2/3 cup olive oil
1/3 cup Sherry wine vinegar
2 tablespoons chopped fresh thyme
1 garlic clove, minced
5 6-ounce packages wild rice, rinsed, drained
Nonstick vegetable oil spray
1 pound carrots, peeled, cut diagonally into 1 1/2-inch pieces
6 1/2 tablespoons vegetable oil
1 1/2 pounds crimini mushrooms
3 large red bell peppers, quartered
1large red onion, cut into 6 wedges

Steps:

  • Whisk first 4 ingredients in medium bowl. Season with salt and pepper.
  • Cook rice in large pot of boiling salted water until just tender, adding more water as needed, about 1 hour; drain well. Place in large bowl. Add half of vinaigrette to warm rice; toss to coat.
  • Position racks in bottom third and top third of oven and preheat to 425°F. Spray 2 large baking sheets with nonstick spray. Toss carrots with 1 1/2 tablespoons vegetable oil in medium bowl to coat; sprinkle with salt. Transfer to 1 prepared baking sheet. Toss mushrooms with 2 tablespoons vegetable oil in medium bowl to coat; sprinkle with salt. Transfer to second prepared baking sheet. Roast carrots and mushrooms until brown and tender, stirring twice, about 30 minutes. Transfer to large bowl and cool.
  • Spray same sheets with nonstick spray. Toss peppers with 2 tablespoons vegetable oil in medium bowl to coat; sprinkle with salt. Transfer to 1 prepared sheet. Place onion wedges, rounded side down, on second sheet. Drizzle with 1 tablespoon oil. Sprinkle with salt. Roast peppers and onions until brown and tender, about 30 minutes. Cool.
  • Cut all vegetables into 3/4-inch pieces. Transfer to bowl with rice. Add remaining vinaigrette and toss to coat. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.)

  • In a medium saucepan, melt butter over medium. Add onion; season with salt and pepper. Cook, stirring occasionally, until onion is golden, 8 to 9 minutes. Add broth, and bring to a boil. Stir in rice and thyme.
  • Reduce to a simmer; cover, and cook until rice is just tender, 15 to 17 minutes. Let stand 5 minutes; fluff with a fork.

Lemony Salmon Fillets with Asparagus, Sweet Beet Sauce, and Lemon-Thyme Rice image

6 tablespoons EVOO (extra-virgin olive oil)
4 garlic cloves, 1 crushed, 3 finely chopped
Zest and juice of 1 lemon
1 teaspoon dried thyme, 1/3 palmful
Salt and black pepper
1 1/2 cups white rice
3 cups chicken stock
4 salmon fillets
1 pound pencil-thin asparagus, tough ends trimmed, spears cut into 2-inch pieces
1 softball-size red beet
1 small onion, chopped
1/2 cup white wine
1 cup fresh basil, 20 leaves, chopped or torn
2 tablespoons cold unsalted butter
1/4 cup fresh flat-leaf parsley, a generous handful, chopped

Steps:

