1 (29 ounce) can sweet potatoes
2 eggs, lightly beaten
1 cup packed brown sugar
1 cup milk
¼ cup melted butter
2 teaspoons lemon juice
¼ teaspoon ground ginger
¼ teaspoon ground cloves
½ teaspoon ground cinnamon
½ teaspoon salt

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.
  • Combine sweet potatoes and eggs in a medium bowl. Beat in the brown sugar, milk, butter, lemon juice, ginger, cloves, cinnamon, salt. Pour into prepared dish.
  • Bake in preheated oven until hot and golden brown on top, about 30 minutes.

This side dish is destined to be on your Thanksgiving table. It's creamy, but not too sweet. I really loved the slight crunch from the crust. Best of all, it's easy to prepare which is essential during the holidays.

1/2 c (1 stick) butter or margerine
4 c grated sweet potatoes
1 1/2 c brown sugar, firmly packed
2 c milk or cream diluted (if cream 1/2 water 1/2 cream)
1/2 c chopped nuts
1/2 c flour
1/2 tsp baking soda
1 tsp nutmeg
1 tsp vanilla
2 eggs, beaten

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Melt butter in 9 x 13-inch baking pan.
  • 3. In a large bowl, mix all ingredients together, adding eggs last.
  • 4. Pour mixture into baking pan, bake 40 to 50 minutes.
  • 5. Midway through baking time, when crust forms around the edges and top of mixture, remove from oven.
  • 6. Stir and return to oven for remaining baking time. (Crust will form again.)
  • 7. Serve warm or chilled.
  • 8. For variety, you can add 3/4 c coconut or 3/4 c raisins before baking.

Nonstick cooking spray, for spraying the baking dish
2 1/2 pounds medium sweet potatoes (about 3), poked with a fork
1/2 cup (1 stick) butter, room temperature
2 large eggs
1 cup sugar
1/2 cup milk
1 tablespoon self-rising cornmeal
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup pecan halves
1/2 cup packed brown sugar

Steps:

  • Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with cooking spray.
  • On a foil-covered baking sheet, bake the sweet potatoes until soft, about 1 hour. Remove and let cool. Reduce the oven temperature to 325 degrees F. When cool enough to handle, peel the potatoes, place the flesh in a large mixing bowl, add the butter and mash until smooth. Add the eggs 1 at a time, beating well after each addition. Add the sugar, milk, cornmeal, salt and 1/2 teaspoon of the vanilla and beat until smooth. Pour the batter into the prepared baking dish. Arrange the pecan halves on top of the pudding and top with the brown sugar. Sprinkle the remaining 1/2 teaspoon vanilla by small droplets over the brown sugar. Bake until the top is browned, about 45 minutes.
