1-1/2 cups gluten-free all-purpose baking flour
1-1/2 cups cornmeal
2 teaspoons baking powder
1 teaspoon sea salt
2 large eggs, room temperature
2 cups 2% milk
1/2 cup olive oil
2 cans (15 ounces) chili with beans or 4 cups leftover chili, warmed
Jalapeno slices, shredded cheddar cheese, sour cream, cubed avocado and minced fresh cilantro

Steps:

  • Preheat waffle maker. In a large bowl, whisk flour, cornmeal, baking powder and salt. In another bowl, whisk eggs, milk and oil until blended. Add to dry ingredients; stir just until moistened. Bake waffles according to manufacturer's directions until golden brown., Serve with chili and toppings of your choice.

These are a delicious savory waffle that can be used as a bed for your favorite chili or meat gravy. They also make a mean sandwich when split in half. The recipe has the instructions for both gluten free and regular. Leftovers can be stored in a sealed plastic bag and toasted as needed.

Number Of Ingredients 15

1 cup cornmeal or 1 cup gluten free cornmeal
1 cup all-purpose flour or 1 cup all purpose gluten-free flour
2 1/2 teaspoons baking powder
1 teaspoon xanthan gum, optional for gluten free only
1 tablespoon sugar
1 teaspoon cumin
1/4 teaspoon baking soda
1/2 teaspoon salt
5 tablespoons dry buttermilk
1 1/4-1 1/2 cups water
1/4 cup vegetable oil (I use coconut oil.)
2 large eggs, separated
1 medium ear corn on the cob, kernels cut off and cob scraped
2/3 cup grated sharp cheddar cheese
1 -2 medium jalapeno pepper, finely diced (Remove seeds and ribs for a milder flavor.)

Steps:

  • In a large mixing bowl, blend together the cornmeal through buttermilk powder. In a 2 cup measuring cup, measure 1 1/4 cups of warm water, oil and egg yolks. Add the liquid ingredients to dry and combine thoroughly. Mix in additional water as needed to make a smooth batter. Stir in the corn, cheese and peppers. Beat the egg whites until stiff and fold into mixture.
  • Preheat waffle iron as per manufacturers directions. Lightly coat with cooking spray. Spoon batter onto to hot waffle iron and bake until golden brown. Repeat for additional waffles.
  • Please note: My waffle iron is a 2 waffle Belgian waffle iron and each waffle measures 4 in x 3-1/2 inches.

Tex Mex Chili and Cornbread Waffles image

Next time you grill out or grill in, throw on a few extra pieces of steak to use for another day. You are not limited to just steak; chicken, pork, roast, turkey would also work great. This is a drier version of chili that I like to serve over cornbread waffles. Hope you enjoy!

2 lb grilled steak (i used new york strips) (you could use other cuts of meat if desired)
1/2 large onion, chopped
1 large bell pepper, chopped
1 jalapeno pepper, seeded and chopped (remember to wear gloves when working with hot pepper and keep hands away from face)
2 Tbsp cooking oil
2 tsp chili power (can use hot if desired)
1/2 tsp cumin
1/4 tsp cayenne pepper, optional (i like a little heat)
1 (14 oz) can pinto beans, rinsed and drained
1 c corn, fresh or frozen (thaw if frozen)
1 large red tomato (fresh out of the garden if possible), diced
salt and pepper to taste
CORNBREAD WAFFLE
1 1/2 c self rising yellow corn meal
1/2 c self rising flour
1/2 tsp salt
1/4 tsp cayenne pepper
1 Tbsp sugar
1 large egg
1 1/2 c milk
1/4 c butter, melted
1 1/2 c corn, fresh or frozen (thaw if frozen
TOPPINGS
cheese, shredded
sour cream
jalapeno rings
black olives
sliced avocado

Steps:

  • 1. CHILI: Slice grilled steak into thin bite size pieces; set aside. Saute onion, bell pepper and jalapeno in oil over medium heat until slightly tender; add steak and heat. Add remaining ingredients and heat through.
  • 2. CORNBREAD WAFFLES: Stir together cornmeal, flour, salt, cayenne, & sugar. In another bowl mix egg, milk, butter and corn.
  • 3. Add wet ingredients to dry and stir until moistened.
  • 4. Bake in a preheated waffle iron until crisp and browned.
  • 5. Serve with your favorite toppings.

1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 lb lean ground beef
1 (1 1/4 ounce) envelope taco seasoning
2 teaspoons cumin
6 ounces tomato paste
22 ounces chili beans
15 1/2 ounces diced tomatoes
7 ounces chopped green chilies
1 (12 ounce) can beer (or beef broth or water)
salt and pepper
chopped raw onion
grated cheddar cheese
sour cream

Steps:

  • Saute onions and garlic in oil.
  • Add ground beef and brown. Drain.
  • Add taco seasoning and cumin. Mix well.
  • Add remaining ingredients, salt and pepper to taste.
  • Cook 20-30 minutes.
  • Serve hot with garnishes of your choice.
  • NOTE: For FRITO PIE serve over a bed of fritos and topped with grated cheddar.

1/2 cup yellow cornmeal
1 1/3 cups longhorn cheese or 1 1/3 cups sharp cheddar cheese, grated
1 tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1 teaspoon mild chili powder
1 2/3 cups milk
2 eggs, lightly beaten
1/3 cup vegetable oil
2 tablespoons finely chopped green chilies

Steps:

  • Preheat the waffle maker.
  • In a large bowl, combine the flour, cornmeal, cheese, baking powder, sugar, salt and chili powder. Add the milk, eggs, vegetable oil and chiles, and mix just until moistened. Mixture may be a little lumpy.

1 lb ground chuck
2 garlic cloves, minced
3 -4 teaspoons chili powder
1/2 teaspoon ground cumin
2 (15 ounce) cans red kidney beans, rinsed and drained
1 cup celery, chopped
1 cup onion, chopped
1/2 cup green pepper, chopped
1 (15 ounce) can diced tomatoes
1 (15 ounce) can diced tomatoes with green chilies
1 cup vegetable juice or 1 cup tomato juice
1 (6 ounce) can tomato paste
1/4 teaspoon salt

Steps:

  • Brown beef and garlic until brown, drain well.
  • Stir in chili powder and cumin, cook 2 minutes more.
  • In crock pot, combine beans, celery, onion, peppers.
  • Add undrained tomatoes, vegetable or tomato juice, tomato paste, and salt.
  • Stir in meat mixture.
  • Cover and cook on low 10-12 hours or high 4-5 hours.
