Number Of Ingredients 14

2 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 eggs
1/2 cup milk
1/2 cup vegetable oil
2 cups shredded carrots
1 1/2 cups flaked coconut
1/2 cup candied cherry, quartered
1/2 cup raisins
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients.
  • In a small bowl, combine the eggs, milk and oil.
  • Stir into dry ingredients just until moistened.
  • Fold in the carrots, coconut, cherries, raisins and pecans.
  • Pour into four greased 5-3/4-in. x 3-in. x 2-in. loaf pans.
  • Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes before removing from pans to wire racks. Cover and store in the refrigerator. Yield: 4 mini loaves.

Hi - this is a Easter favorite for my family. Watch the bread cooking time is 45 - 50 minutes depending on your oven...

Number Of Ingredients 12

2 1/2 c all purpose flour
1 c sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground mace
1/2 tsp salt
3 beaten eggs
1/2 c oil
1/2 c whole milk
2 c shredded carrots
1 1/3 c flaked coconut
2/3 c roughly chopped maraschino cherries

Steps:

  • 1. Stir together flour, sugar, baking powder, baking soda, mace and salt.
  • 2. Combine eggs, milk and oil. Stir well. Pour the liquid mixture into the dry ingredients.
  • 3. Stir in Carrots, Coconut & chopped cherries
  • 4. Pour into 9 X 5 X 3 loaf pan or 21 ounce pie filling cans.
  • 5. Bake in 350 oven 1 - 1 1/4 hours
  • 6. Cool in pan approx. 10 minutes. Remove from pan, let cool completely. Wrap and store overnight before slicing.

I have been making this for many years. I started making them in coffee cans and vegetable cans to give as gifts and to send for gifts they are real handy when needing to ship in the mail or Fed-Ex or by UPS. What is real nice about baking in the cans is when you slice them is that they fit in the toaster perfectly or on a party tray beautifully. I love the 3C bread more so because I am not a big fruit cake person. Sometimes I add spiced rum for that special touch.

1 teaspoon(s) baking powder
1/2 teaspoon(s) mace
3 large eggs beaten (farm fresh)
1/2 cup(s) cooking oil
1 cup(s) cane sugar
1/2 cup(s) half and half
2 cup(s) carrots, grated
1 1/3 cup(s) coconut flaked
1/2 cup(s) maraschino cherries (chopped)
1/2 cup(s) walnut pieces, chopped

1 cup sugar
3/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
4 tubes (6 ounces each) refrigerated buttermilk biscuits, quartered
3/4 cup butter, melted
1/2 cup apple juice
1 teaspoon vanilla extract
1 teaspoon rum extract
Toasted chopped pecans, optional

Steps:

  • Line a 5-qt. slow cooker with a piece of aluminum foil, letting ends extend up the sides. Grease foil., Combine the sugars, cinnamon and allspice in a large bowl; sprinkle 3 tablespoons sugar mixture in bottom of prepared slow cooker. Add biscuit pieces to bowl; toss to coat. Transfer coated biscuits to slow cooker; sprinkle any remaining sugar mixture over biscuits. , Stir together butter, apple juice and extracts; pour over biscuits. , Cook, covered, on low 2-1/2 to 3 hours. Remove lid and let stand for 10 minutes. Carefully invert onto serving platter. If desired, sprinkle with pecans.
