¼ cup Asian fish sauce
½ cup fresh lime juice
2 tablespoons honey
2 ¼ pounds fresh tuna steaks, cubed
¼ cup extra-virgin olive oil
4 fresh tomatoes, chopped
1 bunch green onion, finely chopped
1 small fresh red chile pepper, seeded and chopped
½ cup fresh cilantro leaves
½ cup fresh basil

Steps:

  • In a small bowl, mix together fish sauce, lime juice, and honey. Place tuna in a large, plastic, resealable bag, and pour fish sauce mixture over the tuna. Refrigerate for 1 hour.
  • Heat 2 tablespoons olive oil in a wok over high heat. When the oil is very hot, almost smoking, place 1/2 tuna in pan; cook and stir for 1 minute, or until desired doneness. Transfer cooked fish to a large bowl. Repeat with remaining oil and tuna.
  • Toss warm fish with tomatoes, green onion, red chile pepper, cilantro, and basil. Serve.

2 (6 ounce) blocks Ahi tuna, sashimi grade
1 teaspoon cayenne pepper
1 teaspoon chili pepper
1 teaspoon ground cumin
1 teaspoon curry powder
1 teaspoon ground cinnamon
1 teaspoon paprika
2 tablespoons of Blackening or Cajun spice (optional)
Thai Mango Jicama Salad:
1 mango, peeled, pitted & sliced into thin strips
1 cup jicama, peeled & sliced into thin strips
1 red bell pepper, seeded & sliced into thin strips
1/2 red onion, peeled & sliced
8 sprigs cilantro
1/2 tsp Red Thai curry paste
1 ounce rice wine vinegar
1 tablespoon honey
1 tablespoon lime juice

Steps:

  • Thai Mango Jicama Salad: In mixing bowl, add all ingredients together; mix well. Cajun Seared Ahi Tuna: 1) Mix spices together until well distributed and roll Ahi blocks in spices until fully encrusted. 2) In a hot Teflon pan, sear tuna until golden brown on all sides (approximately 10 to 15 seconds on each side). 3) Place a small handful of the salad in the middle of the plate. Slice Ahi tuna very thin and fan around the top of the salad. Enjoy!

1/4 cup mayonnaise
1/4 cup sour cream or 1/4 cup yogurt
2 teaspoons green curry paste, Thai-style
1 stalk celery, chopped
1 green apple, cored and chopped
2 tablespoons parsley, chopped
1 (6 1/2 ounce) can tuna in water
salt and pepper

Steps:

  • Stir mayonnaise with sour cream, curry paste, celery, apple and parsley (if using) until evenly combined.
  • Drain tuna and break apart using a fork.
  • Add to mayonnaise mixture and stir until evenly combined.
  • Season with salt and pepper to taste.
  • Serve as a sandwich filling or as part of a salad plate.
  • Can be made up to 24 hours ahead.
  • TIP: Save calories by substituting low-fat mayonnaise and sour cream.
  • I sometime use chopped coriander to replace the parsley.

2 (6 ounce) Yellowfin tuna steaks (about 1inch thick)
1/4 teaspoon salt
1/8 teaspoon black pepper
4 cups napa (Chinese) cabbage, thinly sliced
1 cup cucumber, thinly sliced
1/2 cup matchstick-cut carrots
1/3 cup red onion, thinly sliced
1 navel orange, sectioned and chopped
1 tablespoon sugar
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh lime juice
2 tablespoons rice vinegar
1/2 teaspoon dark sesame oil
1/4 teaspoon Sambal oelek (ground fresh chile paste) or Sriracha (hot chile sauce, such as Huy Fong)

Steps:

  • Heat a grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle fish evenly with salt and pepper. Add fish to pan; cook 2 minutes on each side or until desired degree of doneness. Transfer to a cutting board. Combine cabbage and next 4 ingredients (through orange) in a large bowl. Combine sugar and remaining ingredients in a small bowl, stirring well with a whisk. Reserve 1 tablespoon dressing. Drizzle remaining dressing over salad; toss gently to coat. Divide salad mixture evenly between 2 plates. Cut each tuna steak across the grain into 1/4-inch slices; arrange over salad mixture. Drizzle 1 1/2 teaspoons reserved dressing over each serving.

1/2 cup orange juice
2 tablespoons soy sauce
2 teaspoons sesame oil
2 garlic cloves, minced
2 teaspoons ginger, minced
2 tablespoons oyster sauce
1 pound tuna steak
7oz bag flat rice noodles
2 cups orange sections
2 green onions, chopped
1/4 cup fresh cilantro, chopped
1/4 pound snow peas

Steps:

  • Whisk orange juice, soy sauce, sesame oil, garlic, ginger and oyster sauce in a bowl. Place tuna in a shallow plate and pour 4 tablespoons of the liquid mixture over both sides. Place medium sized pan on high heat to sear tuna on both sides. Soak noodles in hot water for ten minutes until tender. Drain, then transfer to a large bowl. Add remaining ingredients including thinly sliced tuna and toss.

2 tablespoons chopped onions
2 celery ribs, chopped
1 green apple, cored and chopped
3 tablespoons thai green curry paste
3 tablespoons chopped fresh cilantro
1/3 cup mayonnaise
1/4 cup reduced-fat sour cream

Steps:

  • Place drained, flaked tuna in a bowl.
  • Add the onion, celery, and apple; toss.
  • Stir together the curry paste, cilantro, mayo and sour cream.
  • Pour over tuna salad and mix everything together well.
  • Chill at least 2 hours before serving.
