TEXAS RED CHILI
Some of the most satisfying chili around is the most basic: a beef and tomato base with a little heat from chiles to create excitement. This recipe calls for a combination of fresh and dried chiles to infuse the dish with an incredible depth of flavor. Avocado and tortilla chips temper the spice.

- Toast dried chiles in a dry skillet over medium-high heat until fragrant and blistered, 2 to 3 minutes per side. Remove stem and seeds; discard. Transfer chiles to a large measuring cup or bowl, and cover with hot water. Keep chiles submerged with a small bowl, and let soak for 30 minutes. Remove from water, and puree in a blender with 1/2 cup soaking liquid.
- Heat a large heavy pot over high heat. Add 2 tablespoons oil. Season beef with 2 1/2 teaspoons salt and 1/2 teaspoon pepper. Brown beef in batches, adding more oil as needed, about 10 minutes. Transfer to a plate.
- Add remaining tablespoon oil, the onions, garlic, and minced chiles to pot, and cook over medium-high heat until onions are translucent, about 5 minutes. (If the pan gets too dark, add a little water, and scrape up browned bits with a wooden spoon to deglaze.) Add cumin and oregano, and cook, stirring constantly, until fragrant, 30 seconds to 1 minute.
- Stir in browned beef and chile puree. Add tomato puree, water, and 1/2 teaspoon salt. Bring to a boil. Reduce heat, and simmer gently, partially covered, until meat is very tender and juices are thick, 2 1/2 to 3 hours. (Check pot once an hour for excessive evaporation; if chili seems dry, add a little water.) Season chili with salt, and stir in vinegar. Serve immediately (or refrigerate for up to 3 days, or freeze for up to 3 months; reheat in a pot over medium heat, stirring occasionally).
TEXAS- RED CHILI CON CARNE
This recipe was given to my wife, Glenda, by Bob Keith, one of her old Houston friends, now deceased, a Montana native transplanted to Texas. I felt I had to include this recipe appease No-Bean chili afficionados and to offset my recipe for Texas Chil Beans. This IS a very good no-beans recipe, though I prefer to substitute 3-4 Poblano peppers for the bell peppers.

- Brown meat in a large, heavy bottom pot, and drain off grease.
- Add garlic, onion, bell pepper, celery, jalapeno, cumin, oregano, chili powder, black pepper, salt, and paprika.

- Cook for 30 minutes or until desired consistency is reached.

CHILI - AUTHENTIC TEXAS RED
Here's a favorite that's authentic to Texas. Real Texas Chili has no onion, tomato, and especially, NO BEANS! Chili with beans is a different dish and it's called, you guessed it, chili beans. Chili beans are good and I like them but they are not, I repeat, ARE NOT chili. I like to go large and this recipe belongs in a crock pot.

- Beef should be "course chili grind" or sliced into 1/4-inch or less strips about 1-inch long. Anaheim chiles are frequently called green chiles in the market.
- Remove the seeds and stem from the Ancho chiles. Put the chiles into a small saucepan and cover with water. Bring to a boil, reduce heat and simmer for 15 minutes. When done remove from heat, cover and set aside.
- While the chiles are simmering brown the ground pork, drain and set aside. Heat the olive oil over medium-high heat. Add the beef round and ground black pepper to taste, to the pot. Break up any lumps and cook, stirring occasionally until the meat is evenly browned.
- Stir in the ground chili powder, salt, cumin, garlic, bay leaf and onions. Add beef broth to barely cover. Bring to a boil, then lower the heat and simmer, uncovered, for 30 minutes (adding more broth if necessary).
- While the beef and onions are simmering place the Ancho chiles in a blender with about ¼ cup of the water from the saucepan and whir until pureed. Stir the pureed Anchos and all remaining ingredients into the meat mixture and simmer for a ½ hour.
- For best results allow chili to cool completely and then reheat.

- In a large dutch oven, heat the oil and cook the onion over medium heat until it is soft.
- Add the garlic and cook until it's transparent.
- Add the meat in several batches along with the chili, cumin, oregano and paprika.
- Remove each batch to a large bowl as it's cooked.
- Stir and cook until the meat is browned, then put all the meat back in the pot and add the vinegar, coffee and enough water just to cover the meat.
- Add the salt and cayenne and stir well.
- cover the pot and cook over low heat for 2 hours, stirring from time to time.
- Remove the lid and simmer the final hour.
- Skim off any fat on the surface.
- Add the cornmeal and stir in well.
- Cook for 15 more minutes and serve hot in deep bowls.
- Garnish with sour cream, chopped cilantro and shredded cheese.
HEATHER'S TEXAS RED CHILI
Chipotle adds a hint of smokiness as well as a touch of heat to this earthy chili. If they're not available in your grocery store, substitute 1/2 cup dried chili powder instead.

