This recipe came out of a need to serve leftover pork tenderloin in a completely different way - my kids hate to eat leftovers of the "exact" same thing they ate the night before. I kept it pretty mild for tender palates, but you could certainly add any type of chiles, hot sauce, etc. Also, for the kids I put it into tortillas with cheese for burritos while my husband and I ate it in bowls as chili. The sky's the limit to the variations

1 lb pork tenderloin, cooked and cut into 1-inch cubes
1 tablespoon olive oil
1 medium yellow onion, chopped
3 garlic cloves, minced
1 teaspoon chili powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon kosher salt
2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans diced tomatoes with green chilies
2 cups beef broth (or water)
fresh ground black pepper, to taste

Steps:

  • Saute the onion and garlic in a large skillet over medium heat until translucent and fragrant. Add the cooked pork cubes and combine. Add all of the spices and stir until the pork, onion and garlic are all coated with spice.
  • Pour the pork mixture into a slow cooker. Add the beans, tomatoes with their juice and beef broth or water. Season with pepper, cover, and cook on low for 8 hours.
  • Serve over rice, in tortillas or plain in a bowl. Garnish with cilantro, sour cream and/or shredded cheddar cheese if desired.

3 tablespoons extra-virgin olive oil, plus more for grill pan
3 garlic cloves, minced
1 tablespoon chili powder
1 pork tenderloin (about 1 pound)
1 1/2 tablespoons sesame seeds
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees. Combine oil, garlic, and chili powder in a large, shallow dish. Add pork, and turn to coat evenly with chili mixture. Sprinkle pork with sesame seeds, and press seeds into meat. Season with salt and pepper.
  • Heat a grill pan over medium-high heat, and brush with oil. Add pork, and cook until browned and grill marks appear, 2 to 3 minutes per side.
  • Transfer pan to oven. Roast pork to desired doneness, 17 to 18 minutes for medium. Let stand for at least 5 minutes, then cut into 1/2-inch-thick slices. Serve with pan juices.

1/4 cup finely minced shallots
1 teaspoon white miso
2 Fresno chiles, finely minced
Zest of 2 limes

1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon freshly ground black pepper
1 pork tenderloin, 1 to 1 1/2 pounds
Olive oil
4 peaches, halved and pitted
Olive oil
Kosher salt and freshly ground black pepper
1 tablespoon lime juice
3 tablespoons olive oil
2 teaspoons Dijon
Kosher salt and freshly ground black pepper
4 cups watercress
Whole cilantro leaves
Whole parsley leaves

Steps:

  • For the chili lime butter: In a large bowl, stir together the softened butter, parsley, shallots, miso, Fresno chiles and lime zest and season to taste with salt and pepper. In a small pot, gently melt about 1/2 cup of the chili lime butter over the grill. Set aside the remaining chili lime butter.
  • For the pork: In a small bowl, combine the salt, chili powder, garlic powder, paprika and pepper. Drizzle the tenderloin with olive oil, then season all over with the spice rub. Place in the refrigerator to marinate for 1 hour.
  • Preheat half of a grill to medium-high heat.
  • Grill the tenderloin on the hot side of the grill on all sides until nicely browned, 3 to 4 minutes per side. Once seared, move the tenderloin to the cool side of the grill and let cook with the grill lid down, turning occasionally, until the pork reaches 140 degrees F internal temperature. Remove the pork from the grill and let rest for 10 minutes.
  • For the peaches: While the pork rests, grill the peaches. Drizzle the halved peaches with olive oil and season with salt and pepper. Place flesh-side down on the hot part of the grill and cook until nicely charred, 2 to 3 minutes. Flip the peaches and spoon some of the reserved chili lime butter into the well of each peach. Cook another 2 to 3 minutes on second side, and then remove to a serving platter.
  • For the salad: In a large bowl, whisk together the lime juice, olive oil and Dijon and season with salt and pepper. Add in the watercress, cilantro and parsley leaves and toss together.
  • To serve, slice the rested tenderloin into 1-inch medallions, and then drizzle with the melted butter before serving alongside the peaches and watercress salad.

  • In a bowl large enough to hold pork covered with water stir together salt and water until salt is dissolved and add pork, making sure it is completely covered by brine. Marinate pork, covered and chilled, 1 day.
  • Prepare grill.

Steps:

  • Place both chilies and plum tomato in heavy medium skillet. Toast over medium-high heat until chilies are fragrant and deepen in color and tomato turns black in spots, turning occasionally, about 5 minutes. Remove from heat. Cool. Stem, seed and tear chilies into small pieces. Chop tomato. Place chilies, tomato and 1 cup water in small saucepan. Bring to boil. Reduce heat and simmer until chilies are tender, about 10 minutes. Puree chili mixture in blender until smooth.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add garlic and sauté 1 minute. Add 1 cup chicken stock and beef stock, then wine; boil until reduced to 1 cup, about 15 minutes. Stir in chili puree, butter and rosemary; simmer 1 minute.   • Heat remaining 1 tablespoon oil in large nonstick skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet and cook to desired doneness, about 4 minutes per side for medium-rare.
  • Bring sauce to simmer, thinning with more chicken stock if necessary. Place 1 steak on each of 4 plates. Top each with 1/4 cup sauce. Serve, passing remaining sauce separately.

