A traditional Thai dish that goes over well. Preparation time does not include the 2 hours to marinate the chicken.

bamboo skewer
2 lbs boneless skinless chicken thighs
1/4 cup soy sauce
1 tablespoon honey
2 tablespoons oil
1 tablespoon oil
2 teaspoons dried onion flakes
3/4 cup crunchy peanut butter
1/2 cup coconut milk
1 tablespoon soy sauce
2 tablespoons sweet chili sauce
1/2 cup water
1/4 teaspoon salt

Steps:

  • To prevent scorching, soak bamboo skewers in cold water for at least 30 minutes.
  • Trim off any excess fat and tendons from chicken.
  • Slice chicken into strips about 3/4 inch wide and thread onto skewers and place in a shallow glass dish.
  • Mix the soy sauce, honey, and oil, and pour over the chicken, making sure all of the chicken is coated with the marinade.
  • Cover dish with plastic and refrigerate for at least 2 hours.
  • Sauce: Heat oil in a small pan.
  • Add onion flakes and cook over a low heat for 15 to 30 seconds.
  • Add remaining ingredients, mix well, and cook until heated through.
  • Set aside sauce to await the chicken.
  • Drain the chicken (save the marinade).
  • Cook chicken over a medium to high heat for about 8 minutes on the grill, turning often and brushing with marinade.
  • Serve with the peanut sauce while hot.

½ cup soy sauce
½ cup lemon juice
¼ cup peanut butter
6 cloves garlic, chopped
2 tablespoons curry powder
1 tablespoon brown sugar
1 teaspoon hot pepper sauce
6 (6 ounce) skinless, boneless chicken breast halves, cut into chunks
6 (10 inch) skewers

Steps:

  • Stir soy sauce, lemon juice, peanut butter, garlic, curry powder, brown sugar, and hot pepper sauce together in a large bowl until marinade is well-combined. Place chicken in the marinade and stir to coat. Cover the bowl with plastic wrap and refrigerate 2 hours to overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove chicken from marinade; discard marinade and thread chicken onto skewers.
  • Cook chicken on the preheated grill until juices run clear and chicken is cooked through, about 5 minutes per side.

2 tablespoons vegetable oil
2 tablespoons soy sauce
2 teaspoons tamarind paste
1 stalk lemon grass, chopped
2 cloves garlic, crushed
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon lime juice
1 teaspoon muscovado sugar
½ teaspoon chili powder
2 pounds skinless, boneless chicken breast, cut into strips
20 wooden skewers, soaked in water for 30 minutes
2 tablespoons crunchy peanut butter
2 tablespoons chopped peanuts
1 (14 ounce) can coconut milk
2 teaspoons red Thai curry paste
1 tablespoon fish sauce
1 teaspoon tomato paste
1 tablespoon brown sugar

Steps:

  • Place vegetable oil, soy sauce, tamarind paste, lemon grass, garlic, cumin, coriander, lime juice, muscovado sugar, and chili powder in a blender and process to a smooth paste. In a large bowl, or a large resealable plastic bag, toss chicken strips with marinade. Refrigerate for 1 hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • In a small saucepan, combine peanut butter, peanuts, coconut milk, curry paste, fish sauce, tomato paste, and brown sugar. Cook and stir over medium-low heat until smooth. Keep warm.
  • Thread chicken onto skewers. Grill until no longer pink in the center, 3 to 5 minutes on each side. Serve with peanut sauce.

This is a delicious spicy recipe I found in South Africa Quick & Easy. My family loves it! I use fresh coriander (cilantro). Also, we enjoy spicy food so I throw in an extra Tbs of chilli. Yummy!!

8 -10 chicken thighs
1 onion
2 garlic cloves
1 -2 tablespoon prepared jalapeno chile
1/2 cup roasted peanuts
1 teaspoon salt
fresh ground black pepper
1 teaspoon ground coriander
1 tablespoon vegetable oil
1 cup coconut cream

Steps:

  • Remove and discard chicken bones and skin and place chicken in a casserole. Peel and roughly chop onion and garlic and place in a food processor or blender with chilli, peanuts, salt, pepper and coriander. Whiz to a paste. Heat oil in a frying pan and fry the onion paste for 2-3 minutes until the mixture smells fragrant. Add coconut cream, bring to a boil and pour over the chicken. Cover and bake at 180ºC (350ºF) for about 50 minutes until chicken is cooked.
  • Serve with rice.

