THANKSGIVING TURKEY ROLL-UPS
Steps:
- Lay wrap flat. Layer first with cream cheese and cranberry sauce.
- Top with sliced turkey and arugula.
- Wrap together and heat (microwave for 15 seconds, grill in panini press, etc.)
- Pack in a lunchbox or enjoy immediately!
KENDA'S THANKSGIVING PINWHEEL ROLL-UPS
This was far and away the most popular appetizer served at my parents' 50th anniversary party. Several guests asked for the recipe.

Steps:
- In a food processor, process zest and green onion until very finely minced.
- Mix in honey and a little cream cheese, process until smooth and ingredients are well incorporated.
- Place remaining cream cheese and pecans in processor and pulse until just combined.
- Spread cheese mixture thinly on tortilla, place 2 turkey slices on top, add a little more cream cheese on top. Top with 2 thin lines Craisins and roll up.
- Cover and refrigerate for about 4 hours.
- Slice into 1 inch slices with a serrated knife. Discard ends and place roll-ups on a platter.

I had to create something for a church activity day that would be a holiday appetizer. I saw the bones of this on Pinterest and adapted it to suit more tastes. Steps:
- 1. In a medium mixing bowl, combine cream cheese and green onion. (I usually make the day before to add flavor depth.)
- 2. Assemble: Spread cream cheese mixture over tortilla, up to about 1 inch of edge. Sprinkle with cranberries. Layer with spinach leaves, only to the edge of the cream cheese. Place two pieces of turkey on top of spinach. Repeat with remaining tortillas.
- 3. Wrap each tortilla individually with plastic wrap, make sure it is tight. Refrigerate for at least two hours.
- 4. To Serve: Cut each tortilla roll into 8-12 slices (depending on how thick you want them). (I use invisible thread/fishing line to cut tortillas, this way they aren't squished. It's a great trick for cinnamon roll type bread too.)