1/4 cup crema Mexicana
2 tablespoons butter

Steps:

  • Stir together the lime juice, chile powder, and Hungarian pepper. Place the pork tenderloin in a shallow baking dish or resealable plastic bag and pour the marinade over top. Coat the pork in the marinade. Marinate the pork for 1 hour in the refrigerator.
  • In a large saucepan, heat the chicken stock over medium heat and bring to a simmer. Slowly pour in the cornmeal, and whisk for 1 minute. Stir in the chopped pepper. Bring to a simmer and cook, stirring constantly until the mixture is thickened. Stir in the crema and the butter. Season with salt, and pepper, to taste. Set aside and keep warm.
  • Preheat a grill or grill pan over high heat.
  • Remove the pork from the marinade and let it come to room temperature.
  • In a large skillet, heat the olive oil over medium heat and saute the onion and peppers until both are softened, about 5 minutes. Stir in the corn and saute for 3 minutes. Crumble the queso fresco over top and gently stir it in. Saute for 1 more minute. Season with salt and pepper.
  • Season the pork with salt and pepper and grill over high heat for about 8 minutes on each side, or until it reaches an internal temperature of 160 degrees F. Allow to rest before slicing.
  • To serve, in shallow bowls, divide the polenta among the bowls, top with a few slices of pork and top with the corn and pepper mixture.

2 tablespoons butter

1 bunch watercress
2 pounds large russet potatoes
Salt
1/3 cup extra-virgin olive oil
2 tablespoons pitted and finely chopped olives
1/4 teaspoon freshly ground black pepper
1/4 cup olive oil
1 red onion, thinly sliced
1/2 cup olives, pitted and finely chopped
1 tablespoon chopped fresh parsley
2 jalapeno peppers, roasted, peeled, seeded and finely diced
1 red bell pepper, roasted, peeled, seeded and cut into medium dice
1 poblano pepper, roasted, peeled, seeded and cut into medium dice
1 yellow bell pepper, roasted, peeled, seeded and cut into medium dice

Steps:

  • Prepare a smoker using olive branches. Place the beef tenderloin in the smoker and smoke for 20 minutes.
  • Preheat the oven to 350 degrees F.
  • Pat the beef dry and sprinkle with salt and pepper. Heat the butter and oil in a roasting pan over moderately-high heat until the foam subsides. Then brown the beef well on all sides, about 10 minutes. Put the roasting pan with the beef in the middle of the oven and roast until an instant-read thermometer inserted diagonally 2 inches into the center registers 130 degrees F for medium-rare, about 30 minutes.
  • Transfer to a cutting board and let stand 10 minutes. Then cut into 1/2-inch-thick slices.
  • To serve, first place the Olive Oil Mashed Potatoes on a plate. Then lean 2 slices beef tenderloin on the potatoes. Place a large spoonful of the Roasted Chili and Olive Ragout around or on top. Garnish with watercress.
  • Peel and quarter the potatoes. Put the potatoes and 1 tablespoon salt in a 3-quart pot and cover with cold water by 1 inch. Bring to a boil, covered with the lid, and then reduce the heat and simmer, partially covered, until the potatoes are very tender, 20 to 25 minutes.
  • Drain the potatoes in a colander and return to the pot. Add the olive oil and olives, and season with salt and pepper. Mash with a potato masher until smooth.
  • Heat 2 tablespoons olive oil over medium-high heat in a saute pan. Add the red onions and cook, stirring occasionally, until the onions are golden brown, about 6 minutes. Remove from the heat. Add the rest of the olive oil and the olives, parsley and all the roasted peppers. Season with salt and pepper.

CHILI LIME PORK TENDERLOIN

A delicious zesty and tangy pork terderloin recipe made in an oven cooking bag. I got the recipe from a now defunct Healthy Cooking magazine but it also seems to be from the Reynolds kitchen. This is one recipe my husband requests over and over. Add a salad and your meal is complete. Enjoy!

