
4 cloves garlic, peeled and chopped fine
2 egg whites, whipped into soft peaks
Flour
Olive oil, for sauteing

Steps:

  • Preheat oven to 400 degrees F.
  • In a large saute pan, heat olive oil until almost smoking. Season the fish, and place in the pan, skin side down, to sear. When the skin side is brown, turn the strips over. Add the sprigs to the pan and place in oven to finish cooking 5 more minutes.
  • Meanwhile, arrange 1 large Garlic Potato Pancake just off center on each of 4 dishes. Drizzle the Pea Puree around the potato pancake decoratively. Drizzle the aged balsamic in a contrasting pattern.
  • Take the fish from the oven and place 4 strips of fish leaning on the potato cake. Serve hot.
  • Remove peas from their pods and rinse. In large quantity of salted, boiling water, cook until they loose their crunch. Place in blender and puree. Add ice and extra-virgin olive oil to assist in puree. Season and pass through fine strainer. Reserve in refrigerator until ready to use.
  • Roast the potatoes in a 450 degree F oven until cooked, about 30 minutes. Remove skins and pass the potatoes through a food mill into a bowl. Add the chives, shallots and garlic and mix. Season the mixture, and add two egg whites whipped to soft peaks. Adjust consistency with flour. Form into 4 large pancakes, dredge in flour, and saute in olive oil until golden brown on both sides and heated through.

1 tablespoon minced fresh thyme
1 large garlic clove, minced
1 (3 1/2-pound) beef brisket, trimmed
2 teaspoons olive oil, divided
3/4 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
1 1/2 cups chopped onion
1 cup chopped carrot
1 cup chopped celery
3 cups low-salt beef broth
1/2 cup Merlot or other fruity red wine
1/2 cup red wine vinegar
1 bay leaf
1 pound baby carrots with tops
1 pound cipollini or pearl onions, peeled
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh thyme

Steps:

  • Preheat oven to 350°. Combine 1 tablespoon thyme and garlic. Make 12 small slits on outside of beef, and stuff each with about 1/4 teaspoon garlic mixture. Rub beef with 1 teaspoon oil. Sprinkle beef with 1/4 teaspoon salt and 1/4 teaspoon pepper. Heat a large ovenproof nonstick skillet over medium-high heat. Add beef; cook 2 minutes on all sides or until browned. Remove from pan. Add the chopped onion, chopped carrot, and celery to pan; sauté 6 minutes. Add 1/2 teaspoon salt, broth, wine, vinegar, and bay leaf; bring to a boil. Return beef to pan. Cover and place pan in oven. Bake at 350° for 1 hour. Reduce heat to 325°; turn beef. Cover and bake for an additional 90 minutes or until tender, turning beef twice. Remove beef from pan. Drain cooking liquid through a sieve into a bowl, pressing down on vegetables to extract liquid. Discard solids. Place a zip-top plastic bag inside a 2-cup glass measure. Pour drippings into bag; let stand 10 minutes (fat will rise to the top). Seal bag; carefully snip off 1 bottom corner of bag. Drain drippings into a bowl, stopping before fat layer reaches opening; discard fat. Trim all but 1 inch from green tops of baby carrots. Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add cipollini onions; sauté 3 minutes or until browned. Add beef, cooking liquid, and baby carrots; bring to a boil. Cover and bake at 350° for 1 hour, turning once. Sprinkle with parsley and 1 teaspoon thyme. Serve the beef with vegetables and sauce.

SWEET POTATO PUREE WITH GARLIC, THYME AND BALSAMIC VINEGAR

1-1/2 lbs. sweet potatoes, peeled and cut into 1-inch cubes
4 small garlic cloves, sliced thin
3 cups low-sodium chicken or vegetable broth
3 Tbs. chopped fresh thyme or 1-1/2 tsp. dried thyme
2 Tbs. unsalted butter
kosher salt
freshly ground white pepper
2 Tbs. aged balsamic vinegar or balsamic vinegar reduction

Steps:

  • Place sweet potato cubes and garlic in a saucepan and pour in chicken or vegetable broth to within a half inch of the top of the potatoes. Boil until very soft (the potatoes will sink down into the liquid as they cook), 12-15 minutes. Drain, reserving cooking liquid.
  • Return potatoes to saucepan and mash with potato masher. Slowly add some of the cooking liquid, stirring until you get the consistency of a loose puree. It need not be perfectly smooth. Stir in thyme and butter, adding more to taste if needed, and season with salt and white pepper to taste. Keep warm in a double boiler. Drizzle aged balsamic vinegar over each portion just before serving.

1 quart white wine vinegar
8 sprigs fresh thyme

Steps:

  • Wash and dry thyme.
  • In a large saucepan, bring the vinegar to a boil over high heat.
  • Add four thyme springs to the vinegar.
  • Remove from heat and let cool, uncovered, until vinegar reaches room temperature.
  • Remove the thyme from the vinegar.
  • Pour vinegar in hot sterlized bottle, add remaining thyme and seal.
  • Store in a cool, dark place for at least one week before using.
