My family loves these fritters with Chili, Red beans and rice, or just as a snack with sour cream. They eat them up as fast as I can fry them..lol! Sometimes I make them spicier,add fresh corn, cayenne pepper, etc... just play with the recipe..you can't go wrong.. Enjoy...:)) My Photos

2 c yellow corn meal
2 tsp baking powder
1 egg
1 1/2 c water
8 - 10 oz okra, sliced about 1/4 inch thick
1 large jalapeno, diced small
3 clove garlic, minced
2 Tbsp onion, diced small
1/4 tsp pepper
3 tsp sea salt
red pepper flakes ( optional )
1/4 c vegetable oil, plus more as frying

Steps:

  • 1. In a large bowl, whisk together the cornmeal, baking powder, and sea salt.
  • 2. Combine the egg and water in another bowl.
  • 3. Pour the water and egg into the cornmeal, stir until smooth.
  • 4. Add the remaining ingredients. Mix till well distributed. ( Batter should be thick, wet, not dry.)
  • 5. In a skillet, ( I use my cast iron ) heat oil on medium. For larger fritters, measure out about 1/4 cup of batter. Pour into the hot oil. Fry the cakes until the bottoms are brown and bubbles form on the tops and edges. About 3 minutes on each side. ( Add more oil as needed as you fry your fritters )
  • 6. Drain on paper towels.
  • 7. Serve with your favorite condiments. They go well with sour cream and salsa. Enjoy!!!

I got this from the HEB website and really liked them. Make a bunch and reheat later on a cookie sheet. You can serve with just plain sour cream, Ranch dressing or with the suggested flavored sour cream.

2 jalapenos, seeded and chopped fine (wear gloves)
2 cups low-fat sour cream or 2 cups fat free sour cream
1 egg, slightly beaten
2/3 cup low-fat milk or 2/3 cup nonfat milk
1 (6 ounce) package Mexican cornbread mix
1 (16 ounce) package whole frozen okra
oil (for frying)

Steps:

  • Combine the peppers and sour cream.
  • Chill till ready to use.
  • In a small bowl combine beaten egg and milk and set aside.
  • Place cornbread mix in a plastic or paper bag and set aside.
  • Dip frozen okra, one at a time, in the egg/milk mixture and then shake to coat in the cornbread mix.
  • Place coated okra on a large piece of wax paper or foil.
  • Dip and coat all the okra and set aside.
  • In a medium skillet heat oil to 375 degrees.
  • Fry coated okras 4-6 at a time for 2 minutes.
  • Drain on paper towels.
  • Serve as an appetizer with the dipping sauce or with just plain sour cream.