2lb skinless chicken breasts
wooden skewers soaked in warm water for 20 minutes
MARINADE:
2 tbsp vegetable oil
2 tbsp soy sauce
2 tsp tamarind paste
1 lemon grass (only the inner tender part) chop roughly
2 garlic cloves, crushed
1 tsp ground cumin
1 tsp ground coriander
1 tbsp lime juice
1 tsp muscovado sugar
1/2 tsp chilli powder
PEANUT SAUCE:
2 tbsp crunchy peanut butter
2 tbsp roasted unsalted peanuts
200ml coconut milk
2 tsp red thai curry paste
1 tbsp fish sauce
1 tsp tomato paste
1 tbsp soft brown sugar

Steps:

  • Cut chicken into strips and then thread onto the wooden skewers. To make the marinade, place all the marinade ingredients into a processor and blend to make a paste. Transfer to a bowl/plate. Add the chicken skewers and toss them making sure the meat is well covered in the marinade. Cover with cling film and refrigerate for 1 hour. To make the peanut sauce, put all the ingredients into a pan and heat gently, stirring continuously until a smooth paste is formed. Grill the chicken under a grill or bbq for 3-5 minutes on each side or until the chicken is cooked. Reheat the sauce, adding hot water if needed, and serve with the chicken satays

The closest to my favorite satay served at my Thai restaurant. Prep is quick- best if left to marinade for a few hours or more. Skewer up for the grill or saute on the stove! I buy the chicken tenderloin strips which are already boned, skinned and a nice size piece without slicing to save time.

1 ½ teaspoons ground coriander
1 teaspoon yellow curry powder
1 teaspoon fish sauce

  • In a medium bowl, stir together the coconut milk, ground coriander, curry powder, fish sauce, and chili oil. Add the chicken breast strips, and stir to coat. Cover, and refrigerate for at least 30 minutes, and up to 2 hours.
  • Preheat an indoor or outdoor grill for high heat. Thread the chicken strips onto skewers. Discard marinade.
  • Grill chicken for 2 to 3 minutes per side, until no longer pink. Time will depend on how thick your strips are. Transfer to a serving plate, and garnish with cilantro and peanuts. Serve with peanut sauce for dipping.

2 boneless chicken breasts
1 teaspoon ground coriander
1 teaspoon ground cumin
2 garlic cloves
1 tablespoon fresh ginger, grated
2 tablespoons fish sauce
1 tablespoon curry powder
1 pinch turmeric powder
1/2 cup coconut milk
3 tablespoons brown sugar
1/2 cup roasted peanuts, crushed (unsalted)
1/2 cup peanut butter
1/2 cup coconut milk
2 teaspoons oil
1 large garlic clove, grated
1 tablespoon onion, chopped
1 tablespoon red curry paste
1 teaspoon fish sauce
4 teaspoons lime juice (to taste)
3 teaspoons sugar
4 tablespoons white vinegar
1 teaspoon sugar
3 tablespoons cucumbers, coarsely chopped
1/2 shallot, finely chopped
1 Thai chile, thinly sliced

Steps:

  • Cut chicken breasts into 2 inch long strips. Lightly pound out with a meat mallet to flatten the strips to a inch thick.
  • For the marinade, combine the ground coriander, ground cumin, chopped garlic, grated ginger, fish sauce, curry powder, turmeric powder, coconut milk and brown sugar to form the marinade. Marinade the chicken overnight or at least 6 hours. Thread the chicken on presoaked skewers and grill on barbeque over fairly high heat. Turn them regularly and brush them liberally with the remaining marinade. Cooking should take between 5 and 10 minutes depending on the heat of the barbecue.
  • For the peanut sauce, in a saucepan, heat the oil on medium/low heat and fry the onions and garlic for 2 minutes. Add the curry paste and cook for another minute. Add the peanuts, peanut butter, coconut milk, curry paste, fish sauce and stir until smooth. Take off the heat and add the lime juice to taste.
  • For the cucumber sauce, combine the sugar, vinegar, cucumber, shallot, chili, and refrigerate overnight.

