Time 55m

Number Of Ingredients 7

4 pounds (about 8 to 10 apples, depending on the size) apples, peeled, cored, and quartered (use apples varieties that are good for cooking such as Granny Smith, Pippin, Gravenstein, Mcintosh, Fuji, Jonathan, Jonagold, or Golden Delicious)
2 strips lemon peel (use a vegetable peeler to strip the zest only, not the pith)
3 tablespoons lemon juice or apple cider vinegar (more or less to taste)
1/2 teaspoon ground cinnamon
Up to 1/2 cup white sugar (can sub half of the white sugar with brown sugar)
1 cup water
1/2 teaspoon of salt

Steps:

  • Adjust the seasoning and consistency as needed: If the applesauce is too thick, add more water to thin it out. If not sweet enough, add more sugar to taste. If too sweet, add more lemon juice.
  • Enjoy: This applesauce is delicious either hot or chilled. It pairs well with pork chops for savory dishes, it's terrific with cottage cheese as a snack or light lunch, and it's great with vanilla ice cream or yogurt. Freezes well and will last at least 1 year in a cold freezer. If you freeze it, make sure to allow enough headroom (at least 1 inch) in your jar for expansion.

Time 1h50m

Yield 2 1/2 quarts

Number Of Ingredients 8

2 large navel oranges, zested and juiced
1 lemon, zested and juiced
3 pounds Granny Smith apples (about 6 to 8 apples)
3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (about 6 to 8 apples)
1/2 cup light brown sugar, packed
4 tablespoons unsalted butter
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter, and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice. Pour the apples, reserved apple peel, and juice into a nonreactive Dutch oven or enameled iron pot. Add the brown sugar, butter, cinnamon, and allspice and cover the pot. Bake for 1 1/2 hours, or until all the apples are soft. Remove and discard the red apple peel. Mix with a whisk until smooth, and serve warm or at room temperature.

QUICK HOMEMADE APPLESAUCE - NO SUGAR ADDED

Quick Homemade Applesauce - No Sugar Added image

A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

Time 35m

Yield 8 serving(s)

Number Of Ingredients 6

3 lbs apples
1 teaspoon cinnamon
1 pinch nutmeg
1 1/2 cups water
2 thin lemon slices
1/4 teaspoon salt

Steps:

  • Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
  • Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
  • Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
  • Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.
