1 cup water
1 cup rice vinegar
1 cup sugar
2 teaspoons fresh ginger root, minced
1 teaspoon garlic, minced
2 teaspoons hot chile pepper, minced
2 teaspoons ketchup
2 teaspoons cornstarch

Steps:

  • Pour water and vinegar into a saucepan, and bring to a boil over high heat. Stir in sugar, ginger, garlic, chile pepper, and ketchup; simmer for 5 minutes. Stir in cornstarch. Remove saucepan from stove to cool. Then transfer to a bowl, cover, and refrigerate until needed.

THAI SWEET CHILI SAUCE

Similiar to Mae Ploy. Additions may be added...ginger, cilantro, etc. Use for dipping chicken fingers, spring rolls, wantons, Crab Ragoon, grilled chicken, fried calamari...and the list goes on. (Note: Traditionally, Thai Sweet Chili sauce is not thickened with starch, but rather cooked into a syrupy consistancy. There's some benefit to thickening with starch and using less sugar.)

3 garlic cloves, peeled
2 hot red peppers (jalapeno, serrano, thai, cayenne, etc.)
1/2 cup sugar
3/4 cup water
1/4 cup vinegar
1/2 teaspoon salt
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Keeping the seeds makes for a hotter end product, removing less so. Keep in mind it will be hotter the first day and dissipates over time. Resist the urge to taste and redip your spoon. Enzymes in saliva breaks down starches and will eventually make it watery -- that is in my humble opinion.
  • In a food processor blend together the garlic, red peppers, sugar, water, vinegar and salt into a puree; transfer to a sauce pan.
  • Bring mixture to a boil and simmer until the mixture begins to thicken and garlic and peppers bits slightly soften, about 3 minutes.
  • Combine cornstarch and water to make a slurry. Whisk into the sugar/pepper mixture. Bring to a boil and cook for 1 minute. Cool completely before storing in refrigerator.

Here's my take on Thai-style sweet chili sauce, or Nam Jim. It's sort of a hybrid between the cooked and fresh versions. If you can't find Thai bird's eye chilies, use any other combination of fresh, preserved, and/or dried chilies. Things like jalapeno, red Fresno, or Serrano chilies work great, as does habanero. This sauce is great on grilled chicken and pork.

½ cup water
½ cup white distilled vinegar
2 tablespoons fish sauce
½ cup brown sugar
1 tablespoon ketchup
2 teaspoons sambal chili sauce
1 ½ teaspoons cornstarch
6 cloves finely crushed garlic
2 tablespoons finely minced Thai chili peppers (bird's eye peppers)
1 tablespoon fresh lime juice

Steps:

  • Place 1/2 cup cold fresh water and vinegar in a saucepan. Whisk in Asian fish sauce, brown sugar, ketchup, sambal chili sauce, and cornstarch. Whisk until cornstarch disappears. Place over medium-high heat and bring up to a simmer stirring occasionally. As it bubbles, it will start to thicken up. Remove pan from heat.
  • Whisk garlic and chili into hot mixture. Add fresh lime juice; whisk again. Allow mixture to cool to room temperature before checking for seasonings.
  • If not using immediately, transfer to a glass jar with a lid. Refrigerate.

This is the first recipe I made up all on my own with inspiration from a sweet potato dumpling appetizer I had at a nearby restaurant.

2 sweet potatoes, peeled
1 pound chorizo sausage
½ cup grated Cheddar cheese
2 tablespoons chopped fresh cilantro
1 (16 ounce) package wonton wrappers
1 cup peach jam
1 cup sweet Thai chili sauce
2 tablespoons chopped fresh cilantro
2 teaspoons vegetable oil, or as needed

Steps:

  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes. Let cool.
  • Drain sweet potatoes, mash, and let cool until safe to handle, 10 to 15 minutes.
  • Combine mashed sweet potatoes, chorizo, Cheddar cheese, and cilantro to make the filling. Set up a prep area for dumplings, including a tray to cool them on and a bowl of water to fasten them.
  • Place 2 teaspoons of filling onto a wonton wrapper, wet the outside edge, and seal. Place dumpling on the tray. Repeat with remaining filling and wonton wrappers. Refrigerate dumplings for 30 minutes before sealing in a zip-top bag to freeze.
  • Combine peach jam, Thai chili sauce, and cilantro to make the dipping sauce.
  • To cook the dumplings from frozen, first heat oil in a pan over medium- to medium-high heat. Add dumplings and a little water; pan-fry until heated through, 10 to 12 minutes.

