Grand Prize winner in a Simple & Delicious contest for crock-pot recipes. . .not my recipe unfortunately, but I had to post it here for safe keeping. They recommend serving it sliced with a side of hot mashed potatoes however I think it's much better atop fluffy white rice!!! This is a fabulous recipe and your end product won't have that "crock pot" flavor!!

Number Of Ingredients 10

1 (3 -4 lb) boneless pork shoulder, trimmed (3 to 4 pounds)
1 cup packed brown sugar
1/3 cup unsweetened apple juice (I have used pineapple juice with fabulous results)
1/3 cup soy sauce (may use low sodium)
1 teaspoon fresh ground ginger
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Cut roast in half; rub with brown sugar. Place in a 5-qt. slow cooker.
  • Mix together apple juice and soy sauce (and garlic and ginger if using) and pour over roast.
  • Sprinkle with salt and pepper.
  • Cover and cook on low for 6 to 6-1/2 hours or until meat is tender.
  • Remove roast; cover and let stand for 15 minutes.
  • Meanwhile, strain cooking juices and return to slow cooker. Increase temp to high.
  • Combine cornstarch and cold water until smooth; gradually stir into juices in slow cooker.
  • Cover and cook on high for 15 minutes or until thickened.
  • Slice pork; serve with gravy.

3/4 cup unsweetened apple juice
2 tablespoons sugar
2 tablespoons reduced-sodium soy sauce
1 tablespoon white vinegar
1 teaspoon ground ginger
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 boneless pork loin roast (about 3 pounds), halved
8 teaspoons cornstarch
3 tablespoons cold water
Chopped green onions and sesame seeds, optional

Steps:

  • Combine the first seven ingredients in a 6-qt. electric pressure cooker. Add roast and turn to coat. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 25 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure. Press cancel. A thermometer inserted in pork should read at least 145°. , Remove pork to a serving platter; keep warm. In a small bowl, mix cornstarch and water until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until thickened, 1-2 minutes. Serve with pork. Freeze option: Place sliced pork roast in freezer containers; top with sauce. I needed to put dinner in the oven ASAP and had no time to marinate. After looking around on the web, I combined a couple different recipes and came up with this. We really enjoy it...hope you will too!

3 lbs boneless pork roast
2 tablespoons canola oil
1/2 cup soy sauce
2 tablespoons brown sugar
1 teaspoon grated ginger (I use jarred minced ginger)
1 tablespoon canola oil
1/2 cup water
1 clove garlic, minced

Steps:

  • Preheat oven to 325*.
  • Brown pork on all sides in 2 tbl oil over medium-high heat.
  • Place pork in roasting pan.
  • Combine remaining ingredients and pour over roast.
  • Roast for about 3 hours (or until instant-read thermometer reads 165*), basting frequently and turning over a couple times.
  • Let sit for a few minutes before slicing and serve with juices.

1 (6 ounce) can apple juice
2 tablespoons sugar
2 tablespoons soy sauce
1 tablespoon vinegar
1 teaspoon ground ginger
1/4 teaspoon garlic powder
1/8 teaspoon pepper
3 lbs lean boneless pork loin, rolled
3 tablespoons cold water
1 1/2 tablespoons cornstarch

Steps:

  • Mix together in a large Pyrex measuring cup, apple juice, sugar, soy sauce, vinegar, ginger, garlic powder and pepper.
  • Pour small amount in bottom of crock pot.
  • Place roast in crock pot with fat side up.
  • Pour remaining sauce over roast.
  • Cook on High for 4 hours or Low 8 hours or until meat is no longer pink.
  • Remove pork and slice.
  • Place on a platter and cover with aluminum foil.
  • Place in a 200 degree oven to keep warm while thickening juices.
  • Strain juice and place in a small saucepan.
  • Bring mixture to boil.
  • Mix together water and cornstarch until smooth.
  • Stir into boiling mixture.
  • Cook for 1 to 2 minutes until mixture thickens.
  • Serve over sliced pork roast.

  • Combine the first seven ingredients in a greased slow cooker. Add roast and turn to coat. Cover and cook on low for 7-8 hours or until a thermometer inserted into the roast reads 160 degrees. Remove roast and keep warm. In a saucepan, combine cornstarch and cold water until smooth; stir in cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the roast.
