TEXAS RANCH CHICKEN CASSEROLE

1 onion (diced)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 Tablespoon vegetable oil
1 teaspoon minced garlic
3 cups cooked chicken breast (cubed)
1 (10.75 ounce) can cream of celery soup
1 (10.75 ounce) can cream of chicken soup
1 (10 ounce) can diced tomatoes and green chiles (undrained)
1 Tablespoon chili powder
12 corn tortillas (cut into 1-inch strips and divided)
2 cups shredded cheddar cheese (divided)

Steps:

  • Preheat oven to 350 degrees.
  • In a large, nonstick skillet over medium heat, saute onion, green pepper and red pepper in oil until tender. Add garlic and saute an additional minute. Stir in chicken, soups, tomatoes and chili powder.
  • Line a 9 x 13 inch baking pan with half of the tortilla strips.
  • Top with half of the chicken mixture and 1 cup of cheese. Repeat layers.
  • Bake uncovered for 30 minutes or until cheese is completely melted.

This recipe has been in my family since I was a kid, and I'm a senior citizen now. For years I made it with cheddar cheese, now I make it with cheddar, Monterey Jack, and Colby, and boy, what a difference!

3 -4 lbs chicken
1 1/2 cups onions, chopped
1 cup green bell pepper, chopped
4 celery ribs, finely chopped, about 1 cup
1 (10 ounce) can condensed cream of mushroom soup
1 (10 ounce) can condensed cream of chicken soup
2 (15 ounce) cans petite diced tomatoes, drained
1/2 lb shredded cheddar cheese
1/2 lb shredded monterey jack cheese
1/2 lb shredded colby, cheese1
2 teaspoons mild new mexico chile powder or 3/4 teaspoon cayenne pepper
1 teaspoon ground black pepper
3/4 teaspoon white pepper
1 tablespoon cumin
1/2 teaspoon salt
15 -20 regular size corn tortillas
1/2 cup chicken stock

Steps:

  • Boil the chicken with 1/2 cup onion and the salt and pepper until meat falls off the bones (about 1 hour), save the chicken stock for use later. Let the chicken cool, then slice the into 1/4 to 1/2 inch cubes.
  • Mix 1/2 cup of the chicken stock with all the other remaining ingredients except the cheese and tortillas.
  • Mix the three cheeses together.
  • Dip tortillas into remaining reserved chicken stock and put a double layer of tortillas in two 8 inch x 8 inch pans (I use two 2 quart Pyrex glass ones), a layer of the soup, vegetables and chicken mixture, a layer of 1/3 of the cheese, then repeat these layers two more times.
  • Cover with tinfoil and bake at 300 degrees for 1 hour.
  • Let the dish set for 10 minutes before serving. This recipe results in a mildly hot dish. If you would like it hotter, increase the three peppers, or just serve with a jar of ground cayenne pepper, so each person can adjust the heat as they like.

16 ounces tomato sauce
6 green onions, chopped

  • Brown ground beef with onion and garlic, drain.

We've had this at our Family Reunion for years! It's always been a hit with everyone. I always bake the potatoes a day or two before and refrigerate.It makes cooking time very short!

8-10 large potatoes, baked
2 stick butter, softened
1 - 32 oz sour cream
10 slice bacon, fried
1 bunch green onions, sliced
1 can(s) green chilies,drained & chopped
4 c cheddar cheese, shredded
1 pkg ranch dressing,dry
salt and pepper, to taste

Steps:

  • 1. Bake potatoes and refrigerate the night before. There easy to handle when you go to slice them.
  • 2. Mix ranch dressing, green chilies & sour cream the night before. It gives it time to marry the flavors. But not necessary.
  • 3. Also go ahead and fry the bacon and crumble it. Stick in the refrigerate over night.
  • 4. Also slice the green onions and put in refrigerator.
  • 5. The more you do the night before the easier it is the day of the BBQ or party! It's easy peasy!
  • 6. Preheat oven to 350 degrees.
  • 7. Slice potatoes with a mandolin. That way potatoes warm evenly. Use a casserole dish 9X13 or larger if you have one. Spray with PAM or what ever you like or even butter it. You don't want it to stick.
  • 8. Put a layer of potatoes,butter, sour cream then cheese. Till the last layer that's when you use the bacon. The green onions go on after it comes out of oven. Sometimes I just sit aside the green onions in a bowl and let them help them selves as some don't like onions at all! Enjoy!
  • 9. Bake for 35-45 minutes

My mom cooked this for us for special occasions (especially for birthdays). It's is an amazing twist to the original kings ranch chicken casserole. I have made this for several occasions now that I'm on my own and everyone has loved it, and it's really easy to make too!

6 cups boiling water
3 cups cooked chicken (shredded)
4 cups cheese (mild shredded)
1 -16 oz.bag nacho cheese flavor Doritos (or any other flavor you like)
1 -10 oz.can condensed cream of chicken soup
1 -10 oz.can condensed cream of mushroom soup
1 -8 oz.can Rotel tomatoes & chilies (undrained. you can also choose between hot or mild)

Steps:

  • Add enough water to pot to cover chicken completely. Boil chicken until it is completely done( normally takes about 45 minutes).
  • Preheat oven to 350.
  • In a large mixing bowl combine the cream of chicken, cream of mushroom, Rotel tomatoes and 1/2 to 3/4 a can of water. Mix well.
  • In a 9X13 pan layer the ingredients starting with the Doritos, then the shredded chicken, cheese, and soup mixture on top. Repeat layering the ingredients in the same order until you get to the top of the pan or run out of ingredients.
  • Place pan in the oven and bake for 20 minutes.