  • Heat a medium pot with a tight-fitting lid over medium-high heat. Add 1 tablespoon of the EVOO, once around the pan. Add the crushed garlic clove, the lemon zest, thyme, and a little salt and pepper and cook, stirring, for about 1 minute. Add the rice and stir it to coat it in the oil. Add 2 1/2 cups of the chicken stock and bring to a boil, then cover the pot and reduce the heat to a simmer. Cook for 15 to 18 minutes, until the rice is tender.
  • In a shallow dish, combine the lemon juice, 1 tablespoon of the EVOO, and about 1/2 teaspoon of freshly ground black pepper. Add the salmon fillets and turn them around in the mixture until all the fillets are completely coated. Let the salmon sit while you prepare the beets and get the asparagus going.
  • Fill a large skillet with about a 1/2 inch of water. Place the skillet over high heat with a lid or some aluminum foil on top to bring it up to a boil faster. Once it is boiling, add a little salt and the trimmed asparagus. If you have pencil-thin asparagus about 2 minutes will do the trick; if you have thick asparagus then 3 to 4 minutes. You want them to be tender but to remain bright green and keep a bite to them. Once cooked, drain and run them under cold water to stop the cooking. Reserve the asparagus.
  • While the asparagus is cooking, with a paring knife, peel the skin from the beet. You might want to place some paper towels on your cutting board to avoid beet-juice stains. Once the beet is peeled give your knife, your cutting board, and the peeled beet a rinse to make it a no-stray-grit zone. Using the large hole side of a box grater, grate the beet over a plate. Or, use the grating attachment on your food processor. (I can't find mine.)
  • Preheat a nonstick skillet over medium high with 2 tablespoons of the EVOO. Remove the salmon from the lemon mixture and season it with a little salt. Add the salmon to the hot skillet and cook it on each side for 3 to 4 minutes, or until just cooked through.
  • While the salmon is cooking, return the skillet you cooked the asparagus in to the stove over medium-high heat, add the remaining 2 tablespoons of EVOO, and when the oil is hot add the grated beets, chopped garlic, and onions. Season with a little salt and pepper. Cook for about 4 to 5 minutes, or until the beets are sneaking up on getting tender, stirring frequently. Add the white wine and cook for 1 minute. Add the remaining 1/2 cup of chicken stock and bring it up to a bubble, then simmer for 2 to 3 minutes, or until you only have about 1/2 cup of liquids left in the skillet. Add the reserved cooked asparagus and heat through. Turn the heat off and add the basil and the butter, then stir it until the butter melts.
  • Add the chopped parsley to the rice. Using a fork, fluff the rice. While you are fluffing, keep your eyes peeled for the clove of garlic, fish it out, and discard.
  • To serve, arrange the salmon fillets on 4 serving plates and top them with some of the beet sauce and asparagus. Serve the rice alongside.

LEMON THYME RICE (RICE COOKER)

1 c dry jasmine rice, rinsed and drained
1 3/4 c chicken broth
1 Tbsp lemon or lime juice
1 tsp dried thyme
1/8 tsp lemon pepper

Steps:

  • 1. Turn your rice cooker to the Cook setting and melt the butter.
  • 2. When the butter is melted, stir in the drained rice and coat with the butter, cook, stirring often, to lightly brown the rice, takes just a few minutes.
  • 3. Stir in the broth, lemon juice, thyme, and lemon pepper.
  • 4. Place the cover on the cooker and allow the Cook cycle to complete as indicated by it switching to the Warm setting.
  • 5. Fluff with a rice paddle.
  • 6. Serve as a side with any dish. Enjoy.
  • 7. I enjoyed this is some pressure cooked duck.

DANDELION GREEN GUMBO WITH GOOD THYME RICE

4 tablespoons extra-virgin olive oil, divided
1 cup white rice, such as Carolina brand
6 cups chicken or vegetable stock
4 to 5 sprigs fresh thyme
2 tablespoons butter
4 cloves garlic, finely chopped
3 to 4 ribs celery from the heart, chopped with greens
1 red bell pepper, chopped
1 large yellow onion, chopped
Salt and pepper
1 teaspoon sweet paprika, 1/3 palm full
1 bay leaf, fresh or dried
3 tablespoons all-purpose flour
1 bottle pale beer
3 to 6 teaspoons hot sauce (recommended: Frank's Red Hot) medium to spicy heat level
1 tablespoons Worcestershire sauce, eyeball it
1 (15-ounce) can petite diced, crushed or stewed tomatoes
4 to 5 cups, 2 bundles, dandelion greens, stemmed and chopped
1/4 teaspoon grated nutmeg
2 teaspoons lemon zest
2 scallions, finely chopped

Steps:

  • Heat a sauce pot over medium heat. Add 2 tablespoons extra-virgin olive oil and rice. Toast rice 2 minutes, add 2 cups stock and thyme sprigs and bring to a boil. Cover the pot, reduce heat to simmer and cook 18 minutes or until tender.
  • Heat a soup pot over medium to medium high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, and 2 tablespoons butter to the pot. When butter melts into oil, add garlic, celery, bell pepper and onion and season with salt, pepper and paprika. Cook to soften veggies, 5 minutes. Add bay leaf and flour and cook the flour another minute. Stir in the beer and reduce the liquid by half, a minute or so. Add hot sauce, Worcestershire and tomatoes. Add 1 quart stock to the pot, stir in the greens and season with nutmeg. Raise heat to bring to a quick boil then simmer 15 minutes until greens are no longer bitter. Adjust seasonings, to taste.
  • Uncover rice and add lemon zest and scallions. Remove the thyme stems and fluff rice with a fork. Remove bay from gumbo. Scoop up gumbo and top with scoops of rice and serve.

1 cup finely diced carrot

1 3/4 cups fat-free low-sodium chicken broth
1 cup water
1/2 cup frozen peas
1/4 cup chopped fresh parsley

1/4 teaspoon Tabasco sauce, to taste
1/2 teaspoon salt, to taste
1/8 teaspoon black pepper, to taste

Steps:

  • Heat 2 tablespoons butter in a large saucepan; add onion, carrots, celery, green pepper, and garlic, cooking until tender.
  • Remove vegetables from pan and set aside.
  • Heat remaining 2 tablespoons of butter in pan; add rice and cook, stirring constantly, until rice is light brown.
  • Do not burn rice.
  • Stir in chicken broth, water, frozen peas, cooked vegetables, parsley, thyme, Tabasco, and salt and pepper to taste.
  • Bring mixture to a boil, then reduce heat and simmer, covered, for 15-20 minutes or until liquid is absorbed and rice is tender.
  • Fluff with fork before serving.
  • Tip: if rice seems wet, place clean dishtowel firmly between lid and pan; let rest for 10-15 minutes while towel absorbs excess liquid.

1tblsp olive oil
1 onion chopped
150g bacon
2 garlic cloves
280g brown basmati rice
700ml chicken stock
Juice and zest of 2 lemons
2-3 bushy sprigs of thyme (or dried thyme)
250g frozen broad beans (optional)
Ground black pepper
4 litre oven proof casserole dish with lid

Steps:

  • 1. Set oven at 220 degrees C. In the casserole dish, brown the chicken in a little olive oil then set aside. 2. In the same oil, fry the onion and pancetta/bacon for a couple mins, then crush the garlic and add. Keep stirring for a minute being careful not to burn the garlic. 3. Put the rice in and stir to coat. 4. Add the stock, lemon juice and zest, thyme, broad beans, and black pepper. 5. Bring to the boil then pop the chicken pieces back on top. Put the lid on and stick in oven for 50mins. Serve straight from the dish.

8 boneless steaks, such as fillet or rib-eye
Salt
Freshly ground black pepper
1 tablespoon dried thyme
1/2 cup bourbon
1 cup reduced-sodium beef broth, divided
1 tablespoon cornstarch
2 cups reduced-sodium chicken broth
2 cups instant brown rice
1/2 cup slivered almonds, lightly toasted
1/2 cup dried cranberries
2 teaspoons salt-free garlic and herb seasoning
2 tablespoons chopped fresh parsley leaves, optional

Steps:

  • Heat 1 tablespoon of the oil in large skillet. Season steaks with salt, pepper and thyme and add to hot pan. Sear 2 minutes per side, until golden brown. Add bourbon and cook 1 minute. Add 1/2 cup of the beef broth and bring to a simmer. Cook 2 minutes, until cooked to medium. Remove steaks from pan and transfer 4 of them to a serving platter. Reserve 4 steaks for another meal.
  • Dissolve cornstarch in remaining beef broth and add to pan. Simmer 1 minute, until sauce thickens. Spoon sauce over steaks before serving.
  • In a medium saucepan, bring chicken broth to a boil. Add rice, almonds, cranberries and herb seasoning, reduce heat to low, cover and cook 5 minutes, until liquid is absorbed. Remove from heat, stir in parsley and season with salt and pepper.

