2 tablespoons cornstarch
1 ½ tablespoons water
6 cups chicken broth
2 ½ tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon rice vinegar
1 tablespoon chile-garlic sauce (such as Sriracha®), or more to taste
2 teaspoons vegetable oil
2 teaspoons minced fresh ginger root
2 cloves garlic, minced
1 teaspoon ground coriander
1 (16 ounce) package thick rice noodles
1 cup sliced zucchini
1 cup sliced red bell pepper
2 cooked chicken breasts, cut into 1-inch cubes
¼ cup crushed peanuts
¼ cup chopped fresh cilantro

Steps:

  • Stir cornstarch and water together in a small bowl until smooth. Pour chicken broth into a large pot and stir cornstarch mixture, soy sauce, fish sauce, rice vinegar, chile-garlic sauce, vegetable oil, ginger, garlic, and coriander into broth. Cover and bring to a boil.
  • Place rice noodles in the boiling sauce, reduce heat to medium, and simmer until noodles are tender, 5 to 10 minutes. Stir zucchini, red bell pepper, and chicken into sauce. Bring back to a boil, cover, and simmer until vegetables are just become tender, about 5 more minutes.
  • Remove from heat and let stand, covered, for 5 minutes to thicken. Serve garnished with crushed peanuts and cilantro.

1 carton (32 oz) Progresso™ chicken broth
1 1/2 cups water
2/3 cup creamy peanut butter
3 tablespoons soy sauce
2 tablespoons honey
1 to 2 tablespoons Sriracha sauce
1 tablespoon olive oil or toasted sesame oil
1 teaspoon ground ginger
1 lb uncooked linguine
1 medium red bell pepper, seeded and sliced
1 medium orange or yellow bell pepper, seeded and sliced
1 cup shredded carrots
2 cups shredded deli rotisserie chicken
Juice from 1/2 small lime
3 tablespoons chopped fresh cilantro
3 tablespoons chopped roasted peanuts
3 tablespoons thinly sliced green onions

Steps:

  • In very large stock pot, heat chicken broth and water to boiling over medium-high heat. Add peanut butter, soy sauce, honey, Sriracha sauce, oil and ginger; stir until evenly incorporated.
  • Rinse linguine under water. Break in half, and add to pot, submerging completely, along with bell peppers and carrots. Reduce heat to medium-low; cook 13 to 15 minutes, stirring occasionally, until linguine and veggies are tender and sauce is reduced and thickened.
  • Remove from heat; stir in chicken and lime juice. Top with cilantro, peanuts and green onions before serving.

8 oz pad thai noodle, or noodles of your choice
2 tablespoons sesame oil, divided
2 eggs
1 chicken breast, diced
¼ cup shallot
¾ cup pad thai sauce, we used 2 tablespoons each of fish sauce, rice vinegar, soy sauce, brown sugar, lime juice, and sriracha
1 cup bean sprout
½ cup peanuts, crushed, plus more for garnish
¼ cup green onion, plus more for garnish
¼ cup fresh cilantro, plus more for garnish

Steps:

  • Cook the noodles according to the package instructions.
  • Toss with 1 tablespoon of sesame oil and set aside.
  • Add ½ teaspoon of sesame oil to a pot with the lightly beaten eggs. When the eggs are finished cooking, set aside.
  • Pour the remaining ½ tablespoon of sesame oil into the pot and add the diced chicken breast. Cook until no longer pink in the middle, then set aside.
  • Add the shallots to the pot and cook until lightly browned and fragrant. Then, add the noodles, eggs, and chicken back into the pot.
  • Pour in the pad Thai sauce and toss to coat.
  • Top with the bean sprouts, crushed peanuts, green onions, and cilantro, and stir until well blended.
  • Dish up and garnish with extra peanuts, green onions, and cilantro.

12 ounces linguine
4 cups vegetable broth
1/2 cup water
4 cloves garlic, thinly sliced
I tablespoon tamarind paste
1 tablespoon soy sauce (and/or fish sauce, if desired)
1/2 teaspoon red pepper flakes
2 inches of a ginger root, sliced into 1/4 inch slices
1 large carrot, peeled and cut in 1/4 inch by 2 inch pieces
1 red bell pepper, cut in 1/4 inch by 2 inch pieces
3 green onions, sliced in half lengthwise and then in 2 inch pieces
1 cup roasted salted peanuts
2 tablespoons peanut butter
One small bunch of cilantro, diced (flat leaf parsley will work in a pinch)
Juice of two limes
Optional garnishes:
Chopped peanuts
Mung bean sprouts

Steps:

  • Place all ingredients except cilantro and lime juice and garnishes in a large stockpot. Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until pasta is al dente and almost all liquid has evaporated - I left about an inch of liquid in the bottom of the pot - but you can reduce as desired . Season to taste with salt and pepper , stirring pasta several times to distribute the liquid in the bottom of the pot. Remove slices of ginger and stir in cilantro and lime juice. Dish up the pasta and then sprinkle on garnishes as desired.

