These quick and easy Open Faced Tuna Melts are made with cream cheese, no mayo, a little kick from the jalapenos and are the perfect last minute dinner or lunch. You can make them ahead and reheat, so they're also perfect for the lunch bag! They are also Weight Watchers friendly.

1/4 cup fat free cream cheese (softened)
2/3 cup low-fat (sharp) old cheddar (grated)
184 gram can of tuna, flaked
1/3 cup green onions (chopped)
1 tbsp worcestershire sauce
2 tsp pickle juice
1 large dill pickle, finely chopped
1-2 tbsp tamed jalapenos finely chopped
1/4 cup red onion, chopped
3/4 tsp minced garlic
2 kaiser buns, split in half
1/2 cup low-fat sharp (old) cheddar cheese (grated)

Steps:

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  • Mix all ingredients (except buns) together in medium bowl.
  • Slice Kaiser buns in half and top each half with tuna mixture, dividing equally among all 4 buns halves.
  • Divide 1/2 cup of garnish cheddar cheese in 4 and sprinkle on top of each half bun, dividing evenly between all 4.
  • Bake for 10 minutes, then turn up to broil (500) for 2 minutes or until cheese is bubbly. Serve warm with raw veggies or soup.

2 cans tuna, oil packed, drained
3 tablespoons mayonnaise
2 stalks celery, finely chopped
1 tablespoon sweet pickle relish
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
4 slices bread
1 tablespoon unsalted butter, room temperature
4 oz shredded sharp cheddar cheese

Steps:

  • In a medium bowl, mix together the tuna, mayonnaise, celery, pickle relish, salt, and pepper until well combined.
  • On a cutting board, butter one side of each slice of bread. Flip the bread over so it is buttered-side down. Divide the tuna mixture between 2 slices of bread. Top with the cheddar cheese, then place the other slices of bread on top, buttered-side out.
  • Heat a large pan over medium heat. Place the sandwiches in the pan and cook, without moving, for about 2 minutes, until golden brown. Carefully flip the sandwiches over and continue to cook until the other side is golden brown and the cheese has melted, 2 minutes more.
  • Transfer the tuna melts to a cutting board and cut in half. Serve immediately.

½ small onion, minced
pepper to taste
12 slices pickled jalapeno
2 English muffins, split
4 slices Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, combine tuna, minced onion, and black pepper. Divide mixture onto 4 halves of English Muffins. Arrange 3 slices jalapenos on each muffin half. Top each with a slice of Cheddar cheese. Place on baking sheet.
  • Bake in oven for 10 minutes, or until cheese begins to bubble.

1/4 cup finely chopped onion
1/4 cup mayonnaise
4 hamburger buns, split
4 mozzarella cheese slices
4 tomato slices
4 lettuce leaves

Steps:

  • In a small bowl, combine the tuna, celery, onion and mayonnaise. Spread on bottom of buns; set bun tops aside.