- Place guajillos in a large bowl, cover with boiling water, and weight with a small plate to keep submerged. Let sit until pliable, 15 minutes. Reserve 1 cup soaking liquid. Drain guajillos; discard stems and seeds. In a blender, blend guajillos, chipotle chile and sauce, and soaking liquid until smooth, about 2 minutes, scraping down side as needed. Pour mixture through a fine-mesh sieve set over a medium bowl, pressing on solids; discard solids. Set chile puree aside.
- Heat a large Dutch oven or other heavy pot over medium-high. Season short ribs with salt and pepper and cook until browned, about 5 minutes. With a slotted spoon, transfer to a medium bowl. Add oil to pot, season beef chuck with salt and pepper, and cook until browned, about 5 minutes (do not crowd pot; work in batches if necessary). Transfer to bowl with short ribs.
- Reduce heat to medium and add onion, garlic, and 1/2 cup water. Cook, stirring and scraping up browned bits with a wooden spoon, until onion is translucent, about 3 minutes. Add cumin, oregano, and cornmeal and cook until fragrant, 1 minute. Add meat, broth, chile puree, and just enough water to cover meat, if necessary; bring to a boil over high. Partially cover, reduce heat, and simmer 1 hour. Uncover and cook until meat is tender and chili is slightly thickened, 30 to 45 minutes. Add vinegar to taste.

TEXAS RED COORS CHILI
I created this recipe during my chili cook-off days. If you decide to use my recipe in any cook-offs, you will need to use onion powder instead of onion and omit the Rotel green chiles and use ground habanero powder instead. Most contest rules state that chili gravy must not have chunks. You will have to 86 the beans as well. If you have trouble finding Habanero powder, let me know, I make it myself. Enjoy!

NICK'S PRESSURE COOKER "BOWL OF RED" - TRADITIONAL TEXAS CHILI
This is DYN-O-MITE Chili. Chili has a colorful history and is not a Mexican dish at all. It has roots in Spain and Portugal where a meat stew with peppers was made. Variations on this eventually made it to San Antonio, TX which many boast as having the best chili and is the home to the beginning of the Chili cookoff craze. Tradition has it that true Texas chili does not have beans. So this recipe does not include beans. You can vary the recipe by adding chopped tomato for a chunky rather than smooth stew. Serve with chopped jalapeno, cheddar cheese, and sliced green onion for garnish. This recipe originated from a discussion with a friend and customer about chili.

- Release pressure by running under cold tap water until safe to open cooker. After the pressure has been released, put the chiles into a blender with a small amount of the liquid and puree to make a smooth, thin paste. Reserve the remaining liquid.
- Add shortening to pressure cooker pan and brown meat.
- Sprinkle the flour over the meat and stir. The meat will release some moisture during browning and the flour will absorb the oil and help to thicken the juice.
- Stir in the chile puree.
- Add enough of the reserved liquid so that the meat is covered to a depth of about 2 inches. Reserve any remaining liquid to use if you want to thin down the chili after it is cooked.
- Add the tomato sauce, paprika, onion powder, garlic powder, chili powder, black pepper, white pepper, cayenne, oregano, and cumin.
- Bring mixture to a boil and cover the pressure cooker.
- Cover and pressure cook for 30 minutes.
- Release the pressure, taste, adjust seasoning and add the masa harina (this will give it a slight tamale flavor and will also thicken the chile).
- Return to a boil. Serve hot over cornbread, on chili dogs, omelets, hamburgers, fries, or chips.
- The pressure cooker will meld the flavors and tenderize the meat. Refrigerate any remaining servings.

