3 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon finely chopped shallots
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
4 cups packed arugula or mixed greens (about 5 oz)
2 medium tomatoes, sliced
3 oz brie cheese, cut into bite-size strips

Steps:

  • In small bowl, mix dressing ingredients with wire whisk.
  • In large bowl, toss arugula with half of the dressing. Arrange sliced tomatoes on medium platter. Place arugula and brie around tomatoes; drizzle with remaining dressing. Serve immediately.

4 cups torn iceberg lettuce
4 cups torn leaf lettuce
4 cups torn fresh spinach
1 medium cucumber, sliced
2 carrots, sliced
2 celery ribs, sliced
6 fresh broccoli florets, sliced
3 fresh cauliflowerets, sliced
6 radishes, sliced
4 green onions, sliced
5 fresh mushrooms, sliced
ITALIAN DRESSING:
1/3 cup olive oil
1/4 cup plus 2 tablespoons red wine vinegar
2 tablespoons grated Parmesan cheese
1 teaspoon sugar
1 to 2 garlic cloves, minced
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
Pinch salt and pepper

Steps:

  • In a large salad bowl, toss the greens and vegetables. Cover and chill. In a blender, combine all dressing ingredients; cover and process until blended. Pour into a jar with tight-fitting lid; chill for at least 30 minutes. , Shake dressing before serving; pour desired amount over salad and toss to coat.

6 tablespoons white wine vinegar
6 tablespoons vegetable oil
1 red onion, thinly sliced
¼ cup white sugar
¼ teaspoon salt
2 dashes hot pepper sauce
¾ teaspoon ground black pepper to taste
½ cup coarsely chopped walnuts
1 head romaine lettuce, torn
1 head butter lettuce, torn
2 bunches fresh spinach leaves
2 pears, cored and sliced
1 (4 ounce) package feta cheese

Steps:

  • In a bowl, mix the vinegar, oil, onion, sugar, salt, hot sauce, and pepper. Cover and refrigerate 1 hour.
  • In a skillet over medium heat, cook the walnuts, stirring constantly, until lightly toasted.
  • In a large bowl, mix the walnuts, romaine lettuce, butter lettuce, spinach, and pears. Toss with the dressing mixture to coat. Sprinkle with feta cheese to serve.

8 ounces ripe brie cheese, chilled
3 heads lettuce or 1 lb spinach, stems removed
1/3 cup olive oil
4 teaspoons minced shallots or 4 teaspoons green onions
2 teaspoons minced garlic
1/2 cup white wine vinegar
2 tablespoons fresh lemon juice
3 teaspoons dijon-style mustard
fresh ground black pepper

Steps:

  • Remove rind from chilled Brie with a sharp knife; reserve rind for another use.
  • Cut cheese into small pieces and allow to come to room temperature.
  • Wash greens in cold water.
  • Tear into bite-sized pieces; dry in salad spinner or clean towels.
  • Warm oil in a heavy skillet.
  • Add shallots or green onions and garlic; cook over low heat until golden, about 3 minutes.
  • Stir in vinegar, lemon juice, mustard and several grindings of pepper.
  • Add the cheese a little at a time, stirring constantly.
  • When all the cheese is melted, toss hot dressing with greens and croutons.
  • Serve immediately, and pass the pepper mill.

This is a lovely salad dressing recipe from Paula Deen that would make me happy to eat salad for every meal & it is certain to be shared w/our friends on a dinner occasion. I hope you enjoy it as I know I will. (The prep & cooking time has been combined & does not include time to cool slightly)

2 tablespoons olive oil
1 green onion (finely chopped)
1/2 lb brie cheese
2 tablespoons Dijon mustard (coarse variety)
3 tablespoons sherry wine vinegar or 3 tablespoons raspberry vinegar
1 tablespoon capers (optional)
salt & pepper

Steps:

  • Heat oil in a saucepan over low heat. Add onion & cook till softened.
  • Add mustard to saucepan, then the vinegar & stir well.
  • Remove rind from Brie & add cheese to the pan, mixing till smooth.
  • Let mixture cool slightly & add capers if you are using them.
  • Add salt & pepper to taste & serve warm over mixed salad greens.
