TUSCAN VODKA LEMONADE WITH ROSEMARY AND THYME SIMPLE SYRUP



Tuscan Vodka Lemonade with Rosemary and Thyme Simple Syrup image

1 cup granulated sugar
4 sprigs fresh rosemary
4 sprigs fresh thyme
1 cup water
4 ounces vodka
Juice of 2 lemons, plus more for the glass rim
Ice
2 tablespoons superfine sugar
Pinch cayenne pepper

Steps:

  • To make the rosemary and thyme simple syrup, add the granulated sugar, 2 sprigs or the rosemary, 2 sprigs of the thyme and the water to a small saucepan. Turn on the heat and bring to a gentle boil, then stir to dissolve the sugar. Turn off the heat and let it cool. Discard the rosemary and thyme. Store in an airtight container in the fridge for up to 1 month.
  • Add the vodka, lemon juice and 2/3 cup of the rosemary and thyme simple syrup (or more if you like a sweeter cocktail!) into a cocktail shaker with ice.
  • Mix together the superfine sugar and cayenne pepper then spread onto a plate. Run a lemon wedge around the rim of each glass and dip into the sugar and cayenne mixture. Fill each glass with ice, then divide the vodka lemonade between the 2 glasses. Garnish each glass with a sprig of rosemary and a sprig of thyme. Enjoy!

15 fresh thyme sprigs
2 cups water, divided
1 cup sugar, divided
9 medium lemons, halved
1/4 cup honey
1/4 teaspoon almond extract
5 cups cold water

Steps:

  • In a small bowl, soak thyme sprigs in 1 cup water while preparing lemons. Place 1/4 cup sugar on a plate; dip cut sides of lemons in sugar., Cover and grill lemons, cut side down, over medium-high heat for 1-2 minutes or until golden brown. Cool slightly. Drain thyme; grill for 1-2 minutes or until lightly browned, turning once., In a small saucepan, combine 1 cup water, honey and remaining sugar; bring to a boil, stirring constantly to dissolve sugar. Remove from the heat. Add grilled thyme sprigs and extract; let stand for 1 hour to steep. Discard thyme., Meanwhile, squeeze lemons to obtain 1-1/2 cups juice; strain. In a large pitcher, combine 5 cups cold water, thyme syrup and lemon juice. Serve over ice.

4 cups freshly squeezed lemon juice, about 24 lemons
2 cups vodka

Steps:

  • In a small saucepan, combine 2 cups water with the sugar and thyme; bring to a boil over high heat, stirring occasionally, until sugar has dissolved. Remove from heat; let cool to room temperature.
  • Pour mixture through a fine sieve into a large glass measuring cup; discard thyme. You should have 2 cups syrup. Cover with plastic; chill.
  • In a large serving pitcher, stir together lemon juice, vodka, and chilled syrup; garnish with thyme. Divide evenly among eight tumblers filled with ice; serve immediately.

1 lemon, cut into 1/3-inch-thick rounds
2 tablespoons sugar
6 cups favorite lemonade, such as Thyme Lemonade, recipe follows
Fresh thyme sprigs, for garnish

Steps:

  • Prepare a grill for medium-high heat.
  • Dust the lemon slices in the sugar, shaking off the excess. Grill until the sugar begins to caramelize and the lemon slices are lightly charred, 1 to 2 minutes per side. Let cool completely.
  • To serve, pour the lemonade into tall glasses with ice. Add a sprig of thyme and a grilled lemon slice. Serve immediately.

1 super fine sugar
2 ounces citrus vodka
1 ounce chilled club soda
1 lemon thyme sprig
2 ounces lemon-thyme syrup

  • Moisten the outer rim of a highball glass with 1 lemon wedge and coat lightly with superfine sugar. Add ice to the glass. Makes 1 cup
¾ cup sugar
1 small bunch fresh thyme, preferably lemon thyme (1/2 ounce)

Steps:

  • *** Makes 1 drink: Run 1 lemon wedge over the rim of a 12 oz highball glass; dip the rim into sugar. Reserve the lemon wedge. Put the remaining 2 lemon wedges in a cocktail shaker. Muddle hard, breaking the lemon skins to release their oils. Add Syrup, Vodka and Ice. Cover and shake. Pour the mixture into the sugar-rimmed highball glass, lemon wedges and all. Top off with club soda, the squeeze the reserved lemon wedge over before dropping it into the glass. Garnish with the thyme sprig and serve immediately. *** Lemon-Thyme Syrup: In a small saucepan, heat 1 cup water and the sugar to boiling, stirring to dissolve the sugar. Add the thyme, remove from the heat, and let stand until cool. Strain through a fine-mesh sieve, pressing to extract as much liquid as possible. Cover and refrigerate for up to 3 days.
