If you have leftover pulled pork, with no sauce on it, turn it into sloppy Joe-type sandwiches for a twist on hamburger. Mini Kaiser rolls provide a sturdy, flavorful base for the sandwiches, which can be served alone as an appetizer, or as a main dish when accompanied by your favorite sides. We like fresh corn on the cob and coleslaw.

2 tablespoons unsalted butter
1 cup finely chopped onion
⅔ cup finely chopped green bell pepper
1 cup beef stock
1 cup ketchup
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon whole-grain mustard
4 cloves garlic, minced
1 teaspoon chili powder
2 cups cooked pulled pork without sauce
3 dashes hot pepper sauce (such as Tabasco®), or to taste
salt and ground black pepper to taste
10 mini Kaiser rolls, split and warmed

Steps:

  • Melt butter in a large nonstick skillet over medium heat. Add onion and bell pepper, and cook, stirring, about 5 minutes. Add beef stock, ketchup, brown sugar, Worcestershire sauce, mustard, garlic, and chili powder; stir until well mixed.
  • Mix in pulled pork until well combined. Season with hot sauce, salt, and pepper. Bring mixture to a boil, reduce heat to low, and allow to bubble gently until thickened and reduced, 20 to 25 minutes.
  • Place about 1/2 cup of the mixture on each sliced mini Kaiser roll and serve immediately.

1 lb ground beef
3 carrots, finely chopped
1/2 onion, finely chopped
1 garlic clove, chopped
8 ounces tomato sauce
3 tablespoons teriyaki sauce

Steps:

  • brown the beef and the garlic, drain the fat.
  • add the carrots and onion, cook 3-4 minutes.
  • turn heat to low, add the tomato sauce and terriyaki.
  • simmer for 15 minutes.

2 teaspoons olive oil
1 bunch scallion, thinly sliced
1 carrot, shredded
3 garlic cloves, minced
1 lb ground pork (I've used ground chicken)
1/4 cup teriyaki sauce
2 tablespoons oyster sauce
1 tablespoon cornstarch
1 lb swiss chard, rinsed dried and thinly sliced crosswise
4 sesame hamburger buns, split and toasted

Steps:

  • In large heavy skillet, brown ground pork. Drain cooked meat on paper towel lined plate.
  • Wipe grease from pan. Add 1 t oil and heat over medium heat. Add scallions, carrot, and 1/2 garlic to pan and cook til softened, about 2-4 minute.
  • In a cup, combine 1/2 c water, 3 T teriyaki sauce, oyster sauce, and cornstarch. Add to skillet along with cooked meat. Cook, stirring until thick, hot and bubbly. Keep warm.
  • In skillet heat remaining oil over medium heat, Add remaining garlic and cook for 1 minute Add chard and remaining teriyaki sauce. Stir fry briefly, just until wilted. Serve pork and chard on buns.

¾ cup teriyaki sauce
¼ cup apple cider vinegar
¼ cup pineapple juice
2 teaspoons minced garlic
1 teaspoon ground black pepper
1 teaspoon crushed red pepper flakes

Steps:

  • Place pork butt in the bottom of a slow cooker and turn heat to High.
  • Whisk teriyaki sauce, vinegar, pineapple juice, garlic, pepper, and red pepper flakes together in a bowl. Pour sauce over the pork. Cook on High for 9 hours.
