TATER TOT TACO CASSEROLE
Just what the grandkids ordered. Tater tots, Mexican food, and cheese! This is one of those meals that you can throw together with ingredients you would normally have on hand. Great for pot luck or a quick meal for unexpected company. Some kids don't like onion or garlic; these can be omitted.

Steps:
- Preheat an oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with cooking spray.
- Cook the ground beef in a skillet over medium heat until completely browned, 5 to 7 minutes. Add the onion, garlic, taco seasoning mix, frozen Mexican-style corn, and black beans to the ground beef; cook and stir another 10 minutes. Set aside to cool slightly.
- Combine the ground beef mixture in a large bowl with about 3/4 of the Mexican cheese blend and the tater tots; stir to combine.
- Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tot layer.
- Bake in the preheated oven for 40 minutes. Sprinkle the remaining Mexican cheese over the casserole and return to oven until the cheese is melted and bubbly, about 5 minutes more.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place potato nuggets in the bottom of a glass baking dish. Bake in the preheated oven until cooked through and crisp, about 20 minutes.
- Cook ground beef in a large skillet over medium heat until no longer pink, 10 to 12 minutes. Drain off fat and discard. Stir in taco seasoning and water. Reduce heat to low and simmer until sauce is reduced and thick, about 10 minutes.
- Spoon cooked beef mixture over the potato nuggets. Pour nacho cheese dip evenly over the beef. Top with canned tomatoes, olives, 1/2 cup shredded Cheddar cheese, and taco sauce. Bake in the oven until cheese is melted and the casserole is warmed through, about 10 minutes. Remove from oven and top with 1/2 cup shredded Cheddar cheese. Serve atop shredded lettuce and garnished with sour cream.

Steps:
- brown beef drain.
- stir in taco seasoning and water and simmer for 5 minutes.
- add corn soup put in 9 x 13 pan and top with tater tots.
- bake at 350 for 35 minutes.
- take out top with cheese put back in oven for 5 minutes or till cheese is melted.
- add ketchup or taco sauce when served tastes very good enjoy.
TACO TATER TOT CASSEROLE
Steps:
- Preheat oven to package directions on tater tots. Brown beef, then add taco seasoning, water, and onion. Continue cooking until beef is completely seasoned.
- Spread beef mixture over bottom of 9x13 casserole dish. Evenly coat beef mixture with corn. Cover with tater tots, and then bake for 20 minutes.
- Remove from the oven and cover with salsa con queso dip. Bake for additional 10 minutes or until cheese is melted. Allow to cool for at least 10 minutes before serving. Top with sour cream if desired.

- Preheat oven to 350 degrees F. Grease bottom and sides of a 9 x 13 baking dish.
- In a large skillet brown the ground beef, along with the onions and garlic; drain grease.
- Add the taco seasoning, green chilies, salt, cumin, chili powder, corn, and beans to the browned meat; heat until thoroughly heated.
- In a large bowl, combine the meat mixture, 3 cups of the cheese, sour cream and the tater tots; stir to mix evenly.
- Pour about 1/4 of a can of the enchilada sauce in the bottom of the greased baking dish. Add the meat and tater tot mixture; spread out evenly and pat down.
- Top with the remaining enchilada sauce. Bake in the preheated oven for 50 minutes.
- Remove from the oven and top with the remaining cheese and black olives. Return to the oven and bake an additional 10 minutes or until the cheese has melted.
- Serve with your favorite condiments. I just served it with sour cream and jalapeno's. It's delicious!