I am not a huge fan of the peanut sauce that most Thai pizzas tend to use as a base, but love a small amount of peanutty flavor mixed with the sweetness of Thai Sweet Chili Sauce, so I came up with this pizza-pie!

1 pizza crust (I used 1/3 of my Pizza Dough Perfection)
1 -2 tablespoon olive oil
1/4-1/2 cup sweet chili sauce (mae ploy)
1 pinch red pepper flakes (optional)
1/4 cup Italian cheese blend
3/4 cup sharp cheddar cheese
1/8 cup broccoli floret (blanched)
1/8 cup green onion, thinly sliced on bias
1/8 cup carrot, thinly sliced on bias (or you can julienne or grate it)
1/8 cup red bell pepper, julienned (or small dice)
1/4-1/2 cup chicken breast (cooked and sliced very thinly, I used a bit of Peanut Sauce Peanut Sauce brushed on before roastin)
2 tablespoons sesame seeds
1 tablespoon cilantro, whole leaves (or minced if you prefer)
1 teaspoon hot chili sauce (siracha (optional)

Steps:

  • Preheat oven and pizza stone to 550* (or as high as your oven will go, may only be 500*).
  • Prepare your dough to top. You can prebake your crust for a minute or two after brushing with olive oil, or you can do as I do and just top the dough since I bake at such a high heat.
  • Brush crust with olive oil. Spread on Thai Sweet Chili Sauce as thick or thinly as you like. (It is very sweet with just a hint of heat, I happen to love sweet and savory together, so I use a lot and add a pinch or two or crushed chili flakes).
  • Layer on italian cheese and half of the cheddar. Add veggies, chicken, remaining cheddar. Sprinkle on sesame seeds allowing some to get on the untopped crust as well.
  • Working quickly so as not to let the oven temperature drop, transfer pizza to pizza stone using a pizza peel, cookie sheet, or parchment paper.
  • Bake for 8-10 minutes depending on the amount of toppings you added and how done you like your crust. If you have never baked a pizza at this high of heat before, you should DEFINITELY watch it like a hawk the first few times so you don't burn it. I have been told (and agree) that the high heat gives you more of a pizzaria-style pie!
  • Remove from oven and allow to cool for a minute. Drizzle with siracha and sprinkle with cilantro if desired.

I created this recipe to make Thai Chicken Wings this weekend, and it was great! Use this sauce in any of your Thai recipes asking for Sweet Chili Sauce. This recipe is medium hot, so use the chilis according to your taste! I also use it on my sushi, egg rolls, and spring rolls, and it is incredible!

2 tablespoons sambal oelek or 2 tablespoons chili peppers
1 cup rice vinegar
2 teaspoons salt
1/3 cup sugar

Steps:

  • In a small pan add the first 6 ingredients together, over low heat.
  • Stir constantly until mixture thickens to a syrupy consistency, about 5 minutes once it starts to simmer. It reduces quite a bit.
  • Mix well, and let sit until hot.
  • Mix the cornstarch and water together in a small bowl and add to the sauce. Mix well. Let cook until it starts to thicken, then remove from heat.

It was sooo fun and our efforts were served to us in the Pinnacle Restaurant on board the Statendam cruise ship. The menu was: Starter - Dungeness crab cakes with Thai sweet chili sauce and marinated cucumbers. Main course - Chicken with fresh apricots, ginger and cracked almonds - served with a custard sauce. (Vegetables on the side) Two Desserts - Grand Marnier Chocolate volcano cake or Vanilla souffle Several choices of white and red wines. 1/3 cup celery, finely diced
1/3 onion, finely diced
1/3 red bell pepper, diced
1 cup dungeness crabmeat, picked over and well drained
1 egg
1/2 cup mayonnaise

1/4 teaspoon Tabasco sauce
1 tablespoon chives, chopped
1/4 teaspoon thyme
1/2 teaspoon garlic, minced

1/4 ounce garlic, minced
1/2 fluid ounce white wine vinegar
2 fluid ounces lime juice, fresh
12 fluid ounces sake
4 fluid ounces heavy cream
12 fluid ounces unsalted butter, cold and cut in chunks
2 fluid ounces Thai sweet chili sauce
salt and white pepper
1 cucumber, shaved on spiral slicer (or sliced thinley on mandoline)
1/2 quart vinegar, white
1/2 cup sugar

