This is an old way of making a teriyaki sauce with honey instead of sugar, giving it a more pleasing sweetness. It's great for marinading and dipping with any kind of meat dish.

1/4 teaspoon ground ginger
1/3 cup soy sauce
1/4 cup honey
1 garlic clove, minced
1 teaspoon grated onion
1/2 cup water

Steps:

  • Blend ginger, soy sauce, honey, garlic, and onion in a bowl.
  • Add meat to marinade for at least one hour or refrigerate meat in marinade overnight.
  • After marinating meat, drain the marinade and add it to a 1/2 cup of water.
  • Bring it to a boil for 3-5 minutes and use it for a meat dipping sauce during the meal.
  • Excellent for pork, beef or chicken.

½ cup reduced sodium soy sauce
½ cup reduced sodium chicken broth
¼ cup mirin
⅓ cup Stevia In The Raw® Bakers Bag
2 tablespoons frozen (thawed) orange juice concentrate
2 garlic cloves, sliced lengthwise
¾ inch piece fresh ginger, in 3 slices
16 chicken wings
1 cup diced fresh mango
2 tablespoons brown mustard
2 tablespoons orange marmalade fruit spread
2 (1 gram) packets Stevia In The Raw®
1 tablespoon fresh lime juice
⅛ teaspoon cayenne pepper
½ teaspoon salt
⅛ teaspoon freshly ground pepper
2 tablespoons chopped scallions

Steps:

  • In small saucepan, combine all the sauce ingredients. Boil sauce over medium-high heat for 10 minutes. Cool sauce to room temperature. If desired, remove garlic and ginger, transfer sauce to tightly covered container, and refrigerate for up to 24 hours.
  • Preheat oven to 425 degrees F. Line baking pan, 15" x 11" or larger, with foil. Coat 2(10" x 10") wire racks with cooking spray and set in the pan, overlapping them.
  • Cut off first joint of chicken wings and discard. Arrange wings in prepared baking pan in one layer, smooth side up. Bake wings for 10 minutes.
  • Brush wings on both sides with sauce and bake, smooth side up, for 5 minutes. Brush with sauce again and bake, underside up, for 5 minutes. Brush wings a third time and bake, smooth side up, for 5 minutes. Brush wings again, and bake, underside up, for 10 minutes. Reduce oven to 400 degrees F. Brush tops of wings with sauce and bake, topside up, for 10 minutes.
  • Arrange wings on serving plate. Discard any remaining sauce.
  • In mini-food processor, whirl all sauce ingredients except scallions together until smooth. Transfer sauce to bowl and garnish with scallions.

3/4 cup soy sauce
1/3 cup brown sugar
1 tablespoon minced fresh ginger
1 tablespoon lime juice
1 teaspoon chile-garlic sauce
1 1/2 pounds skirt steak, trimmed, sliced into 1 1/2-inch strips
2 cups roughly chopped fresh cilantro
2 cups roughly chopped fresh parsley
1/2 cup roughly chopped fresh mint
4 cloves garlic
4 green onions
2 Thai chiles
1 teaspoon fish sauce
1/2 teaspoon sugar
Juice of 1 lime
Kosher salt and black pepper
2 tablespoons extra-virgin olive oil
4 tablespoons mayonnaise

Steps:

  • For the marinade: Combine the soy sauce, brown sugar, ginger, lime juice and chile-garlic sauce in a saucepan over medium-low heat. Bring to a simmer and cook, stirring occasionally, for 10 minutes. Let cool.
  • Loosely thread the skirt steak strips onto the soaked skewers and place them in a deep pan. Top with the marinade. Cover and refrigerate for at least 2 hours.
  • For the chile-herb sauce: Combine the cilantro, parsley, mint, garlic, green onions and Thai chiles in a food processor and pulse until coarsely chopped, scraping down the bowl as needed. Add the fish sauce, sugar, lime juice, 1 teaspoon salt and 1/2 teaspoon pepper and pulse until combined. With the machine running, drizzle in oil; pulse for another 15 seconds. Add the mayonnaise and pulse to combine. Transfer to a bowl, cover and chill until ready to serve.
  • For cooking the steak: Prepare a grill for medium-high heat. Grill the steak for 2 to 3 minutes per side. Transfer to a plate and let rest. Serve with the chile-herb sauce on the side.

BLACK ANGUS TERIYAKI GLAZE AND DIPPING SAUCE

This recipe comes from a copycat recipe site. I havn't made it yet so I don't know if it good or not. Wanted to add to my cookbooks for safe keeping. Update: Made, and it is so good, just like the restaurant sauce. I made a double batch and keep in the fridge so anytime I want to just pull out a steak or chicken breast I have it ready to go. Next time I make this I won't add the sesame seeds to the sauce but just sprinkle on individual steaks. Since I made a double batch and only used as needed, the seeds got soggy, but it "did" keep very well in the fridge.

1/2 tablespoon hot sauce (Tabasco, to taste)

1/4 cup toasted sesame oil
1 3/4 cups white sugar
1/4 cup brown sugar (plus 1/2 tablespoon brown sugar)
3 tablespoons cornstarch (mixed with 1/2 cup plus 2 tablespoons water)

Steps:

  • Heat first 8 ingredients (soy through white sugar) until sugar dissolves. Add brown sugar, cornstarch and water mixture. Simmer until thickened. Simmering time will be 10 to 15 minutes depending on thickness of sauce desired.
  • * I found the sesame seed got a little soggy so I just will toast them and sprinkle on finished product instead of incorporating them in the sauce. If you are using all the sauce immediately go ahead and follow original directions. I made a double batch since I wanted to keep this on hand in the fridge.

6 tablespoons white vinegar or 6 tablespoons rice wine vinegar
3 tablespoons teriyaki sauce (I used lite)
6 tablespoons warm water
1 clove garlic, crushed
1/4 teaspoon crushed fresh ginger
1 pinch cayenne

  • Mix all together.
  • Enjoy.

1/2 cup rice wine vinegar or dry sherry
2 tablespoons soy sauce
4 teaspoons sugar
1 teaspoon peeled and grated fresh ginger, or 1/4 teaspoon ground
1 green onion, thinly sliced crosswise including green part

Steps:

  • In a small saucepan, combine all the ingredients, except the green onion, with 3/4 cup water. Bring to a boil, remove from the heat, and cool. Add the green onion.
