This Crockpot green beans and potatoes with ham is very quick to put together and is so hearty and delicious.

1 pound pork hock ((also called ham hock) (or 2 cups cooked ham chunks))
36 ounces green beans (, fresh or frozen (in bite-size pieces))
3 cups water
4 large potatoes (, yellow or red, skin on, cut in bite-size chunks)
1 Tbsp thyme (, dry)
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
1 tsp salt (, more to taste)
¼ tsp ground cloves
½ tsp ground cinnamon
oil (, just a drizzle (about 1-2 Tablespoons))

Steps:

  • Add the ham hock (or ham chunks) to the bottom of the crock pot, then pour in the green beans, water, and potato chunks. Don't cut the potatoes too large, or they will have a hard time getting done when everything else is ready. I like to go for 1 inch or smaller.
  • Next, you will add the thyme, garlic powder, onion powder, black pepper, salt, cloves, and cinnamon. Mix together thoroughly, and then drizzle with a bit of oil (1-2 tablespoons) before covering.
  • Cook on high for 4 hours or on low for 6-7 hours. This all depends on whether you'll be home or not and how quickly you need it to be done. Don't overcook, as the green beans will turn to mush. You do want the potatoes to get done, though.
  • Once the green beans and potatoes are cooked, you will remove the ham hock and let it cool a bit before dicing up the ham. Turn the crockpot on the warm setting while cooling and cutting up the ham pieces. Add the ham pieces back in and serve.

I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

2 pounds fresh green beans, rinsed and trimmed
1 large onion, chopped
3 ham hocks
1 ½ pounds new potatoes, quartered
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoning salt
1 tablespoon chicken bouillon granules
ground black pepper to taste

Steps:

  • Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
  • Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
  • To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

Here's the simple crock pot combination I've come up with based on friends' advice and some other recipes I've read. I like to serve it with corn bread and sliced fresh tomatoes. NOTE: In the time since I originally posted this recipe, I've tweaked it a bit more when I make it at home. I found that the addition of some chicken broth really enhances the flavor! However, I'm leaving it here as originally posted.

1 smoked pork hock
1 (15 ounce) jar whole white pearl onions
1 (16 ounce) package cooked diced ham (or leftover sliced ham)
1 (16 ounce) bag frozen French-cut green beans (or regular cut, or canned)
4 baking potatoes, diced (or red potatoes, halved)

Steps:

  • Combine all ingredients in crock pot. (There's no need to defrost any ingredients that have been frozen.).
  • Cook on low for 6 hours.

Steps:

  • Dice the ham, green beans, onion and potatoes. Add ingredients into your Crock Pot with 3 cups of water and season with salt & pepper (according to taste). You can also use Steak Spice in yours. Cook for 6 hours on Low. Tip: To get a crispier dish, we'd suggest sautéeing everything in a saute pan once it's done cooking in the crockpot.

4 russet potatoes, peeled and halved lengthwise

1 white onion, sliced thickly