  • CRAB CAKES.
  • Mix all ingredients well and adjust seasoning to taste. Use icecream scoop to shape into cakes; bread with panco crumbs.
  • Place cakes on sheet pans sprinkled with dry panko crumbs; wrap tightly and store in the refrigerator until ready to cook.
  • THAI SWEET CHILI SAUCE.
  • In a heavy sauce pan over medium high heat, combine ginger, garlic, vinegar, lime juice and sake. Reduce to a light syrup (90%), add cream and reduce to 60% over medium heat, being careful not to scorch. Reduce heat to low and gradually whip in the cold butter chunks. Whisk in chili sauce, salt and pepper.
  • MARINATED CUCUMBERS.
  • Mix all the ingredientes together bring to a boil, remove from heat and chill.
  • ASSEMBLY.
  • Saute crab cakes in a non stick saute pan until golden on each side and heated through; drain on paper towels.
  • Arrange crab cakes on plate, drizzle with chili sauce.
  • Pile high with marinated cucumbers, sprinkle with chopped chives; or alternately serve the marinated cucumbers beside the crab cakes on the plate.

1 pound medium or large shrimp, shelled and de-veined
3 pieces scallions, thinly sliced
2 cloves medium garlic cloves, minced or grated
1 pieces jalapeño pepper, seeded and minced
1 handful fresh cilantro leaves and tender stem
1 piece Finely grated zest of 1 lime
1 pinch Kosher salt
1 tablespoons mayonnaise
2 tablespoon cornstarch
1 piece large egg white
1/4 - 1/2 cup panko-style breadcrumb
1 Peanut or canola oil, for frying
1 sweet chili sauce

Steps:

  • 1. Coarsely chop shrimp into 1/2-inch pieces. Set aside. Reserve a few tablespoons of sliced scallion greens for serving.
  • 2. Combine garlic, jalapeño, remaining scallions, cilantro, lime zest, and a large pinch of salt in the bowl of a food processor. Pulse until everything is finely minced. Add half of the shrimp, the mayo, the cornstarch, and the egg white. Pulse until the mixture forms a coarse paste, about 5 or 6 pulses. Add the remaining shrimp and pulse two or three times to combine everything. Some of the shrimp will be chunkier.
  • 3. Transfer the mixture to a bowl and add 1/4 cup of the panko breadcrumbs. Fold in with a spatula or your hands. The mixture should be soft and should just hold its shape if you form a ball. If it's too soft, add more breadcrumbs a little at a time until a ball just holds together. It will stiffen up more when it gets cold. Chill mixture for at least 30 minutes and up to a day.
  • 4. Once chilled, use wet hands and a tablespoon (or portioning scoop) to form the mixture into bite-sized patties. Transfer to a large plate as you go. When all the patties are formed, heat a few tablespoons of oil in a large skillet over medium high heat until shimmering. Fry patties in batches until golden brown and cooked through, turning once, 3 to 4 minutes total.

We have an abundance of peppers (of all sorts) growing wonderfully in our garden, so I came up with this wonderful medium heat level sauce (adjustable) that went great as an accompiment with our broiled cod fish fillets. Use it for any recipe calling for Thai chili sauce. Also great as a warm drizzle over a light salad (or how about over ice cream?). This is also a great canning or OAMC recipe! Great for gift giving/gift baskets. Recipe doubles, triples, etc. quite easily, just needing longer time to reduce down.

12 fresh Thai chiles, Dragon's eye, stems cut off and seeded (adjust seeds to your heat liking)
2 serrano peppers, chopped (seeded if desired, or jalapeno)
1 green onion, chopped
1/2 cup rice vinegar
1/4 cup apple cider vinegar
2 teaspoons sesame oil (or peanut oil)
1 teaspoon salt
1/4 cup sugar
1/2 cup honey
2 garlic cloves, peeled and smashed

red food coloring (optional)

Steps:

  • To a small saucepan, add all ingredients and stir to combine. Heat and gently simmer over med-low heat, stirring occasionally, until reduced by half or when it is the consistency of a thick maple syrup, about 15-20 minutes. Be sure to keep an eye on it so it does not overcook or burn.
  • Remove from heat, let cool slightly, then use an immulsion blender or a mini food processor to chop everything up 'fine'. (you can also do this halfway thru the cooking process, then again at the end of cooking). If using, add food coloring to show level of heat (dark red being very hot).
  • Serve warm over fish, pork, chicken, vegetables, etc. Cover and refrigerate any extra. It will last 6 months or more in the fridge. This will get hotter the longer it is stored!
  • CANNING: PLEASE follow your canning booklet for sterilization instructions. Using 4 oz jars (a little sauce goes a long way), hot pack in boiling water bath for 10 minutes. Stored, it should last up to 2 years.