8 corn tortillas, cut into strips
1 pkg bulk breakfast sausage (12 oz.), cooked and drained
1 medium yellow onion, diced
8 eggs
1/2 c heavy whipping cream (can substitute milk or half and half)
1 tsp ground cumin
1/2 tsp freshly ground black pepper
1/2 tsp salt
1/2 tsp garlic salt or powder
1 1/2 c pepper jack or cheddar cheese (or a combination), shredded
2 small roma tomatoes, sliced
1/2 tsp paprika
sour cream, optional
pico de gallo, optional
romaine lettuce leaves, optional

Steps:

  • 1. Lightly coat a 13x9 (or similar size) baking dish with non-stick spray. Add a layer of 1/2 of the chilies.
  • 2. Add half of the tortilla strips.
  • 3. Add half of the sausage and onion.
  • 4. Add half of the cheese to the dish.
  • 5. Repeat a second time with remaining chilies, tortilla strips, sausage, onion, and cheese.

  • 11. If desired, serve with sour cream and pico de gallo. I always make up a nice display of these ingredients on a pretty serving tray with a bed of romaine lettuce.

2 whole chicken breasts
1 package of corn tortillas - (10)
2 small cans of while green chilis
1/2 pound monteray jack cheese
2 cups chicken broth
2T butter
2T flour
salt and pepper
one minced onion
2T vegetable oil

Steps:

  • Poach the chicken in the chicken broth. Remove,straining and reserving the broth. Separate the meat into strips.Set aside. Heat the butter in a saucepan, and when it is bubbling, whisk in the flour. Let it cook, whisking, for 2 minutes, then add the strained broth. Whisk until thickened, taste, and add pepper as needed.Set aside. Slice the chilis into strips. Set aside. Heat the oil in a frying pan and when it is almost smoking, fry the tortillas, cut in quarters, for just long enough to stiffen them-turning halfway through. Drain them on paper towels. Do not crowd the tortillas. It will take several batches to fry them all. Have the minced onion ready. Grate the cheese. Set aside. In a lasagna pan, layer sauce, chicken,onion, chilis, tortilla pieces and cheese. Finish with sauce. Bake in a preheated 350 degree oven for 30 minutes.

Not sure which website I found this, but I recently made it and it was good. I did omit the Nacho Sauce I wasn't sure about the Nacho Cheese Sauce and it turned out fine. Next time I will look at another store for the Nacho Sauce. It's a good alternative to the usual Tater Tot Casseroles.

1 medium celery, chopped (1/2 Cup)
2 garlic cloves, finely chopped
2 (10 3/4 ounce) cans condensed cheddar cheese soup
1 (11 ounce) can mexicorn, drained
1/2 cup old elpaso thick 'n chunky picante sauce
2 teaspoons chili powder
1/4 teaspoon pepper
1 (16 ounce) bag frozen tater tots
1/2 cup shredded taco blend cheese

Steps:

  • Heat oven to 375 degrees. Cook beef, onion, celery and garlic in 12 inch skillet over medium-high heat 8-10 minutes, stirring occasionally, until beef is brown; drain.
  • Stir soup, corn, picante, chili powder and pepper into beef mixture. Spoon into ungreased 2 1/2 quart casserole dish. Top with frozen potato nuggets.
  • Bake uncovered 40 minutes. Sprinkle with cheese. Bake 5 to 10 minutes or until bubbly and cheese is melted.

2lb. bag frozen hash brown potatoes
2 c cream of chicken soup
1/2 c onion, diced
2 c cheddar cheese, shredded
1 c sour cream
1 stick butter, melted
2 stacks Ritz Crackers, crushed

Steps:

  • Combine first five ingredients. Add stick of melted butter. Pour mixture into 9x13" baking dish. Spread crackers over top of mixture. Pour 2 TBS. more melted butter on top of crackers. Bake at 350 F for 1 hour or until completely cooked.

1/2 medium red onion, chopped
1 (4 ounce) can diced green chilies
12 (6 ounce) corn tortillas, cut into 1-inch pieces
1 (10 3/4 ounce) can cream of mushroom soup
1 (2 1/4 ounce) can sliced ripe black olives, drained
1 cup mild enchilada sauce
1/2 cup sour cream
1 (8 ounce) package sharp cheddar cheese, shredded and divided
shredded lettuce
diced tomatoes
finely chopped red onion

Steps:

  • In a large skillet, cook the first 3 ingredients over med-high heat, stirring until beef crumbles and is no longer pink; drain.
  • Transfer the beef mixture in a large bowl; stir in tortilla pieces and the next 4 ingredients and 1 cup cheese.
  • Spoon mixture into a lightly greased 11x7 inch baking dish.
  • Sprinkle evenly with remaining cheese.
  • Bake in a 400° oven for 20-25 minutes or until bubbly.
  • Serve with desired toppings.