3 - Chicken breasts cut into strips 1/4 inch thick (or buy pre-cut chicken cutlets)
MARINADE:
1/4 cup light brown sugar
1/4 cup granulated sugar
1/4 cup fresh lime juice
1/4 cup chicken broth
1/3 cup soy sauce
2 TBSP Curry Powder
2 TBSP Crunchy peanut butter
3 cloves minced garlic
1 TSP cayenne pepper (optional)
PEANUT SAUCE:
1 1/2 cups Coconut milk (unsweetened)
1 cup crunchy peanut butter
1/4 cup fresh lemon juice
1/4 cup chicken broth
1/4 cup heavy cream
2 TBSP Molasses or brown sugar
2 TBSP fresh grated ginger
2 TBSP soy sauce
4 cloves minced garlic
Cayenne pepper to taste
GARNISH:
Lime wedges
Chopped cilantro
Crushed cashews

Steps:

  • Mix marinade until sugar is dissolved ( I use a hand blender which works great) pour over chicken and cover with clear wrap. The longer this marinates the better. Remove chicken from marinade and place on skewers, grill until browned on the edges but still jucy brushing with marinade as needed. About 3-4 minutes per side. Squeeze a few drops of lime on the chicken then spoon a nice line of peanut sauce down each piece of chicken, sprinkle with cilantro and crushed cashews. PEANUT SAUCE: Add all the ingredients in a saucepan except the cream, cook over medium heat stirring constantly until it has reduced by 1/4 and looks thick and creamy (about 15 - 20 minutes) transfer to a food processor or container that will allow you to use a hand blender and add the cream as you blend until smooth. This can be prepared a day in advance and kept in the fridge. Allow it to come to room temp before using.

EASY THAI SATAY APPY (BEEF OR CHICKEN)

I guess you expect them to be so commonly used that you discount them at once. Here is the easiest recipe I have ever seen for satay (beef or chicken). All you really have to do is open a can. I love an easy prep, so this caught my eye. (Time does not include time for skewers to soak or satays to marinate)

1 (400 ml) can coconut milk (Thai-Choice)
750 g beef or 750 g chicken, strips
1 teaspoon turmeric powder
1 (290 g) can satay sauce (Thai-Choice)

Steps:

  • Soak bamboo skewers in water for 2 hours.
  • Pierce meat strips onto bamboo skewers. Combine turmeric powder w/350 ml of the coconut milk & marinate for at least 60 min (or longer for more flavor).
  • Grill satays & use the remaining 50 ml of coconut milk & turmeric mixture to baste during grilling. Serve w/heated satay sauce.
  • NOTE: I've entered this recipe as an appy w/1 skewer per person. As an entree to serve 2 persons, I'd increase the amt of meat to get 10 skewers to marinate & keep all other ingredients the same.

1 1/2 lbs boneless skinless chicken breasts or 1 1/2 lbs boneless skinless chicken thighs
1 tablespoon oil
1 onion, chopped
2 cloves garlic, crushed
2 teaspoons curry paste
1 teaspoon ground coriander
1 1/2 cups chicken broth
1 (14 ounce) can coconut milk
1/3 cup peanut butter
1/2 cup dried apricot
3 tablespoons brown sugar, packed
2 tablespoons fish sauce
2 tablespoons lime juice
1 teaspoon salt
2 tablespoons water
1 tablespoon cornstarch
chopped fresh cilantro
cashews or almonds
apples or banana
chutney

Steps:

  • Cut the chicken in 1 in pieces.
  • Spray a large fry-pan or Dutch oven with cooking spray.
  • Sear the chicken until browned on all sides.
  • Remove from pan.
  • Add onions and saute for 5 minutes.
  • Add garlic, and saute for another 2 minutes.
  • Add Curry Paste and Corrinder and cook 1 minute until fragrant.
  • Return the chicken to the pot, and add the next 9 ingred.
  • Stir, and bring to a boil.
  • Reduce to med-low, cover and simmer for 1 hour.
  • Stir cornstarch and water and add to pot.
  • Let cook until thick.
  • Serve over rice with garnishes.
  • Yumpy.