1 tablespoon thinly sliced green onion
1 tablespoon asian fish sauce

1 lb ground chuck (80% lean)
1/4 cup thinly sliced green onion
1 tablespoon cilantro or 1 tablespoon sweet basil
1 tablespoon finely chopped Thai red chili peppers or 1 tablespoon jalapeno
1 teaspoon asian fish sauce
1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 bunch Thai basil
12 wooden skewers, soaked in water for at least 30 minutes

Steps:

  • Mix all the ingredients for the sauce in a small bowl until the sugar has dissolved; set aside.
  • In a large bowl, gently combine the ground chuck with the rest of the filling ingredients.
  • Shape a tablespoon of the filling into a small log. Wrap 1 basil leaf around the beef and thread onto a skewer. Repeat until all of the filling is gone.
  • Clean and oil the cooking grate. Grill the rolls until the filling is fully cooked and slightly firm, about 6 to 8 minutes, turning once during cooking. Serve immediately with the dipping sauce. An alternate method would be to bake or pan fry.

1 pound (500g) medium or large shrimp, shelled and de-veined
3 scallions, thinly sliced
2 medium garlic cloves, minced or grated
1 jalapeño pepper, seeded and minced
Large handful fresh cilantro leaves and tender stems (plus extra for garnish)
Finely grated zest of 1 lime
Kosher salt
1 tablespoon (15ml) mayonnaise
2 tablespoons (20g) cornstarch
1 large egg white
1/4 to 1/2 cup (100 to 200g) panko-style breadcrumbs
Peanut or canola oil, for frying
1 recipe Sweet Chili Dipping Sauce (see note)

Steps:

  • Coarsely chop shrimp into 1/2-inch pieces. Set aside. Reserve a few tablespoons of sliced scallion greens for serving.
  • Combine garlic, jalapeño, remaining scallions, cilantro, lime zest, and a large pinch of salt in the bowl of a food processor. Pulse until everything is finely minced. Add half of the shrimp, the mayo, the cornstarch, and the egg white. Pulse until the mixture forms a coarse paste, about 5 or 6 pulses. Add the remaining shrimp and pulse two or three times to combine everything. Some of the shrimp will be chunkier.
  • Transfer the mixture to a bowl and add 1/4 cup of the panko breadcrumbs. Fold in with a spatula or your hands. The mixture should be soft and should just hold its shape if you form a ball. If it's too soft, add more breadcrumbs a little at a time until a ball just holds together. It will stiffen up more when it gets cold. Chill mixture for at least 30 minutes and up to a day.
  • Once chilled, use wet hands and a tablespoon (or portioning scoop) to form the mixture into bite-sized patties. Transfer to a large plate as you go. When all the patties are formed, heat a few tablespoons of oil in a large skillet over medium high heat until shimmering. Fry patties in batches until golden brown and cooked through, turning once, 3 to 4 minutes total.
  • Serve warm, scattered with cilantro and finely sliced scallions along with dipping sauce.

Sweet and a little spicy. Our basic condiment in the house. Very quick and simple to make. Based on the Lemon Grass Restaurant's cookbook "The Best of Vietnamese & Thai Cooking". We always have a jar on hand in the frig. Many different ground chili paste nomenclatures. If unsure, read the ingredients: red chili peppers, salt, vinegar, and sesame oil are basic to all of them. Usually in a clear plastic jar with a green or red plastic lid.

3 tablespoons hot ground chili paste
2 teaspoons minced garlic
1/2 cup rice wine vinegar
2/3 cup water
2/3 cup sugar

  • Combine everything, except cilantro, in a small sauce pan and mix.
  • Once blended, bring to a boil, reduce heat and simmer about 5 minutes.

3 large garlic cloves, peeled
2 red Jalapeño or Serrano peppers, deseeded (See note #1 below.)
1/2 cup white distilled vinegar
½ cup sugar
1 1/2 cup water
½ tablespoon salt
2 tablespoon cornstarch or potato starch (See note #2 below.)
4 tablespoons water

Steps:

  • In the blender, purée together all the ingredients, except for the last two. Transfer the mixture to a saucepan and bring to a boil over medium-high heat. Lower the heat to medium and simmer until the mixture thickens up a bit and the garlic-pepper bits begin to soften, about 3 minutes. Combine the cornstarch and water to make a slurry. Whisk in the cornstarch mixture and continue to simmer one more minute. The cornstarch will help the sauce to thicken slightly thereby causing nice suspension of the garlic-pepper bits; otherwise, you get a thin sauce with all the little pieces floating on the surface. Let cool completely before storing in a glass jar and refrigerate. Notes 1. I keep the chili seeds in, but your mileage may vary, so adjust the heat accordingly. More seeds = more heat. Keep in mind, however, that the heat is the strongest the day you make the sauce and starts to dissipate gradually. This sauce keeps for a long time, and after a couple of weeks, you can't even taste the pepper. 2. If you want to make a large batch of this sauce (more than half a gallon) - and you certainly should since this sauce lasts a long time - the best thickener to use is pre-gelatinized or "pre-gel" starch which is both acid- and heat-stable (corn or potato starch is not). It's marketed under the brand name Clearjel®. Your chilli sauce will remain viscous and maintain the nice suspension for the entire duration of its shelf life when thickened with pre-gelatinized starch. Traditionally, Thai sweet chilli sauce is not thickened with starch; the syrupy consistency is achieved through cooking the sauce containing lots of sugar down until it's thick enough to create a good suspension of the garlic-pepper bits. However, if you notice, bottled Thai sweet chilli sauce normally contained a starch thickener. You can go either way. I personally prefer the version that contains less sugar which is this one.

A very easy homemade Thai sauce that is sweet with a nice little bit of heat. This sauce is great for dipping and cooking both. While not what we call hot you can cut the red pepper flakes in half or omit the Sriracha to cut the heat. This recipe comes from Life Tastes Like Food.

3/4 cup sugar
1/4 cup rice vinegar
1/4 cup water
1 tablespoon garlic, minced (5-6 cloves)
1 teaspoon crushed red pepper flakes
1 teaspoon sriracha sauce
1 tablespoon water
1 teaspoon cornstarch (for thinner up to a tablespoon for thick)
1/2 teaspoon salt
1/2 teaspoon fresh ginger (optional)

Steps:

  • In a pot over medium-high heat mix the 1/4 cup water, rice vinegar and sugar; when mixture starts to boil, add the garlic and crushed red pepper flakes. Bring the boil down to a simmer and let it simmer for another couple of minutes (this will make sure all the flavors get infused).
  • Add the Sriracha and ginger if using.
  • In a small bowl, mix the cornstarch and tablespoon of water until the cornstarch is dissolved.
  • Bring the sauce to a low boil again and add the salt and cornstarch/water mixture.
  • The sauce will begin to thicken up immediately. Cook, while stirring constantly, until the mixture reaches desired thickness, about 3-5 minutes.
  • Let the sauce cool and then use as a dipping sauce or store in refrigerator till ready to use. **Storing does cause it to loss heat so recommend eating the same day if you like the heat**.

1 garlic clove, minced
6 dried Thai red chili peppers
1/2 cup water
1/2 cup boiled apple cider syrup
1/2 cup sugar
1/2 cup cider vinegar (5% acidity)
1/4 teaspoon kosher salt
2 tablespoons cook-type Clear Jel (NOT Sure-Jel)
1/4 cup water

Steps:

  • In a small blender pulse the garlic, peppers, water and cider syrup until finely minced.
  • Pour into a saucepan with the sugar, vinegar and salt.
  • Bring to a simmer and cook 5 minutes.
  • Meanwhile, whisk together Clear Jel and ¼ cup water in a small bowl.
  • Bring chili mixture to a boil and whisk in the Clear Jel.
  • Stir constantly for one minute.
  • Remove from heat.
  • Fill jar(s) with mixture, leaving 1/2" headspace.
  • Process for 15 minutes in a waterbath, or refrigerate up to 2 weeks.

2 ounces fresh red chilies, roughly chopped (remove seeds if less heat is desired)
3/4 cup sugar
1 cup white vinegar
4 ounces sultanas, chopped (white raisins)
1 -2 clove garlic, finely chopped
2 teaspoons finely chopped fresh ginger
1/2-1 teaspoon salt (to taste)

Steps:

  • Place chilies in a food processor with half the vinegar and process until the chilies are finely chopped.
  • Do not be concerned if the chili seeds remain whole.
  • Combine the chili and vinegar mixture with the remaining vinegar, and all other ingredients, in a small stainless steel saucepan (take care adding the salt- you can always add more later if you wish).
  • Stir over low heat until sugar dissolves, bring to the boil briefly, then reduce temperature to allow the mixture to simmer gently until the chilies and sultanas are soft, about 15 to 20 minutes.
  • When cool, puree until almost smooth.
  • Pour into a suitably sized sterilised bottle and seal.