1/2 cup water
4 cloves garlic, thinly sliced
2 heaping teaspoons Thai yellow curry paste
1 tablespoon soy sauce
1 tablespoon pad thai sauce
3/4 teaspoon red pepper flakes
2 inches ginger root, grated or chopped
1 large carrot, peeled and cut in 1/4 inch by 2 inch pieces
1 bell pepper, cut 1/4 inch by 2 inch pieces (optional)
3 green onions, sliced lengthwise and cut in 2-inch pieces (red onion chopped also works)
1 cup roasted salted peanuts
3 tablespoons peanut butter (we used chunky)
1 teaspoon salt
1 cup Napa cabbage, thinly sliced
1 bunch basil, roughly torn or cut
Juice of one lime
Peel of one lime

Steps:

  • Place all ingredients except basil, Napa cabbage, lime juice and half the lime peel in a large stockpot. Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. cook until pasta is al dente and almost all liquid has evaporated. Stir in basil, lime juice, remaining lime peel, and Napa cabbage. We have successfully tried this recipe with diced cooked chicken added during the last two minutes of cooking.

SPICY THAI ONE POT

This recipe actually came from the side of a bag of Jasmine rice. My family likes it well enough that it has become a semi-regular, quick and easy weeknight meal. As written, it has a nice kick, but won't melt your head. Adjust the cayenne pepper to your liking.

2 tablespoons soy sauce
1/4 teaspoon cayenne pepper
1 lb meat, diced (chicken, beef, turkey, sausage... any will work)
1 medium red bell pepper, seeded and chopped
3/4 cup jasmine rice
3 green onions, chopped (tops included)
1 tablespoon minced cilantro

Steps:

  • Combine water, soy sauce and cayenne pepper. Heat large wok or fry pan over high heat (Spray with cooking spray if using a "drier meat" like poultry). Add meat and stir fry for 4-5 minutes or until browned.
  • Add bell pepper. Stir fry for one more minute.
  • Mix in rice and soy sauce mixture. Bring to a boil, then reduce heat, cover and simmer for 20 minutes or until liquid is absorbed.
  • Mix in green onions and cilantro. Serve.

1 tablespoon minced peeled fresh ginger (from a 2-inch piece)

1 1/4 cups jasmine rice
1 1/4 cups unsweetened full-fat coconut milk
2 long sweet red peppers, thinly sliced (1/3 cup)
Coarse salt
16 small tomatoes, cut into wedges (4 cups)

1 cup packed fresh cilantro leaves, torn if large

Steps:

  • Combine lime juice, 1 to 2 tablespoons fish sauce, and brown sugar in a bowl; stir until sugar is dissolved, then stir in 1/2 cup shallots.
  • Heat oil in a large high-sided skillet over medium-high. Add turkey, ginger, garlic, and remaining 1 3/4 cups shallots. Cook, stirring to break up turkey, until browned, about 9 minutes. Add rice; cook, stirring, 1 minute. Add remaining 1 tablespoon fish sauce, scraping up browned bits from bottom of pan.
  • Add coconut milk, red peppers, 1 1/2 teaspoons salt, and 1 1/4 cups water. Bring to a simmer (do not let boil); cover. Lower heat and gently simmer, stirring occasionally, until rice is tender, about 15 minutes.

32 ounces chicken stock

Steps:

  • Heat water and chicken stock in a large stockpot and bring to a boil. Reduce heat to medium and add in peanut butter, soy sauce, honey, chili sauce, oil, garlic, red pepper and ginger, and stir until everything is evenly combined. Rinse rice noodles under water, then break them in half and submerge completely in boiling stock. Add carrots, green or yellow pepper and half of green onions to the pot, and reduce the heat to medium-low. Cook for 12-15 minutes or until everything is tender and the sauce has thickened. Remove pot from heat and stir in chicken and lime juice. Garnish with remaining green onions and serve hot.

Reduce the heat to low and simmer, without removing the lid, until the rice is just done, about 20 minutes.
