Despite the name of this iconic retro dish, the secret to a great sloppy joe is a thick, rich, almost dry consistency, which allows the sandwich to be eaten with your hands. Serve on hamburger buns.

1 ½ pounds extra lean ground beef
½ onion, diced
2 cloves garlic, minced
1 green pepper, diced
1 cup water
¾ cup ketchup
1 dash Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon Dijon mustard
1 ½ teaspoons salt, or to taste
½ teaspoon ground black pepper
1 cup water
1 pinch cayenne pepper to taste

Steps:

  • Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
  • Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.
  • Mix in ketchup, Worcestershire sauce, brown sugar, Dijon mustard, salt, and black pepper. Add 1 more cup water and return mixture to a simmer. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 40 minutes.
  • Season with salt , black pepper, and cayenne pepper to taste.

1 loaf fresh baked rye bread, sliced (12 slices)
Russian Dressing, recipe follows
1 pound sliced corned beef brisket
1 pound sliced roast beef
8 ounces Swiss cheese
Home Coleslaw, recipe follows
1 pound sliced roasted turkey
1/2 cup ketchup
1/2 cup mayonnaise
2 tablespoons sweet pickle relish
1 teaspoon smoked paprika
3/4 cup mayonnaise
2 tablespoons white vinegar
1 tablespoon sugar
1/2 tablespoon celery seed
2 grated carrots
1 head finely shredded green cabbage
Salt and pepper

Steps:

  • Lay out 3 slices rye bread. Spread each with a generous spread of Russian Dressing, making sure to cover the bread in its entirety. Place 3 slices corned beef, 3 slices roast beef, 1 slice Swiss cheese and 2 tablespoons Coleslaw on one of the dressed slices. Place one of the dressed slices of rye bread on top of the first layer. Place 3 slices turkey, 2 slices Swiss and 2 tablespoons Coleslaw on top, each, creating a second layer. Take the remaining dressed slice of rye bread and flip it over so that the Russian Dressing side is face down, and top off the sandwich. Place a toothpick in each corner of the sandwich and slice the sandwich horizontally and vertically, making 4 pieces. Repeat the process 3 more times with the remaining ingredients.
  • Mix together the ketchup, mayonnaise, relish and smoked paprika in a bowl, then chill for 30 minutes.
  • Mix together the mayonnaise, vinegar, sugar, celery seed, carrots, cabbage and salt and pepper in a bowl. Chill for 30 minutes.

1 small onion (finely chopped)
1/2 small green bell pepper (seeded and finely diced)
1 Tbsp worcestershire sauce
1 tsp yellow mustard
1/4 cup water
1 Tbsp brown sugar
15 oz can tomato sauce
1 lb lean ground beef (85%-90% lean)
1 Tbsp olive oil
½ tsp salt (or to taste)
¼ tsp ground black pepper (or to taste)
3 garlic cloves (minced)
4 hamburger buns (toasted if desired)

Steps:

  • Finely chop the onion. Seed and finely dice the green pepper.
  • In a bowl, combine the Worcestershire sauce, mustard, water, brown sugar, and tomato sauce.
  • Place a large skillet or dutch oven over medium/high heat. Add olive oil and ground beef. Saute the beef for about 5 minutes until cooked through and longer pink, breaking it up with a spatula. Season with salt and pepper and add in the diced peppers and onion. Cook another 5 minutes until the veggies are tender and beef is browned.
  • Add the minced garlic and saute 30 seconds until fragrant, stirring constantly. Add in the sauce and bring to a light boil. Reduce heat to low and simmer uncovered for about 10 minutes. Season to taste with salt and pepper and serve on toasted buns for Sloppy Joe Sandwiches.

4 very ripe beefsteak tomatoes, cored and diced
1 cup diced carrots
1 cup diced celery, plus stalks for garnish
1/2 cup diced beets
2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1/4 teaspoon cracked black pepper
8 leaves flat-leaf spinach
3 leaves kale
1 small bunch watercress
2 tablespoons chopped flat-leaf parsley
Pinch chile de arbol powder
1 to 1 1/2 cups vodka, cold
1 teaspoon celery salt, plus for garnish
2 to 3 tablespoons prepared horseradish
Hot sauce

Steps:

  • Combine the tomatoes, carrots, celery, beets, 1 tablespoon of the Worcestershire, and the salt and pepper in a medium saucepan. Add 1 cup water and bring to a boil over high heat. Reduce the heat to low and simmer, covered, for 15 minutes. Add the spinach, kale, watercress, parsley and chile de arbol; cover and simmer for another 5 minutes.
  • Remove the pan from the heat and let cool for 10 minutes. Transfer mixture to a blender, add another 1 cup water, and puree until very, very smooth, about 3 minutes. Strain through a fine-mesh sieve into a small pitcher. Cover and refrigerate until cold, at least 2 hours.
  • Stir 1 cup vodka into the pitcher; taste, and add more vodka as desired. Stir in the celery salt and the remaining 1 tablespoon Worcestershire. Add horseradish and hot sauce to taste.
  • To serve, put ice cubes in 4 glasses. Divide the bloody mary mixture among the glasses, and garnish each with a celery stick and a sprinkle of celery salt.

1 loaf rye bread
6 ounces Russian dressing
1 pound cole slaw
2 ounces corned beef, sliced
4 slices Swiss cheese
2 ounces pastrami, sliced

Steps:

  • For the sloppy Joe:
  • Cut the bread down the side to open up like a sub. Hollow out bread, removing the soft inside. Add 3 ounces Russian dressing, 1/2 pound cole slaw, 2 ounces corned beef and 2 slices Swiss cheese. Add pastrami, more Russian dressing, and 2 more slices of Swiss cheese. Add the remaining cole slaw and close the sandwich. Slice into 3 pieces and use 3 club toothpicks to secure the Sloppy Joe. Big mouth and a lot of napkins needed.
