1/2 pound red jalapeño peppers (about 5-6) (seeded and cut in half (wear gloves) )
1 small onion, peeled and chopped
2 cloves garlic, chopped
1/2 cup water
2 tablespoons red wine vinegar
1 teaspoon lime juice
salt and pepper to taste

Steps:

  • Preheat oven to 425˚F.
  • Add the jalapeños, onion, and garlic to a roasting pan.
  • Roast in a preheated oven until the vegetables are soft, about 30 minutes. Stir half way through so the vegetables cook evenly. Remove the pan from the oven and let it cool for 5-10 minutes.
  • Add the vegetables to a food processor or blender. Add the red wine vinegar, lime juice, water, and a dash of salt and pepper. Puree until smooth.
  • Transfer the hot sauce to a glass bottle or canning jar. Store in the refrigerator for up to 4 weeks or freeze for longer storage. Makes about one cup.

A tremendous hot sauce that will spice up sandwiches, marinades, vegetable dishes -- just about anything! Jalapenos are boiled, then blended smooth with canola oil, salt and pepper.

1 ¼ pounds fresh jalapeno peppers
2 tablespoons canola oil
salt and pepper to taste

Steps:

  • Set aside 1 jalapeno pepper. Cut the stems off the rest; slice in half lengthwise, and remove the seeds.
  • Place all of the peppers in a large pot of boiling water. Boil peppers about 15 minutes. Reserve about 2 tablespoons of boiling water, and drain the rest.
  • Cut the stem off the remaining whole pepper, and place all of the the peppers into a blender. Pour in reserved water and canola oil, and season with salt and pepper. Blend until smooth and creamy. Serve hot or chilled.

4 -6 fresh jalapeno peppers
2 medium tomatoes
1/2 medium onion
2 garlic cloves
1/2 teaspoon salt

Steps:

  • Slice onion into 1/2 inch slices.
  • Place peppers, onion slices and whole tomatoes on a foil lined baking sheet. Roast in a 300 degree oven for approximately 20 minutes or until items show browning or slight charring. Blend half of the peppers, 1 tomato and garlic cloves in a blender (low speed). Add remaining peppers, onion slices, tomato and salt. Use lowest blender speed to blend into a chunky salsa. Pour into bowl and serve with tortilla chips. Heat index will vary by strength of peppers. Very useful to spice up meat dishes or soups. Keeps well in fridge for 7-10 days.

Number Of Ingredients 6

5-6 jalapeños (depending on heat and personal preference), stemmed, seeded, coarsely chopped
4 garlic cloves, peeled
5 tablespoons fresh lime juice
1 teaspoon kosher salt
1/2 cup neutral vegetable oil (such as grapeseed)
3/4 cup (packed) fresh cilantro leaves with tender stems

Steps:

  • Pulse jalapeños, garlic, lime juice, and salt in a blender or food processor until puréed. With motor running, slowly drizzle in oil until a thick sauce forms. Add cilantro and pulse a few times until chopped and incorporated. Taste and add more jalapeño, if necessary.

  • Sauce can be made up to 3 days in advance and refrigerated.

1/2 cup minced onion
3/4 teaspoon salt
2 cups water
1 cup distilled white vinegar

Steps:

  • In a med sauce pan over hight heat, combine oil, peppers, garlic, onion and salt. Saute for aprox. 4 minutes. Add the water and cook for 20 minutes, stirring often. Remove from heat and cool to room temperature. Transfer mixture to a food processor or use a hand blender to puree until smooth, add vinegar and continue to process until blended.

This is a really good salsa/sauce that will put bottled versions to shame. My best-friend's SIL in Arlington, TX made this for a party once and I had to get the recipe. It makes alot - so it's good for a gathering - or as we use to say in TX - for a "throw-down"!

3/4 cup oil (I use a canola-blend)
4 teaspoons salt
3/4 cup white vinegar
5 teaspoons Accent seasoning
5 -8 jalapenos, more or less to taste
1 whole white onion, chopped
5 cloves chopped garlic
3 -4 whole tomatoes, chopped
2 (28 ounce) cans diced tomatoes
chopped fresh cilantro

Steps:

  • Heat oil, vinegar, salt and accent (first 4 ingredients) just enough to dissolve salt and accent- do not boil.
  • (If it boils-- you'll have to start over) Chop remaining ingredients separately.
  • I have found that it doesn't work well if you dump everything in processor at once.
  • In large bowl, pour vinegar/salt mixture over salsa and mix well.
  • Best if let set overnight for flavors to blend.
  • Enjoy with chips, eggs, whatever you like salsa with.

20 fresh jalapeno peppers, sliced

2 cups water
1 cup distilled white vinegar

Steps:

  • In a medium glass or enamel lined sauce pan over high heat, combine oil, peppers, garlic, onion and salt; saute for 4 minutes. Add the water and cook for 20 minutes, stirring often. Remove from heat and allow mixture to cool to room temperature.
  • Transfer the mixture to a food processor and puree until smooth. With the processor running, slowly add the vinegar.
  • Pour into a sterilized jar with a tight lid. This sauce will keep for 6 months when stored in the refrigerator.
