Hawaiian pizza is the perfect combination of sweet and savory flavors with salty bacon and juicy pineapple loaded on top of a crispy crust.

1 pound pizza dough (or homemade dough)
olive oil (for greasing baking sheet and brushing)
cornmeal (for sprinkling baking sheet (optional))
½ cup pizza sauce (or homemade marinara sauce)
1 cup mozzarella cheese (shredded)
4 ounces Canadian bacon (about 4 to 5 slices)
½ cup diced pineapple (100g, 3 ½ ounces, fresh or canned)
¼ cup chopped bacon (cooked, ¼-inch dice, about 4 slices)
oregano (fresh or dried, for sprinkling (optional))

Steps:

  • Set the oven rack to the lower position. Preheat to 500ºF (260ºC).
  • Allow the pizza dough to sit at room temperature for 30 minutes.
  • Lightly brush a large baking sheet with olive oil. Evenly sprinkle cornmeal on the pan if desired.
  • On a lightly floured surface, stretch and shape the dough into a 10-inch circle.
  • Transfer dough to the baking sheet. Use fingers to press into a 12-inch circle. Leave the edges slightly thicker, about ½-inch tall and wide.
  • Brush some olive oil on the edges of the dough to make the crust crispier when baked.
  • Spread the sauce on top, followed by the cheese, ham, pineapple, and bacon. Sprinkle the oregano on top.
  • Bake the pizza on the lowest oven rack until the crust is golden brown, and the cheese is melted and bubbly, about 10 to 12 minutes.
  • Slice and serve pizza immediately when still hot.

1/2 cup marinara sauce
1/4 cup barbecue sauce

1 cup shredded part-skim mozzarella cheese
1/2 cup shredded cheddar cheese

1/8-ounce yeast
3/8-ounce sugar
16 ounces water
1/4 cup olive oil
1/2-ounce salt
2 pounds flour
1/4 cup cornmeal
4 vine ripened tomatoes, peeled, seeded, chopped
1 tablespoon chopped roasted garlic
1/4 cup chopped red onion
2 tablespoons finely sliced scallions
2 tablespoons taro oil or olive oil
1 teaspoon salt
1 teaspoon black pepper
2 ripe yellow tomatoes, peeled, seeded, chopped
1 teaspoon minced garlic
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh thyme
1 teaspoon salt
1 teaspoon black pepper
5 pounds pork butt, cut into thirds
1 1/2 tablespoons liquid smoke
2 1/2 tablespoons sea salt
3 cups chicken stock
10 Ti leaves or green cabbage leaves
3 ounces shredded Fontina
1-ounce grated Parmesan

Steps:

  • Place the yeast, sugar, and 1 cup of water in a mixing bowl and dissolve the yeast. Add the remaining ingredients except for the cornmeal and mix on slow speed with a dough hook until a ball is formed. Change the speed to medium and mix for an additional 1 to 2 minutes until a sooth and elastic dough is formed. Place the dough in a lightly oiled bowl or pan cover and allow the dough to rest for approximately 4 hours.
  • To make the tomato sauce, place all of the ingredients in a mixing bowl, combine well and adjust the seasonings. Let the flavors combine for approximately 30 minutes or longer.
  • To make the yellow tomato sauce, combine all of the ingredients into a blender and puree. Adjust the seasoning.
  • Preheat oven to 350 degrees F. Rub the pork with the smoke flavoring and sea salt. Using a roasting pan, line the bottom with 1/2 of the leaves and place the pork butt on top. Add the chicken stock, being careful not to pour on top of the pork. Cover with the remaining leaves. Cover tightly with foil and roast for approximately 3 1/2 hours. Cook the pork to a minimum internal temperature of 165 degrees F. When done the pork should shred easily and be very moist.
  • To make the pizza, press or roll out the dough to approximately 1/4-inch thick. Transfer the pizza to a pizza peel dusted with cornmeal. Add the yellow tomato sauce and spread evenly. Add the fontina cheese, shredded pork, tomato mixture, and finish with some grated Parmesan. Place pizza in a hot oven turning occasionally until crust is evenly browned and the bottom is golden in color. Remove from oven, slice, and serve.

2 teaspoons minced garlic
2 teaspoons minced peeled ginger
2 teaspoons canola oil
Kosher salt
1/2 cup tomato puree
1 pound pizza dough (or one 10-to-12-inch prepared crust)
All-purpose flour, for dusting
Cornmeal, for dusting
1 cup shredded cheese blend (mozzarella, provolone, cheddar and/or parmesan)
1/2 cup sliced pepperoni
1/2 cup chopped pineapple
1 fresh red chile pepper, thinly sliced
Fresh mint and Sriracha (hot Asian chili sauce), for topping

Steps:

  • Put a pizza stone or upside-down baking sheet in the oven; preheat to 500 degrees F. Pulse the garlic, ginger, canola oil and a pinch of salt in a food processor until smooth. Mix 1 teaspoon of the garlic-ginger paste with the tomato puree. Stretch the pizza dough into a 12-inch round on a floured surface. Put on a cornmeal-dusted pizza peel or upside-down baking sheet; slide onto the hot pizza stone or baking sheet and cook 5 minutes. (If you're using a prepared crust, skip this step.) Slide the crust back onto the peel. Spread with the tomato puree, then top with the cheese, pepperoni, pineapple and chile pepper. Return to the oven and bake until the cheese melts, 8 to 10 more minutes. Remove from the oven and let sit 5 minutes, then top with mint and Sriracha.

A tip: Allow your fruit to drain very well so as not to sweat alot later! Cook time includes refrigeration time.

1/4 cup margarine
1 1/2 cups flour
1/4 cup shortening
1 teaspoon cream of tartar
3/4 cup sugar
1/2 teaspoon baking soda
1/8 teaspoon salt
1 egg
16 ounces ricotta cheese
1 cup sugar
1/8 teaspoon cinnamon
1 vanilla beans, split and seed scraped out or 1/2 teaspoon vanilla extract
3 tablespoons water, divided
7 ounces caramel candies (I used Kraft, about 1/2 the bag)
1 cup chopped pecans
1 pint strawberry, sliced
1 kiwi, sliced
1 banana, sliced and drizzled with a little
lemon juice, to prevent browning
1/2 cup shredded coconut
1 can pineapple, well drained
1 (11 ounce) can mandarin oranges, well drained
1 mango, sliced

Steps:

  • --crust--.
  • Preheat oven to 400 degrees F.
  • Mix all ingredients throughly and divide in half.
  • Press each half onto a pizza pan being sure to evenly spread it all the way to the edge.
  • Bake each crust 8-10 minutes. Allow to cool.
  • --toppings--.
  • Mix 2 tablespoons water, vanilla,cinnamon and sugar in a small sauce pan, over low heat until sugar has melted.
  • Beat sugar syrup into ricotta cheese until throughly incorporated.
  • Spread over cooled crusts; This is the"sauce".
  • Add pecans and fruit, placing each to look like pizza toppings.
  • You can use basically any kind of fruit that you like but I liked the above ingredients.
  • In a small saucepan, melt caramels in 1 tablespoon water, until smooth.
  • Drizzle over pizza to look like"cheese".
  • Chill for an hour. Slice and serve.