2 pounds chicken (4-6 chicken breasts) chopped into bite size pieces
1 fresh pineapple, chopped into 1" pieces
3 tablespoons olive oil
1/3 cup coconut milk (lite is fine)
1/4 teaspoon cornstarch
1/3 cup crunchy peanut butter
Thai Peanut Pineapple Marinade/Sauce
1/3 cup pineapple juice
1/4 cup soy sauce
1/4 cup brown sugar, packed
1 tablespoons fish sauce
1 tablespoon lime juice
1-2 teaspoons sriracha/Asian hot red chili sauce
1 teaspoon dry basil
1 teaspoon ground garlic
1/2 teaspoon ground ginger
1/4 teaspoon black pepper
Garnish (optional)
Freshly squeezed lime juice
Crushed peanuts
Green onions

Steps:

  • MARINADE: In a medium bowl, whisk Thai Peanut Pineapple Chicken Marinade/Sauce ingredients together. Add 1/4 cup of this Marinade and 3 tablespoons olive oil to a large freezer bag along with chicken. Marinate in the refrigerator 1 hour up to overnight (the longer the better). 2.TO GRILL: (Soak wooden skewers at least 30 minutes in water before grilling) 3.When ready to cook, generously grease grill and heat to medium-high heat. Drain marinade from chicken and thread chicken and pineapple onto skewers. 4.Grill on one side for about 5 minutes or until slightly charred. Flip and grill the other side until chicken is cooked through and slightly charred. 5.TO OVEN BROIL: (Soak wooden skewers at least 30 minutes in water before broiling) Line a baking sheet with aluminum foil and lightly spray with nonstick cooking spray. Add the skewers in a single layer and broil, turning every 5 minutes until cooked through, about 10- 15 minutes depending on thickness of chicken. 6.THAI PEANUT SAUCE: Add reserved Thai Peanut Pineapple Sauce to a small saucepan and whisk in cornstarch and coconut milk. Bring to a boil, reduce heat and simmer for 1 minute. Remove from heat and stir in peanut butter. Sauce/Dip should be thick but spreadable. If sauce is too thick, whisk in some coconut milk or water to reach desired consistency. If too thin, return to a simmer until thickened. Taste and add Sriracha, lime, brown sugar to taste. 7.Brush grilled kebabs with Sauce and use remaining Sauce as a dip OR after brushing with Sauce, whisk in some water to thin Sauce and pour over chicken and pineapple with rice. 8.Garnish with crushed peanuts, green onions and freshly squeezed lime juice (optional) and salt as needed.* 9.Best served with rice. 2 tsp. curry powder
1 tsp. grated fresh ginger
1 tsp. minced garlic
1 tsp. cumin
1/2 c. coconut milk
1 tbsp. grated lemon peel
1/2 tsp. chili powder
PEANUT SAUCE:
1 c. dry roasted unsalted peanuts (or 2 tbsp. peanut butter)
1/3 c. coarsely chopped onion
2 cloves minced garlic
1/2-3/4 c. coconut milk
1/2 tsp. soy sauce
1 tsp. lime juice
Some red pepper flakes
1/2 tsp. minced ginger
1/2 tsp. ground coriander

Steps:

  • Add to a heated skillet: curry powder, ginger, garlic and cumin. Cook over medium heat until curry is slightly browned (1 minute). Add this mixture to coconut milk in a bowl. Add lemon peel. Add chili powder. Add chicken marinate for 30 minutes. Put chicken pieces on skewers, you can also skewer onion pieces, pepper, bamboo shoots, mushroom slices. Grill over hot coals about 4 minutes. Serve with Peanut Sauce for dipping. PEANUT SAUCE: Blend in blender to make paste. Cook over low heat. Stir constantly (around 10 minutes). Serve hot with grilled Satay