1 large oven cooking bag
1 tablespoon flour
3 tablespoons honey
2 tablespoons chili powder
2 teaspoons lime zest (I also add a bit of the juice from the limes)
2 1/2 lbs pork tenderloin
3 medium sweet potatoes, peeled and cut into quarters

Steps:

  • Preheat oven to 325 degrees.
  • Shake flour in the oven bag to prevent it from bursting during cooking. Place the bag in a 13 X 9 X 2 inch baking pan.
  • In a bowl, combine the honey, chili powder and lime peel. Pat surface of pork dry. Spread half of the chili mixture evenly over bottom of pork. Add pork to the oven bag. Spread the remaining chili mixture over the top of the pork. Arrange sweet potatoes around pork in an even layer in the bag.
  • Close the bag with the nylon tie. Cut six 1/2-inch slits inthe top of the bag.
  • Bake 1 to 1 1/2 hours or until meat thermometer reads 160 degrees F. Slice pork and spoon juices over it before serving.

2 pork tenderloins, each about 1 pound
1 tablespoon extra-virgin olive oil
1 1/2 teaspoons chili powder
1 1/2 teaspoons kosher salt
Creamed Corn, recipe follows
6 ears fresh corn, husked, about 4 cups corn kernels
4 scallions (white and green)
2 tablespoons unsalted butter
1/3 to 1/2 cup water
3/4 teaspoon kosher salt
1/4 to 1/2 cup light cream
1 cup cherry or grape tomatoes, halved
Freshly ground black pepper

Steps:

  • Serving suggestions: Add other herbs like basil, cilantro, or parsley
  • Position a rack about 3-inches from the broiler and preheat. Line a broiler pan with foil. If there is sliver skin on the tenderloin, trim it off with a knife. Rub or brush the tenderloin with oil. Mix the chili powder with the salt and then sprinkle the spices all over the tenderloins and rub in well with your hands. Lay the tenderloin on the prepared pan, tucking the thin narrow tip of the tenderloin under so the meat is the same general thickness all the way down.
  • Broil the tenderloin until golden brown on 1 side, about 5 minutes. Turn and continue to cook on the other side, until brown about 5 to 7 minutes more. Remove from the broiler, tent loosely with foil and set aside to finish cooking. Let rest for 5 minutes. Slice and serve with creamed corn.
  • Shear the corn kernels from the cobs with a knife. Transfer the kernels to a bowl. Working over a bowl, run the knife along the cobs to press out the milky liquid. Discard the cobs. Slice the scallions, both white and a couple inches of the green into thin rounds. Separate the scallion whites and greens.
  • Melt the butter in a medium skillet over medium-high heat. Add the scallion whites and cook until softened, about 1 to 2 minutes. Add the corn, water, and salt, bring to a simmer, cover and cook until tender, about 2 minutes. Add the cream, bring to a boil, and cook uncovered until slightly thickened, about 1 minute more. Stir in the scallion greens and tomatoes, season with black pepper and serve.

1 1/2 lbs pork tenderloin, trimmed of fat and cut into 3/4 inch pieces
3 large onions, chopped (3 cups)
3 tablespoons garlic, minced
1 lb fresh tomatillo, peeled and diced (about 4 cups)
1 tablespoon ground cumin
2 teaspoons dried oregano, crushed
3 cups reduced-sodium chicken broth
1 cup water
1 (15 ounce) can no-salt-added navy beans, rinsed and drained
1 tablespoon lime juice
2 tablespoons fresh cilantro leaves

Steps:

  • Preheat oven to 400 degrees F. Arrange chile peppers on a baking sheet. Roast for 25 to 30 minutes or until skins are dark, turning once halfway through roasting. Place chile peppers in a bowl; cover with plastic wrap and let stand for 10 minutes. Carefully remove skins and seeds, chop chile peppers. Set aside.
  • In a 5-6 quart dutch oven heat oil over medium-high heat. Add pork; cook until browned. Add onions and garlic; cook about 5 minutes more or just until onions are tender, stirring occasionally. Add tomatillos, cumin, and oregano; cook for 3 minutes more, stirring occasionally.

1 ½ pounds pork tenderloin, cut into 2 inch strips
1 small onion, coarsely chopped
1 small red bell pepper, coarsely chopped
3 (15 ounce) cans black beans
1 (16 ounce) jar salsa
½ cup chicken broth
1 teaspoon dried oregano
1 teaspoon ground cumin
2 teaspoons chili powder

Steps:

  • Combine pork tenderloin, onion, red pepper, black beans, salsa, chicken broth, oregano, cumin, and chili powder in a slow cooker. Set to Low and cook for 8 to 10 hours.
  • Break up pieces of cooked pork to thicken the chili before serving.

1 lb pork tenderloin, cut into 1-inch slices
1/4 cup sweet chili sauce
3 tablespoons soy sauce
2 tablespoons fresh orange juice
1 green onion, sliced diagonally, white & green
1 tablespoon grated fresh ginger
1 tablespoon sesame seeds
1 tablespoon honey
1 tablespoon vegetable oil

Steps:

  • Mix all the ingredients except the oil in a large plastic zip lock bag, mix well so the meat is coated.
  • Place in the fridge for at least 2 hours or overnight.
  • Remove pork from marinade -save marinade.
  • Heat oil in a skillet and saute the pork over medium high heat for 3 minutes, flip and continue cooking for another 3 minutes or until the pork is nicely browned on both sides.
  • Pour in the marinade cook for an additional 3 minutes or until the sauce has thickened.