CHUNKY TEXAS RED CHILI

- 1. In a 5-quart pot, heat 2 tsp of the oil on medium. Add chorizo and cook until it has rendered it's fat. Remove it to a bowl with a slotted spoon. 2. Working in 2 batches, add the meat to the pot and cook until browned, about 5 minutes per batch. Transfer with a slotted spoon to the bowl with the chorizo. 3. Add the onion, garlic, and remaining 2 tsp of oil and cook, stirring frequently until the onion is tender, about 7 minutes. Stir in the chili powder and oregano, and cook 1 minute. Stir in the tomato paste and vinegar. 4. Return the meat to the pot along with 1 1/4 cups of water and the salt, and bring to a boil. Reduce to a simmer, cover, and cook, stirring occasionally, until meat is tender, about 1 hr. Stir in the corn meal and simmer until lightly thickened, about 5 minutes.
MARLBORO TEXAS RED CHILI - HOT HOT HOT !
Oh No ! I lost my cookbook for Marlboro Texas Red ! I had the paperback cookbook recipe for this - and have fixed it for YEARS now. The best flavor ever - but Way too hot for me. My hubby, however, loves it's head sweat producing heat. To tame it down so I,too, can enjoy it, I add two cans of rinsed Pintos and a can of chopped tomatoes. Believe me - it is still plenty hot ! Instead of the Suet the recipe calls for I cook 1/4 lb of bacon down and use the grease from it. Since the beef I use is very lean, the end result is not grease laden, but I do cool it to remove any grease that rises to the top. To serve I place a slice of cornbread on the bottom of the bowl, ladle the chilli over and top with grated cheddar cheese

- grease from 1/4 lb. bacon in place of suet.
- Add beef, pound at a time, to the grease rendered from suet and brown (or substitute bacon grease). After each pound is browned, remove.
- ( this leaves most of the grease and juice in the browning pan)
- When all meat is browned, put your meat in a chili pot and add seasonings and beef stock.
- Cover and simmer for 2 hours. Skim fat.
- Combine masa (harina) and cold water and stir into chili.
- Simmer for 30 minutes.
- NOTE: We cook this a lot longer - until the meat is fork tender and the sauce is nice and thick.
- NOTE: At this point I add rinsed pinto beans and chopped tomatoes at this point to my half of the chili.
- Serve in bowls on top of a slice of cornbread, with optional grated cheddar cheese, sour cream and green onions.

CLASSIC TEXAS RED CHILI FROM THE NORTH
Steps:
- Trim excess fat from beef and cut into ½ inch cubes. Heat a cast iron or heavy bottom skillet over medium high heat. Pour a little oil in the pan to coat bottom. Sear cubed meat in batches, turning to brown evenly. Don't crowd the pan or you will end up boiling the meat in its juices. Remove meat to a slow cooker. Turn the heat in the pan down to medium; add onions and a dash of salt to the pan, stirring to pick up all the beef bits. When softened, add garlic, jalapeños and habaneros and continue to cook for a few minutes more. Pour ¼ cup beef stock over vegetables and stir to deglaze the pan. Transfer vegetables to the slow cooker. Add remaining ingredients to the cooker and stir to combine. Cover and cook the chili for approximately 4 hours on medium or 6 hours on low. As it cooks, the meat will break down. You may want to squash cubes of meat against the side of the cooker with a spoon to help it break down. Season at the very end with salt and pepper. Accompany chili with shredded cheddar and cornbread. Serve immediately or transfer to a large, shallow casserole dish to cool quickly in the fridge. Refrigerate for up to 3 days or freeze for up to 3 months. You may need to add some broth and salt when re-heating.
RED CANYON - TEXAS CHILI
Not for the timid or faint of heart, but if you want a good authentic Texas chili, give this one a try. This recipe is a result of a lot of different batches of chili while trying to duplicate some that I had tasted when judging at a CASI event here in Texas and watching some of the masters create some of Texas' best. I make no claim to be anywhere in the league of those that compete at the world championship in Terlingua every year, but do know that several cooks use similar methods and spices as I have used here. All spices can be adjusted to suit your taste. This one suits me just fine and maybe you'll like it too.

- Step #1.
- In a heavy dutch oven with a tight fitting lid, brown beef and pork in cooking oil. Don't drain grease (optional).
- Add chicken and beef broth and tomato sauce. Float jalapeno and serrano peppers.
- Stir in 3 Tbs. chili powder (I use Penzy's medium hot), 2 teaspoons garlic powder, and 1 Tbs. Onion powder.
- Bring to a boil then reduce heat and simmer 1 hour covered.
- Step #2.
- Add beef and chicken boullion cubes, 2 Tbs. chili powder, 2 teaspoons Cumin and ½ teaspoons Ground black pepper. Remove jalapeno and serrano peppers and squeeze out juice into chili. Cover and simmer 30 minutes.
- Step #3.
- Add the following:.
- 1 teaspoons onion powder.
- ½ teaspoons garlic powder.
- 2 teaspoons paprika.
- 2 teaspoons cumin.
- 1 Tbs. chili powder.
- ¼ teaspoons ground red pepper.
- ½ teaspoons ground black pepper.
- Simmer 15 minutes and serve.
- Note: If too thin, simmer uncovered until desired consistency is reached or add a little water if too thick.
