3 tablespoons red wine vinegar
2 teaspoons hot sauce (like Texas Pete)
1 tablespoon minced garlic
1 1/2 tablespoons olive oil
1 avocado, cubed
1 (15 ounce) can white corn kernels, drained
1 (15 ounce) can black beans or 1 (15 ounce) can black-eyed peas, drained
3 -4 whole roma tomatoes, diced
1 cup diced green onion
1/2-3/4 cup chopped fresh cilantro
salt & pepper

Steps:

  • Whisk together the vinegar, oil garlic and hot sauce.
  • Then fold in the avocado and the rest of the ingredients.
  • Season to taste and serve with Tortilla chips as an appetizer or you can serve also as a salad in lettuce lined bowls.

1 (16 ounce) can black-eyed peas, rinsed and drained
1 (16 ounce) can white corn, rinsed and drained
4 ounces black olives, chopped
2 large avocados, diced
4 roma tomatoes, diced
1 large purple onion, diced
1 green pepper, diced
1 yellow pepper, diced
1 red pepper, diced
2 -4 jalapeno peppers, seeded and diced
2 garlic cloves, minced
1 bunch cilantro, finely chopped
3 tablespoons lime juice
3 tablespoons vegetable oil
1 -2 tablespoon hot sauce

Steps:

  • Place all ingredients in a large bowl and stir to combine.
  • Serve with corn chips.

Texas caviar is a classic Texas favorite & delicious appetizer. 3 types of beans, corn, onion, jalapeño, & tomatoes, marinated in a tangy dressing.

2 15-ounce cans black beans (drained and rinsed)
2 15-ounce cans pinto beans (drained and rinsed)
2 15-ounce cans black-eyed peas (drained and rinsed)
2 15-ounce cans white corn (drained and rinsed)
2 jalapeño peppers (seeded and finely chopped, optional)
1 pint cherry tomatoes (quartered)
2 cloves garlic (minced)
1 red bell pepper (cored, seeded, finely chopped)
1 small red onion (finely chopped, approximately 1 cup)
¼ cup fresh cilantro (finely chopped)
⅓ cup red wine vinegar
⅓ cup olive oil (or avocado oil)
1 tablespoon honey (or white sugar or granular Swerve)
½ teaspoon garlic powder
2 teaspoons salt

Steps:

  • In large bowl, mix together black beans, pinto beans, black-eyed peas, white corn, jalapeño peppers, red bell pepper, red onion, and cilantro until thoroughly distributed.
  • In small bowl, whisk together red wine vinegar, olive oil, honey, garlic powder, and salt until combined.
  • Pour dressing over bean mixture and gently stir or toss to coat. Serve immediately with tortilla chips, or chill until serving. Note: the flavors are best if you let the dish chill a few hours.

(Cowboy) Texas Caviar: Easy black-eyed pea and black bean salad with loads of sweet corn, bell peppers and cilantro and a light dressing.

⅓ cup olive oil
3 tablespoons red or white wine vinegar
1 ½ tablespoons granulated sugar
1 ¼ teaspoons coarse salt
½ teaspoon ground black pepper
½ teaspoon chili powder
½ teaspoon dried oregano leaves
15-ounce can black-eyed peas, rinsed and drained
15-ounce can black beans, rinsed and drained
15-ounce can fire roasted diced tomatoes, drained
1 ½ cups cooked sweet corn (from fresh, frozen or canned)
1 medium bell pepper, seeded and diced
1 medium jalapeno, seeded and minced
½ small red onion, peeled and minced
½ cup fresh cilantro, chopped
1 bag tortilla chips, for serving

Steps:

  • In a large bowl, whisk together the olive oil, vinegar, sugar, salt, black pepper, chili powder and oregano.
  • To the bowl, add the black-eyed peas, black beans, tomatoes, corn, bell pepper, jalapeno, onion and cilantro and stir to combine. Refrigerate at least 30 minutes. Taste and adjust seasoning, if necessary.
  • Serve with tortilla chips.