1 1/4 lbs pork tenderloin, trimmed, cut crosswise into 1/2 inch thick rounds, and then cut in 1/2
1 tablespoon cornstarch
2 tablespoons sesame oil, divided
1 tablespoon minced peeled fresh ginger
4 small unpeeled tangerines (with peel) or 4 small clementines, cut (with peel)
1/4 cup asian sweet chili sauce
2 tablespoons soy sauce
1/4 teaspoon Chinese five spice powder
6 baby bok choy, cut crosswise into 1 inch-thick ribbions, though bases discarded
5 green onions, thinly sliced on diagonal divided

Steps:

  • Place Pork tenderloin strips in medium bowl and sprinlke with salt and freshly ground pepper and toss with cornstarch to coat.
  • Heat 1 TBSP Sesame Oil in large nonstick skillet over medium-high heat.
  • Add minved ginger and stir for 30 seconds.
  • Add pork tenderloin strips, stir fry until pork is beginning to brown and is almost cooked through, about 3 minutes.
  • Add tangerines pieces and toss for about 30 seconds.
  • Add sweet chili sauce, soy sauce and Chinese five-spice powder and boil until sauce thickens slightly, tossing to blend about 1 minute.
  • Stir in remaining 1 TBSP of Sesame Oil, bok choy, and half of sliced green onions. Stir-Fry just until bok choy is wilted, 1 to 2 minutes.
  • Season to taste with salt and freshly ground pepper.
  • Transfer to bowl, sprinkle remaining sliced green onions and serve.

3 tablespoons extra-virgin olive oil, plus more for grill pan
3 garlic cloves, minced
1 tablespoon chili powder
1 pork tenderloin (about 1 pound)
1 1/2 tablespoons sesame seeds
Coarse salt and freshly ground pepper

Steps:

  • Directions Preheat oven to 400 degrees. Combine oil, garlic, and chili powder in a large, shallow dish. Add pork, and turn to coat evenly with chili mixture. Sprinkle pork with sesame seeds, and press seeds into meat. Season with salt and pepper. Heat a grill pan over medium-high heat, and brush with oil. Add pork, and cook until browned and grill marks appear, 2 to 3 minutes per side. Transfer pan to oven. Roast pork to desired doneness, 17 to 18 minutes for medium. This recipe came out of a need to serve leftover pork tenderloin in a completely different way - my kids hate to eat leftovers of the "exact" same thing they ate the night before. I kept it pretty mild for tender palates, but you could certainly add any type of chiles, hot sauce, etc. Also, for the kids I put it into tortillas with cheese for burritos while my husband and I ate it in bowls as chili. The sky's the limit to the variations

1 lb pork tenderloin, cooked and cut into 1-inch cubes
1 tablespoon olive oil
1 medium yellow onion, chopped
3 garlic cloves, minced
1 teaspoon chili powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon kosher salt
2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans diced tomatoes with green chilies
2 cups beef broth (or water)
fresh ground black pepper, to taste

Steps:

  • Saute the onion and garlic in a large skillet over medium heat until translucent and fragrant. Add the cooked pork cubes and combine. Add all of the spices and stir until the pork, onion and garlic are all coated with spice.
  • Pour the pork mixture into a slow cooker. Add the beans, tomatoes with their juice and beef broth or water. Season with pepper, cover, and cook on low for 8 hours.
  • Serve over rice, in tortillas or plain in a bowl. Garnish with cilantro, sour cream and/or shredded cheddar cheese if desired.

2 pork tenderloins (about 1-1/2 lbs)
2 c water
1 1/2 Tbsp salt
1 1/2 Tbsp maple syrup
1 Tbsp chili powder

Steps:

  • 1. In a bowl large enough to hold pork covered with water, stir together salt and water until salt is dissolved. Add pork, making sure it is completely covered by brine. Marinate pork, covered and chilled, 1 day.
  • 2. Prepare grill.
  • 3. In a small bowl stir together the syrup and chili powder.
  • 4. Discard brine and diagonally cut pork into 3/4-inch pieces.
  • 5. Put pork between sheets of plastic wrap and flatten with a rolling pin to make 1/4-inch thick cutlets. Pat pork dry and season with salt.
  • 6. Grill pork on a lightly oiled rack set 5-6 inches over glowing coals until just cooked through 2-3 minutes on each side.
  • 7. Brush pork with glaze and grill 15 seconds more on each side. (Alternatively, pork may be grilled in a hot well seasoned ridged grill pan over moderately high heat).