Ingredients:
2 lbs. Orange roughy fillets cut into 1 ½ inch squares
2 limes juiced
¼ cup fresh ground black pepper
3 cups white minute rice
3 cups water
2 tbls thyme
1 tbsp cinnamon
¼ cup veggie oil
½ cup minced onion
¼ chopped garlic
2 tbsp crushed red pepper
1 tbls paprika
1 tbls cayenne
1 tbls turmeric
4 tbls butter
½ cup white wine
½ cup heavy cream
1 tspn brown sugar
1 large cucumber sliced into finger sized strips
1 lb. green beans par boiled (4 minutes) and chilled in ice water
6 ripe roma tomatoes, quartered length wise, halved width wise
2 ripe avocados chopped into bite size pieces

Steps:

  • Prep: Slice the orange roughy into 1 ½ inch squares and rinse with ice cold water. Cleanse the fish by drenching with lime juice and smoothing with hands. Pour ¼ cup of fresh ground black pepper over fish and rub in with hands. Set aside in refrigerator. Bring three cups of water to a boil and stir in thyme and cinnamon. Add rice and stir again. Remove from heat and cover with a paper towel between lid and pot (makes rice perfect). Set aside and keep covered until used. Bring a deep large heavy pan to med/hi. Add veggie oil, onions and garlic, turmeric, and crushed red pepper. Sauté for 1 minute then add orange roughy, paprika, cayenne. Stir well but gently. Sauté for 4 minutes then add butter, white wine, heavy cream, and brown sugar. Again, stir well but gently. Cover and reduce heat to med/low for eight minutes. Serve: Scoop 1 ½ cups of rice onto middle of plate, concave the center of rice lump. Spoon a bunch of orange roughy pieces into center of rice. Surround rice with cucumber slices and pour remaining sauce from sauté pan over orange roughy, rice and cucumbers. Scatter green beans tomatoes and avocado. Finish with salt, pepper and maybe a squeeze of lime.

THYME RICE

My mother has used this for a stuffing for turkey and cornish hens, but I like to mix in some peas and serve it as a side dish. This is the recipe for the basic stuffing my mother uses.

4 cups cooked white rice
1 tablespoon ground thyme
1/3 cup butter
1/2 teaspoon garlic salt (optional, I added this after my mother's recipe)

Steps:

  • Mix the butter, thyme and garlic salt into the rice until mixed.
  • As a stuffing: Stuff into cornish hen or turkey and bake until bird is done. I serve the stuffing still inside the hen, but I take it out of the turkey and sometimes bake the rice a bit more for the added crisp. (My family likes crispy rice :) ).
  • To crispify: Throw the bowl into the oven at 350 for 8-10 minutes or until it's slightly crispy on top.
  • As a side dish, I mix as above and add peas and serve. I imagine the rice would work well mixed with other veggies, but we just love our peas so much that it's normally what I add. Trust me and use real butter, and don't omit.

15g dried porcini mushrooms
1 tbsp balsamic vinegar
1 tbsp vegetable bouillon powder
1 tbsp rapeseed oil
1 large onion , finely chopped
200g pack small button mushrooms
1 tbsp fresh thyme leaves
1 tsp chopped rosemary
3 garlic cloves , sliced
170g brown basmati rice
2 leeks , washed and sliced
50g ricotta
15g vegetarian Italian-style hard cheese , finely grated
parsley , to serve

Steps:

  • Put the dried mushrooms in a measuring jug and pour over 800ml boiling water. Stir in the balsamic and bouillon. Leave to soak.
  • Heat the oil in a large wok or frying pan and fry the onion for 8 mins until soft and golden. Add the button mushrooms, thyme, rosemary, garlic and black pepper, then cook, stirring occasionally, for 5 mins. Pour in the dried mushrooms and liquid, then stir in the rice and leeks.
  • Cover and leave to simmer for 30 mins until the liquid has been absorbed and the rice is tender but still nutty. Remove from the heat, then stir in the ricotta and grated cheese, and serve scattered with parsley leaves.
